North End survive on a dramatic final day

North End maintained their Championship status on a dramatic final day with a little help and insurance from West Bromwich Albion and Portsmouth. A 2-2 draw at Ashton gate was more than enough as neither Hull nor Luton could better North End`s result with the Hatters going down to league one after a 3-5 defeat at the Hawthorns. Hull City`s 1-1 draw away at Portsmouth was enough to see them fight another day in the Championship as North End finished the season in 20th place in the second tier. The draw in BS3 was typical North End who went two goals in front only to concede two in six minutes to set up a nail biting last fifteen minutes with Luton pulling back from 5-1 to 5-3 late in their game.

Paul Heckingbottom made one change from the team beaten at home last week with Ryan Ledson coming in for Steff Thordarson in the centre of the Park. North End started the game well with the team full of fight and passion knowing, at that stage, that only a win would ensure survival for sure. Whiteman had a shot and Brady sent an effort over the bar as North End took the initiative. Bristol had their share of the ball but for once it was Preston winning 50/50s and with just under half an hour gone North End took the lead. A Brady cross from the right found Riis who headed home from about six yards out. Twine almost replied instantly but North End were defending solidly at that stage and deserved their lead going into the break.

No changes at half time for North End but in the first minute Osmajic had an effort well saved by the Bristol keeper. Eight minutes in the hosts had an effort go agonisingly wide of the post as Cornell looked on. On the hour North End doubled their lead when Whiteman put Osmajic through and the big striker made no mistake running away and slotting home from the inside left position. Cue scenes of mayhem in the away end with advertising boards collapsing and North End fans engaging in wild scenes of celebration. The game wasnt over though and ten minutes later the Robins were pulled one back when Robins headed home completely unmarked at the back post. North End were under the cosh for a while and when McCrorie scored from a through ball far too easily for my liking the nerves began to jangle a little. With the score 5-3 in the West Midlands the travelling support looked anxiously at their phones and watches but they need not have worried as North End saw it out with the draw also enabling Bristol City to finish in the top six and face Sheffield United in the play off lottery.

So as far as the football side of the club goes all is well that ends well but there was almost a unanimous call for change from the travelling support I spoke to at Ashton Gate. The "streamlined process" in running the club hasn`t worked and most are calling for change. There will, no doubt, be plenty said and written in the coming days and weeks regarding the club structure but my take is that if we always do what we always did then next season we will be relegated. However, for now, we can at least bask in some sort of achievement having maintained our status in the Championship of what many believe is the fifth best League in Europe. A great day at last for the North End fans but it can never be allowed to get to this again because we have almost been sleep walking into relegation.

The location of Muskoka Farm on the Hawkesbury River makes it a world class equine facility. It’s surrounded by national parks and bushland, making it the perfect place to train horses. Its 280 acres are equipped with a variety of facilities, including a lap pool and high-speed treadmill.

This state-of-the-art horse spelling and training complex is a favorite among many top trainers. It has three tracks (1000m sand, 2900m crusher dust and 2400m turf), horse swimming pool, walking machine, treadmill, barriers, 70 boxes and dozens of day yards. It also has a fail-safe water supply from a dam and bore, permanent garden irrigation and staff accommodation.

To reach Muskoka Farm, drive past Wisemans Ferry and take the Central Mangrove exit on the F3. Turn right at the second set of Maples and continue straight and then left to the main front gate. It takes about 1 hour and 45 minutes to get there from Sydney.

Muskoka Farm is a world class thoroughbred facility that offers breaking, spelling, and pre-training services. It also provides agistment and quarantine facilities. It is surrounded by national parks and bushland, giving the horses a peaceful environment. It also has state-of-the-art training facilities, such as a lap pool and high-speed treadmills.

The facility is staffed by an experienced team of horse trainers. Tim Clark, who began his career in England and worked for Sir Noel Murless and Henry Cecil, is the foreman at Muskoka Farm. He is an excellent track work rider and horse breaker, and is known for his ability to prepare yearlings for racing.

