How to make Keto Garlic Bread & Low Carb Garlic Bread with Cheese
Keto and low carb diets have gained immense popularity in recent years due to their potential for weight loss and health benefits. However, finding suitable bread options that fit within these dietary restrictions can be challenging. In this article, we will explore how to make delicious keto garlic bread and low carb garlic bread with cheese, allowing you to satisfy your bread cravings without compromising your diet. See our full keto tips site here.
Tumblr media
Understanding the Keto and Low Carb Diets
Before diving into the recipes, let's briefly understand the principles behind the ketogenic diet and low carb diets. The ketogenic diet focuses on drastically reducing carbohydrate intake and increasing fat consumption to induce a state of ketosis, where the body burns fat for fuel instead of carbohydrates. Low carb diets, on the other hand, aim to limit carb intake to a moderate level, promoting stable blood sugar levels and weight management.
Choosing the Right Ingredients for keto garlic bread
When making keto garlic bread or low carb garlic bread with cheese, ingredient selection is crucial. Traditional wheat flour is high in carbs, so it's necessary to explore low carb flour alternatives such as almond flour, coconut flour, or flaxseed meal. Additionally, using keto-friendly fats and oils like butter or olive oil is essential for achieving the right texture and taste. Don't forget to incorporate low carb seasonings and herbs like garlic powder, oregano, or rosemary for added flavour.
Tumblr media
Recipe 1: Keto Garlic Bread
Let's start with the recipe for keto garlic bread. Follow these steps to create a delicious low carb version of this classic dish:
Preheat     your oven to the specified temperature.
In a     mixing bowl, combine the almond flour, baking powder, garlic powder, and a     pinch of salt.
In a     separate bowl, whisk together the melted butter and beaten eggs.
Gradually     add the wet ingredients to the dry ingredients, mixing well until a dough     forms.
Transfer     the dough onto a baking sheet lined with parchment paper.
Shape     the dough into a rectangular or oval shape, approximately half an inch     thick.
Bake     in the preheated oven for about 15-20 minutes, or until the bread turns     golden brown.
Remove     from the oven and let it cool for a few minutes before slicing and     serving.
Recipe 2: Low Carb Garlic Bread with Cheese
If you're looking to take your garlic bread to the next level, try this recipe for low carb garlic bread with cheese:
Follow the instructions for the keto garlic bread recipe until step 7.
Once the bread is baked and slightly cooled, sprinkle shredded mozzarella or cheddar cheese evenly over the top.
Place the bread back into the oven for an additional 5 minutes, or until the     cheese has melted and turned bubbly and golden.
Remove from the oven and allow it to cool for a couple of minutes.
Slice into portions and serve warm, allowing the gooey cheese to delight your taste buds.

Tips for Perfecting Your Garlic Bread
Here are a few tips to help you perfect your keto garlic bread and low carb garlic bread with cheese:
Experiment with different herbs and spices to add variety to your bread. Consider adding dried basil, parsley, or even a sprinkle of chili flakes for a     kick.
Get creative with cheese options. Besides mozzarella and cheddar, try using provolone, Monterey Jack, or a blend of cheeses for a more complex flavour.
Don't be afraid to explore variations of garlic bread, such as garlic knots or     breadsticks. The process remains similar, but the shaping and presentation can vary for added fun.
Adjust the level of garlic flavour to suit your preferences. If you're a garlic     lover, eel free to add more garlic powder or minced fresh garlic to the     dough.
Make sure to store any leftovers in an airtight container in the refrigerator.     To reheat, simply pop them in the oven or toaster for a few minutes until     warmed through.
How to Adjust Your Keto Garlic Bread to Include Other Toppings
While keto garlic bread is already a delicious treat on its own, you can take it to the next level by incorporating other mouth-watering toppings. Here's how you can adjust your keto garlic bread recipe to include various toppings and enhance its flavour:
Cheesy Spinach and Artichoke:
Spread a layer of creamy spinach and artichoke dip over the baked garlic bread. Top it with a generous amount of shredded mozzarella cheese and broil until the cheese is golden and bubbly.
