Once again *CHEAP* and *EASY*, and *SUPER VERSATILE*. I wish I had a better picture but they went too fast! Crêpes are a weekend breakfast tradition at my house, with friends and neighbors always invited because this recipe makes for A LOT of light and airy crêpes. Can be eaten with basically anything at any meal. Good for families; kids can help mix ingredients and can “decorate” their own. Everyone can eat different ones together: if you’re feeling savory fill one up with chicken, sundried tomatoes, spinach, sautéed mushrooms w/ cream, but child #1 is feeling a lil more simple go with something like bacon, avocado and tomato, while child #2 has a strawberry and whipped cream crêpe. My mom always put out a dozen little bowls of different fillings for that reason. Of course Nutella, fruit, ice cream, chocolate sauce, caramel, plain sugar, sugar with lemon juice, jams, pb&j etc. are always options. Pictured above is a ham and cheese crêpe with a fried egg on top. Other options: sautéed veggies or a stewed ratatouille, braised meats, cream of _____ soup, scrambled eggs and sausage, plain cheese, make a mini pizza and fold it, spinach and goat cheese etc. etc. etc.
CRÊPES
Makes…I dunno 40?
4-5 eggs (I like them eggy) 2 cups flour 3 cups milk 4 tablespoon oil 1 teaspoon yeast Pinch of salt Mix all ingredients. Pour into another container through a sieve to obtain a very smooth batter. Coat 1-2 pans with oil depending on how eager you are. When it/they are hot, pour some batter, use your wrist to spread batter around in a THIN THIN!! layer. Sometimes I even mix a bit of water to thin out the batter. When the edges of the crepe start curling, detach it with a spatula and flip it. When you feel ballsy, flip it in the air like a real king/queen of the kitchen. Then take a bow and quickly pick up the first botched attempts off of the floor. Have leftovers? Keep them covered in plastic on counter and reheat them for 15 seconds in microwave.