The facility also has a 2.4-kilometre crusher dust track, a 2-kilometre grass track for pace work, and large fully-fenced paddocks. It is also a registered AQIS quarantine facility, which allows it to handle imported horses. In addition, it has a 16-horse walker and a high-speed treadmill. This makes it a perfect choice for yearling preparation and breeding.

A favorite among horse trainers, Muskoka Farm is a world class equine facility with a reputation for fine-tuning the care of race horses. Its 280-acre property is located near national parks and surrounded by natural bushland, providing a serene environment for race horses to relax and heal.

Catherine Day Phillips has been training racing Thoroughbreds for more than 25 years, and her clients have won many races. The Spot where Sausage is Supreme and Charcuterie is above all the rest. Among the best places to eat at the historic plaza in the town of Sonoma is The Sausage Emporium. Few people know the real details about sausage and “cold cuts” as owner Miranda Ives does.

She also knows how to pair beverages with the right combination of sausage and meat. This reporter had the opportunity to chat briefly with Ives while enjoying a favorite of mine from the regular menu.

The Vietnamese Banh Mi, made with The Sausage Emporium’s own pork sausage, paté, house pickled carrots, cucumber, cilantro, fresh mint, jalapeño and sriracha creme is yummy. What surprised me was the fresh baked bread-roll (actually it’s a short baguette) it was served in. The aroma alone made for an exceptional culinary experience as that baguette was soft yet slightly crisp and warm. The reviews and ratings for the Sausage Emporium are high and raves.

The harmony of hot, spicy and subtle tangy flavors was very satisfying. The other aspect to The Sausage Emporium I noticed is that there’s a variety of sausages and meats that can gratify just about any palate.

Being in Wine Country, Ives knows her stuff and can prepare a dish that will do more than impress; it takes the taste buds to new levels of experience. Being able to pair a particular wine with a food is a talent and I think it’s crucial.

For example, there are many wonderful wineries and wine-makers in the Sonoma Valley that are eager to have their wine served at a restaurant. Yet in efforts to sell wine and promote it, few tasting rooms take the time to really pair food with what they want to sell.

A really fine Cabernet Savignon like the one I had at the Zina Lounge at the Ledson Hotel, a glass of something sparkling at SIGH, or a Petite Syrah such as the one offered at St. Francis upvalley in Kenwood needs to have something exceptional to go along with it.

Ordinary grocery store cold-cuts truly don’t do a fine wine justice. I’m sorry to say that some of the tasting rooms at the plaza and elsewhere don’t understand this fact. A Sonoma or Napa Valley wine that can truly rival that of any in Europe must have a good food pairing to highlight its own flavor and regional characteristics.

Certainly Sonoma and Napa area can make fine cheeses but quality meat, specifically a sausage or local bologna? Hmm! Here’s where Ives and her staff can help. Charcuterie board servings are popular and The Sausage Emporium makes them.

Not many people know this but to make real bologna or mortadella, prosciutto, etc. is a “slow-food” art. Oscar Meyer or Hormel and others does only the mass produced type; of which Americans are used to.

Pepperoni for instance is essentially an American version of salami, something close to what Italians might call ‘salame piccante.’

As Ives knows, it’s a generic term that means “spicy salami.” It’s made from beef and cured pork mixed together and then seasoned with a blend that usually includes paprika, garlic, black pepper, crushed red pepper, cayenne pepper, mustard seed, and fennel seed.

Ives of course has her own recipe. Still, just about every pepperoni producer uses a different mix and ratio of ingredients, but paprika is always present. The paprika is the ingredient that give pepperoni its color. And most likely according to food historians, perhaps paprika had something to do with the name “pepperoni.”

Only someone like Ives would know that and provide a customer a more discerning understanding of what really good pepperoni is.

For foodies it’s also important to know that The Emporium’s ability to pair food with beverages doesn’t stop at wine and beer. Sausage Emporium serves delicious coffee and is even promoting its own holiday blend just for the winter season called “BeanWrks.”