Pepperoni Pizza Style:
Transform your keto garlic bread into a mini pizza by adding sugar-free marinara sauce, sliced pepperoni, and grated Parmesan cheese. Pop it back in the oven until the cheese is melted and the pepperoni is crispy.
Buffalo Chicken:
Toss cooked shredded chicken in buffalo sauce and layer it over the garlic bread. Sprinkle with crumbled blue cheese or shredded cheddar cheese for an irresistible combination of flavours.
Caprese Delight:
Spread a thin layer of basil pesto over the garlic bread, then top it with slices of fresh mozzarella cheese, cherry tomatoes, and fresh basil leaves. Drizzle with balsamic glaze for a refreshing and tangy twist.
Mediterranean Medley:
Spread a layer of creamy tzatziki sauce over the garlic bread and top it with diced cucumbers, tomatoes, black olives, and crumbled feta cheese. Garnish with fresh dill for a burst of Mediterranean flavours.
Feel free to experiment with other toppings like grilled vegetables, bacon, avocado, or even a combination of different cheeses. By adjusting your keto garlic bread to include various toppings, you can create endless flavour combinations and satisfy your cravings while staying true to your low carb lifestyle.

FAQs
·         Can I freeze the keto garlic bread?
Yes,  you can freeze keto garlic bread. Ensure it is properly wrapped in foil  or placed in an airtight container before freezing. To enjoy later, thaw   it in the refrigerator overnight and reheat in the oven for a few minutes.
·         What are the best low carb flours for making bread?
Some popular low carb flour options for making bread include almond flour, coconut flour, and flaxseed meal. Each has its own unique properties, so feel free to experiment and find the one that suits your taste and dietary needs.
·         Can I substitute almond flour with coconut flour?

Tumblr media
·         How many carbs are in a serving of low carb garlic bread?
The number of carbs in low carb garlic bread will vary depending on the      specific ingredients and quantities used. However, compared to      traditional garlic bread, low carb versions typically contain significantly      fewer carbs, making them a suitable option for those following a low carb      or keto diet.
·         Can I make keto garlic bread without eggs?
Yes, you can make keto garlic bread without eggs. Instead of using eggs as a binding agent, you can try using alternatives such as flax eggs (ground flaxseed mixed with water) or chia eggs (ground chia seeds mixed with water). These alternatives work well in most bread recipes and provide a similar binding effect.

Sometimes Brennan’s degree in religious studies shines through in an awe-inspiring way. Take, for example, the Temple of the Fallen Sun from episode 17 of Fantasy High Junior Year: it is explicitly an imperial temple. Now, the obvious level is that its symbols are all about conquest, but on a deeper level, its very nature is an imperial conquest.
The reveal, towards the end of the Bad Kids’ time in the temple, that the Sunstone Empire did not originally build this place is also a reflection of the imperial project. It took a faith that was life-giving for its people and twisted it into something foul, something that in D&D was explicitly infernal, but it could not completely erase the underlying divinity. At the end, they could not remove the underlying uncorrupted temple infrastructure; at the end, they could not twist Ankarna’s core nature so much that she would be willing to kill her sister or her spouse. The imperial faith of conquest can take over a religion, Brennan seems to be telling us, but it cannot fully transform the spark of divinity at the core of the original faith.
So let’s now talk about Spyre’s Church of Sol.
Maybe it wasn’t planned that way, but the longer the Fantasy High saga goes on, the more clear it seems to me that the Church of Sol is in many ways the greater scope villain of the Bad Kids’ tale. For Junior Year, it’s not just that complete slimebag Bobby Dawn, the Church of Sol’s resident celebrity cleric, is actively onside with Porter’s plan to ascend to godhood; it’s also that in the Temple of the Fallen Sun, the Legend Lore spell told us that it was the Church of Sol who planted the idea with the Sunstones of transforming their god from a sun god to a god of war and conquest!
Note, importantly, that it is the Church of Sol and not Sol himself who planted this idea. Legend Lore told us that, actually, Sol himself was HAPPY with (re)uniting the various groups of Spyre’s gods into one community. Rather, it was Sol’s church that noticed their God’s domain was divided and decided to do something about it. Recall, also, that it was the Church of Sol that innovated Devil’s Nectar; it’s entirely possible that Sol was deliberately kept out of the loop when it came to the church’s plans to make him into the One True Sun God.
Now, we also know that there’s a kind of henotheistic trinity-like thing going on with Sol, Gallicaea, and Helio. There’s some sort of family thing going on with Sol as the top Father God and Helio as the Crystal Dragon Jesus son with the serial numbers filed off; witness the decidedly evangelical Christianity flavor of their related churches. There’s also the whole vibe from both the Church of Sol and Helio’s followers that their gods are the only correct deities to follow and any other faith (or way of life) is Dangerously Wrong. This plays directly into the way that they really kicked off the chaos of Freshman Year and therefore the Bad Kids saga.
Yeah, Kalvaxus was the big bad of Freshman Year, but he and his direct minions weren’t the first enemies that the Bad Kids fought. That would be Doreen and the Corn Cuties, who were themselves borne of the attempt by Coach Daybreak and the Harvestmen cult to corrupt their own faith’s chosen and break the world.
This is actually deeply important: while Kristen’s parents are assholes and directly tied to a doomsday cult version of Helioic faith, there’s always been an implication that beyond the Harvestmen there’s a healthier version of the church of Helio that we haven’t really been able to interact with. And that’s okay: even a healthier version of Helio probably wouldn’t have been healthy for Kristen, given the extent of religious trauma she’s had to deal with, so it makes sense that even in Freshman year Kristen was being offered by Heaven itself alternate ways to have faith.
In Sophomore Year, we got a glimpse of the conflict within Gallican faith, with Tracker discovering in Fallinel a more oppressive and passive version of her faith, and choosing essentially to stay behind to try and breathe new life into it. Importantly, we learned Fallinel Gallicaea has a relationship with Sol, and so their churches are intertwined; Brennan even talked in Sophomore Year about how Gallicaea in Fallinel was being shaped by her State Church followers there. It was that twisted Gallican church that duped Cassandra’s original followers into forcing her transformation into the Nightmare King, you may recall.
What this all seems to be pointing to is the existence of an organization entwined with the Church of Sol that discovered Devil’s Nectar and a way to twist divinity to their ends by manipulating followers into the shapes most suiting their ends. We know from Pok Gukgak’s cautious statements that even the celestial-level actors have some side eye for Sol’s supposed followers. We know from Bakur that there’s an open question as to whether Sol or his followers are REALLY calling the shots. So: if Sol’s followers have their own plans, what’s their goal in all this corruptive influence that they’ve been spreading around?
Now, here’s where we circle back around to Brennan’s knowledge of how real world religions and real world people work: the goal may simply be power and domination. In the real world, the connection between the State and some sort of organized Church power has always been a place where power and control could be minted. A cornerstone of the Roman Empire’s system of control was the idea of the Imperial Cult: you can absolutely continue worshipping your personal god as long as you also acknowledge that god’s place is subservient in the larger Roman order to Rome’s chosen divinity. On the other side of the world, China’s system emphasized having the Mandate of Heaven in order to rule; even their top divinity the August Personage of Jade would lose his job if he did not stay within the rules of the system.
In short: a group of folks who’ve figured out how to manipulate faith to make their positions indisputably Right are very dangerous in any world, and Brennan is absolutely correct to cast them as the villains behind the scenes manipulating everything.

Thinking about that one post about the 5000 year old teenager girl found buried with her collection of 180 sheep ankle bones but specifically the addition of how ankle bones were used as dice back then and she was a gamer.. what I'm getting at is: would clan cats make bone dice and Are They Gaming
First let me teach you a little bit about Knucklebones: The Game.
You probably know one of its variants better as Jacks, that game you play with a rubber ball and little metal spikes. There's a version of Knucklebones in nearly every culture, where the basic idea is to throw an object up in the air, pick up as many of the smaller objects as possible, and then catch the larger object before it hits the ground.
In cultures with a lot of access to livestock, usually the hand and ankle bones of sheep would be used. Places that don't have them might use rocks, seeds, shells, whatever. It was Ancient Greece that had such an extreme take on the game that it eventually evolved into dice-throwing-- a totally chance-based game where you would just throw the biggest foot bone of a sheep (the astralagus; equivalent to the talus in a human) and see how they landed.
So the girl they uncovered in Kazakhstan with the 180 sheep bones wasn't really buried "with dice," make sense? It's more like being buried with jacks. Central Asia is actually jam-packed with knucklebones-types games. Mongolian Shagai is recognized by UNESCO.
And it makes a TON of sense, because those regions are grasslands absolutely ideal for raising sheep.
SO. CLAN CATS.
There's two major considerations here;
ONE: The access to, and size of, sheep bones.
Clan cats don't kill sheep. TRIBE cats actually have access to sheep and kill one or two a year! I would actually like to give them a bunch of special uses for various parts of the sheep. I think the eagle-killing thing in canon is actually pretty ridiculous for several reasons
BUT THAT SAID, an astralagus is the size of a cat's paw.
Tumblr media
[ID: A human holding an astralagus in the tips of its fingers.]
You'd need to play a different sort of game with this. It's more like a square softball to a cat than a little rubber ball.
Boar also have bones like this, though. A muntjac probably produces bones that are sized properly for a cat. Hares and rabbits are probably the BEST bet here though, which, somehow feels right. I'm not sure why, but WindClan seems like the gamerclan Clan that would think up these sorts of cute games.
Something about it fits their whole savvy culture, tunneling, emphasis on trade and invention pre-Heatherstar. ShadowClan and WindClan share a cultural value of innovation, but ShadowClan seems more... chemical and competitive.
Hard to explain it. ShadowClan invents flax retting and WindClan invents the drop spindle. There's overlap but it has a bit of a different flavor between them.
TWO: Range of motion
I've made BB!Cats have the same range of motion as the cats in canon, which is higher than a real cat. They're able to WEAVE, you can't do that without a basic pincher grasp. They're also able to mix herbs, wrap things up in leaves, and apply bandages.
I haven't actually given my reworked cats much more ability than they already had, I just codified rules based on what we already see.
But that said, they DO have less range of motion in their hands than humans. They have little thumbs and a better ability to grab, but can't twist their paws completely upwards. There's no way they can toss an object straight up, then catch it again.
So any games they do play would need to accommodate that. So far I've got Scratchstone, Teeterstrike, and an unnamed rhyme game. The bone game would need to look more like a game of marbles than jacks. Or, maybe more modified to accommodate swipes and strikes, somehow? Or a two-person game of catch?
Gotta think about it.

Todays cereal is Crunchy Nut Salted Caramel!
Initial impressions: It’s wild that with salted caramel being such an otherwise ubiquitous flavor, this is the first cereal I’ve seen attempt it. Perhaps this is due to salty cereal not sounding particularly appetizing, but I’m interested to see what the Crunchy Nut artisans can make with this new ‘flavor twist’.
Post bowl thoughts: I think it’s safe to say that salted caramel cereal has still not yet been attempted. There is no discernible salt in this. Nothing. With the promise of salted caramel you expect to be able to taste it from the offset but I spent much of my time crunching through this bowl desperately trying to pick up on any salted component. Maybe I missed it? Surely something stating itself to be salted caramel so ardently wouldn’t fail at the first hurdle like this? The missed opportunity for new cereal innovation really rubs salt in the wound of this disappointment... The stated premise of the cereal aside, what we’re left with is actually quite a pleasant bowl of Crunchy Nut! The caramel flavor is mild, but it’s got a depth to it that’s appreciated. It tastes almost pleasantly burnt, and it doesn't suffer from being sickly sweet like other caramel flavorings. Perhaps this restraint is meant to stand in for salt? Either way, the subtle and mature flavor combined with the classic Crunchy Nut flakes and some amazing milk leftover in the bowl make this a strong cereal, just not the one I was expecting.

Navaratri 2024: Embracing Divine Energies in April's Splendor.
Tumblr media
For the last Navaratri celebration, the focus was on honoring tradition while adding a modern twist to the culinary delights. Here's a glimpse of the delicious fare that graced the tables during Navaratri 2024 in April:
Sundal Varieties: Sundal, a South Indian snack made from legumes like chickpeas, black-eyed peas, or lentils, was prepared in a myriad of flavors. From traditional coconut and mustard tempering to innovative twists like tangy mango or spicy tamarind, each sundal offered a burst of flavor.
Navaratri Special Thali: A vibrant array of dishes adorned the Navaratri special thali. It featured delicacies like crispy Sabu dana vadas, creamy pumpkin kheer, and spicy potato curry. The thali was a celebration of diverse flavors and textures, symbolizing the richness of the Navaratri festival.
Fruit Chat with a Twist: A refreshing fruit chat received a makeover with a drizzle of honey infused with cardamom and saffron. This sweet and tangy treat was a delightful addition to the Navaratri menu, offering a burst of freshness amidst the rich festive fare.
Navaratri-inspired Mocktails: Cool and refreshing mocktails were served to complement the spicy and savory dishes. Mocktails infused with flavors like rose, mint, and citrus provided a welcome respite from the heat and added a touch of sophistication to the celebrations.
Innovative Desserts: Traditional sweets like coconut ladu and jaggery-based delicacies shared the spotlight with innovative desserts. Guests indulged in decadent offerings like chocolate-dipped bananas adorned with edible gold leaf and saffron-infused rashgullas, elevating the dessert experience to new heights.
Garba: Garba is a traditional dance form originating from the state of Gujarat in India. During Navaratri, people gather in large groups to perform this joyful and energetic dance. Dancers form concentric circles or intricate patterns, clapping their hands and moving gracefully to the rhythm of traditional folk songs. The vibrant costumes and rhythmic beats create an electrifying atmosphere, where participants immerse themselves in the joyous spirit of the festival.
Dandiya Raas: Dandiya Raas is another popular dance form performed during Navaratri, especially in Gujarat and other parts of India. In this dance, participants wield colorful sticks called dandiyas while moving in pairs or groups. The dancers strike their dandiyas in sync with the music, creating a rhythmic pattern of beats. Dandiya Raas is not only a dance but also a social activity that fosters camaraderie and community spirit.
Folk Dances: Apart from Garba and Dandiya Raas, various folk dances from different regions of India are also performed during Navaratri. These dances showcase the cultural diversity of the country, with each region contributing its unique style and repertoire. From the graceful movements of Odissi to the energetic steps of Bhangra, folk dances add a colorful dimension to Navaratri celebrations, reflecting the rich heritage and traditions of India.

April Reading Recap
so apparently I read a fuckton in April. I put that on the week off for Passover and also a number of very fast reads last month. here goes
The Spite House by Johnny Compton. Might be the best horror book I'd read in a while, and I did not see the twist coming for a long while. Good and very spooky on the whole, but the "creepy kids as ghosts" thing took some of the luster off it. Still, some good and original ideas here and I'll be watching for more books by this author.
The Nine Eyes of Lucien by Madeleine Roux. Not very good writing and a good third of the book was rehashing the events of the end of Campaign 2, which I just watched. It was fine, I guess? But I didn't find it added much.
The Red Tent by Anita Diamant. I've had this one on my list for literal years - it's a retelling of the Biblical story of Dinah, Jacob's one daughter. I kind of wish I'd read it sooner, when (a) I was less burned out on retellings/reinterpretations of familiar stories, and (b) when I would've been less bothered by the flavor of gender essentialism of the text and could have appreciated other things about it without getting stuck in feeling iffy about that. I am trying to work out why it bothers me so much that Diamant chose to change the reading of the text from (an implied) rape to a consensual love affair, and I'm not quite sure I can explain that.
It's an interesting book and I'm glad I read it but I don't think I'd recommend it without disclaimers; I think in some ways it's more interesting as an artifact of the cultural movement it comes out of than anything else. Would analyze in a class about Jewish feminist responses to stories in Tanakh (or Talmud, tbh).
Six Myths of Our Time: Little Angels, Little Monsters, Beautiful Beasts and More by Marina Warner. Fascinating collection of short essays originally given as lectures on the BBC, apparently - the one essay about the way the West conceptualizes the simultaneous purity/monstrosity of children was particularly interesting to me. Interesting piece of work I picked up totally by happenstance because it was short and looked interesting and it lived up to both qualities.
Gallows Hill by Darcy Coates. Good spooky horror recommended by @cigaretteburnslikefairylights and actually legit scared me in places, which doesn't happen all that often to me anymore when I'm reading horror. (I'm still a weenie watching it.) I actually...liked this one start to resolution and am going to be looking up more of Darcy Coates' writing, because if it's not, you know, doing something super ~innovative~ it is good spooky reading and that's really what I've been craving.
Krakatoa: The Day the World Exploded by Simon Winchester. Reading this book was a weird experience. I went into it just thinking "ooh, book about an interesting natural disaster, I love volcanoes" and came out of it going "whoa, surprise Islamophobia," checked the publication date, and learned it was 2003, whereupon I was miserably unsurprised. I don't know why the author felt like he needed to make colonial apologetics and blame the post-eruption upheaval on Islamic fundamentalists manipulating the natives into uprising against their Dutch masters but apparently he did. (I'm exaggerating. But not that much.)
The geology stuff was interesting. Mr. Winchester should've stuck with that and the reportage of the eruption itself and left politics out of it.
Violent Phenomena: 21 Essays on Translation ed. by Kavita Bhanot & Jeremy Tiang. This might be my favorite book I read in April, honestly. It's a really good collection of essays about the concept of decolonizing translation, and what that means, and whether it's possible, and the uneasy and uncomfortable relationship between translation and imperialism. I didn't agree with all the essays in here, and they didn't necessarily all agree with each other, but all of them at least had something interesting to say. I would recommend this one to people who can find it - it's by a small press - who are interested in translation or who frequently read in translation. The writers have a lot to say that I think is worth thinking about.
She Is a Haunting by Trang Thahn Tran. I think I just need to give up reading YA books with the realization they're generally not for me, though this one almost had me. It's something about the...I know there's a range of styles, I can't generalize style across the genre, but there is a texture to YA writing that doesn't quite work for me.
I love the concept - diaspora horror, colonialist horror, some really fucked up body horror stuff that got surprisingly gruesome - and would love to read a slightly different book about it, but alas, that book wasn't this one.
American Midnight: Democracy's Forgotten Crisis, 1917-1921 by Adam Hochschild. Another contender for favorite book I read this month though I think this one loses out to Violent Phenomena and possibly Gallows Hill, though comparing horror fiction to historical nonfiction feels kind of unfair. Anyway, I knew some of what this book was digging into - the Sedition Act and the intensely violent repression that was going on in the United States during World War I - but I learned a lot more here.
The depressing thing about reading this, though, was watching (so to speak) the brutal crushing of a once fairly robust American Socialist Party such that it never recovered. Not to mention the grinding down of the labor movement, which I think was at its most powerful during this period of time and hasn't been as strong since.
Just looking at that and wondering what might've been if Woodrow Wilson wasn't such a fucking dick.
Elektra by Jennifer Saint. I feel so funny about this book. I read another mythology retelling even though I swore not to because a Tumblr user I respect mentioned it being good; my experience was that it wasn't bad and it didn't actively bother me like some other retellings I could name, but I don't know that I'd actually call it good. Mostly I'd say I wasn't annoyed, just uninspired.
Of the three narrators, Elektra was definitely the best, and I really did like the construction of her relationship with Clytemnestra, which really felt like the meat of the book. (Perhaps, considering the House of Atreus, that's a bad turn of phrase to use.) The Cassandra sections felt like a distraction, mostly a way to keep the reader up with what was going on across the sea and provide some action in between the familial drama. Ultimately I just felt like those sections took away from the Elektra/Clytemnestra dynamic, leaving insufficient meat.
Fuzz: When Nature Breaks the Law by Mary Roach. I went through a period of time where I was reading all of Mary Roach's books, and was kind of obsessed with them, so this was sort of returning to an old and familiar friend. I found I wasn't quite as enamored with this one as I remembered being of some of her others (I think I remember Stiff being my favorite), but it was an interesting look at the intersections between human and animal - which is really more what this is about than law, per se. It's about what we do when animals cause problems for humans, from monkeys to bears, and the questions that are raised about the best way to handle those issues.
Nero: Matricide, Music, and Murder in Imperial Rome by Anthony Everitt & Roddy Ashworth. I'm so confused by this book. From the insistence on referring to Nero as "princeps" throughout the book, to the random dropping of French in places it really didn't need to be, to the frankly credulous approach to the sources, particularly when it comes to sex, even when the author mentioned how sex is often a proxy for politics in Roman historical writing, the weird sideways digression into "did Rome have gay marriage?", the weird "maybe she got what she deserved" aside about Messalina's death...
I learned a fair amount, I can say that, I'm not as knowledgeable about this period's Julio-Claudians. Frankly I think Agrippina (the Younger) was the real star of this book, despite Anthony Everitt's heroic efforts to make Nero the protagonist. Buddy, I see your point, but you're pushing a little too hard here.
Anyway. Weird reading experience, I'm tempted to recommend it just so someone else can either validate it or go "what are you talking about, this was a perfectly normal history book."
---
woof long post, but hey it was a lot of books. currently reading A Fever in the Heartland for more American racism in the early 20th century. I have a stack of library books that are waiting for me and I think the next one is probably going to be The Social Lives of Animals, which will either be really enjoyable or annoy the hell out of me, possibly both.

A Sweet Twist from Citrus Bitterness
Tumblr media
In the 1960s, a USDA project aimed at reducing bitterness in citrus juices led to the discovery of Neohesperidin DC. Neohesperidin, a bitter flavonoid glycoside found in citrus fruits, is a primary source of bitterness in sour oranges. Through a catalyzed reaction with strong bases like potassium hydroxide, Neohesperidin is hydrogenated to create Neohesperidin DC, a compound with a sweetness that ranges from 1500 to 2000 times the sweetness threshold of sucrose. This innovation offers a unique twist on citrus flavors.

Doritos has joined forces with flavor innovator Empirical, to introduce the Empirical x Doritos Nacho Cheese Spirit. Through this limited-release alcohol, the PepsiCo-owned brand aims to infuse the essence of its iconic cheese flavor into cocktails.
The beverage reportedly offers consumers a special tasting experience that resembles the flavor of the snack itself, starting with the umami and tangy aromas of nacho cheese, transitioning to corn-forward flavors, and finishing with a soft, salty note. It is recommended to be served neat, over ice, or as a twist in classic cocktails like Margaritas or Bloody Marys.
Tina Mahal, senior VP of marketing for Frito-Lay North America, highlights Doritos’ aspiration to “disrupt culture” and offer consumers “unexpected, bold experiences.” “We figure it’s time we disrupt the spirits category by offering our iconic nacho cheese flavor in a bottle.”

The Art of Pickling Red Chillies
Ingredients:
Fresh red chillies
Mustard seeds
Fenugreek seeds
Asafoetida (hing)
Turmeric powder
Salt
Mustard oil
Vinegar
Method:
1.   Prepare the Chillies:
Wash the red chillies thoroughly and pat them dry.
Remove the stems and slice the chillies lengthwise into halves or quarters, depending on your preference.  Be sure to wear gloves to protect your hands from the fiery heat of the chillies.
2.   Dry Roast the Spices:
In a dry pan, lightly roast the mustard seeds and fenugreek seeds until fragrant.  Allow them to cool, then grind them into a coarse powder using a mortar and pestle or spice grinder.
3.   Prepare the Pickling Masala:
In a bowl, mix together the ground mustard seeds, fenugreek seeds, turmeric powder, asafoetida, and salt to taste.  This aromatic masala will form the base of your red chilli pickle.
4.   Marinate the Chillies:
Place the sliced red chillies in a clean, dry glass jar.
Add the pickling masala to the jar, ensuring that the chillies are well-coated with the spice mixture.
5.   Add Vinegar and Oil:
Pour enough vinegar into the jar to cover the chillies completely.
Heat mustard oil in a pan until it reaches smoking point, then allow it to cool slightly.  Pour the cooled mustard oil over the chillies until they are fully submerged.
6.   Let it Mature:
Seal the jar tightly and store it in a cool, dark place for at least a week to allow the flavors to meld and develop.  Your homemade red chilli pickle will continue to improve in flavor over time.

7 Pro Tips for Getting the Most Out of Your Home Soda Streaming Machine
Tumblr media
So, you've invested in a home soda streaming machine to enjoy the convenience and fizz of homemade soda whenever you please. But are you making the most of this innovative appliance?
Here are seven expert tips to help you elevate your soda-making experience and unleash the full potential of your soda streaming machine.
Chill Everything
Before you start carbonating, make sure all your ingredients are chilled. Cold water absorbs carbon dioxide more efficiently, resulting in fizzier and more refreshing soda. Chill your water, syrups, and even your soda streaming machine's carbonation bottle for optimal results.
Carbonate to Your Preference
One of the greatest perks of a home soda streaming machine is the ability to customize your soda's fizziness. Experiment with different levels of carbonation until you find the perfect balance for your taste buds. Remember, a few extra pumps of carbonation can take your soda from flat to fabulous.
Add Flavor Creatively
While traditional soda syrups are delicious, don't be afraid to get creative with your flavorings. Experiment with fresh fruit juices, herbs, and flavored extracts to craft unique and refreshing soda creations. From citrus-infused sparklers to herbal elixirs, the possibilities are endless.
Mind the Ratio
Achieving the ideal flavor-to-fizz ratio is key to crafting the perfect soda. Start with a small amount of syrup or flavoring, then gradually add more to suit your taste. Too much syrup can overpower the fizz, while too little may leave your soda tasting flat. Aim for a harmonious balance that tickles your taste buds just right.
Keep It Clean
Regular maintenance is essential to keep your soda streaming machine in top condition. Clean the carbonation bottle, nozzle, and other components after each use to prevent buildup and ensure optimal performance. A quick rinse with warm water and mild soap will suffice, followed by thorough drying.
Experiment with Bubbles
Who says soda has to be the only bubbly beverage in town? Use your soda streaming machine to carbonate water for sparkling cocktails, mocktails, and flavored seltzers. From bubbly mojitos to fizzy fruit spritzers, let your imagination run wild and toast to endless effervescence.
Get Creative with Garnishes
Elevate your soda-drinking experience with fun and festive garnishes. Whether it's a twist of citrus peel, a sprig of fresh mint, or a handful of berries, adding garnishes can enhance the flavor and visual appeal of your homemade sodas. Get playful and experiment with different combinations to dazzle your guests and elevate your at-home soda bar.
With these seven tips, you'll be well on your way to becoming a home soda streaming aficionado. From perfecting your carbonation technique to exploring creative flavor combinations, the possibilities are endless. So, fire up your soda streaming machine, unleash your creativity, and toast to the fizzy delights of homemade soda. Cheers!
