Killing me Softly
A huge cab. Massive and alcoholic in the nose, a chokingly-dense mash of berry, apricot and slight prune distilled down into jelly and syrup giving off toasty notes over heated briar, ink and newsprint. Paso certainly builds them big, and finding balance is key. Here, things go mostly in the wine’s favor, though not for the faint-at-heart. I love this winery for a lot of reasons. First of all,…

Francis Ford Coppola Winery - Diamond Collection Blue Label Merlot & Diamond Collection Ivory Label Cabernet Sauvignon on sale! Yorkshire Wines & Spirits. Cab: A powerfully complex wine with a classic flavor profile and youthful maturity. For our Ivory Label Cabernet Sauvignon, we combine fruit from appellations as far north as El Dorado and as far south as Paso Robles where some of our vineyards experience diurnal temperature extremes, which slows the ripening process and enhances the rich, succulent flavors of the fruit, as well as the complexity of the palate. Merlot: A vibrant California Merlot, displaying luscious plum and red raspberry flavors. Our Merlot combines fruit from Napa, Sonoma and Monterey. The flavors and textures unique to each region harmonize perfectly to create a wine that has dark succulent fruit balanced by natural acidity. Intense aromatics of raspberry and blueberry lead to flavors of crushed berries, vanilla and leather, which are wrapped up in a soft, smooth tannin structure. Wining in Paso Robles with the CAB Collective...Day 2...
Wining in Paso Robles with the CAB Collective…Day 2…
Day 2 of the Goddess of Wine’s and JD’s coverage of the Paso CAB Collective dawned bright and sunny as we headed to the Vintner panel discussion at the Paso Robles Inn.
The Paso CAB Collectivewas created in 2012 as a “grass-roots non-profit organization…formed with the belief that the Bordeaux varieties Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec grown in the Paso Robles…

Per Bordeaux
While the Zinfandel thing is over, and most are still staking claims on Rhone varieties ruling Paso, I often say I think Cab is going to be the ultimate legacy for the region. Basically the only thing I agree with Daniel Doau on–maybe for different reasons, maybe not. The west side is full of madrone and manzanita higher up and classical nut orchards below: everything the Napa Valley was and is.…

Train Ride
Paso Cab just hits different. As any loyal reader knows, I drink a fair bit of Napa and Sonoma cab–and not a whole lot of Paso. Not really a conscience decision–just happenstance. And–unpopular opinon coming–I think Santa Margarita and the East-side make better cab than the blingy glory-holes of the coveted–and $$$–West-side. Clean and direct, showing all the things EYE like in a Cabernet. All…

Harmony at Night
I remember buying this wine, but I’m not sure WHEN. And, it’s NV–and unlike most of the NV wines I put in the cellar–I failed to write the purchase date on it. I was at the TR, and strongly dis-liked anything being poured except this one–and I bought a couple. When queried about the lack of vintage, I remember them being quite vague about how old the blend was and why exactly it carried the NV…

The Paso Equilibrium
This is a very well-balanced wine–blended to near-boring levels–and with points of nuance pointing several directions. Like the DuBost Red Wine I reviewed last week, no indication of component on label–something I actually ENJOY, as it really causes almost-blind reflexes to be stimulated. But this one is clearly no mop-the-floor red blend–hinted at by both the $tunning packaging and smell &…

Let Them Eat Cake
Tumblr media Tumblr media
Big fat candied oak and ridiculously syrupy stuff I suppose was once fruit greets your nose. Bereft of spice, angst, or anything really interesting, it’s just steaming mounds of typical Paso Robles flatulence and *bigger-is-better* liqueur. No herbaceousness, no funk, no mineral graininess or acidic excitement, what you have is thick, flaccid sweetness coupled with what I am sure other reviewers…

Broken Record
Gritty, grainy, and gorgeous, this robust elixir never takes a breath: expanding and becoming more complex with each swirl. Lush tropical floral sits atop metallic Bordeaux spice, peach-pit and gob-stopping blackberry dazzle. The berry explodes with apricot and newsprint, the dirrrty, earthy shell whittled away at by tireless fruit concentration. It was a bit closed-in to begin with and decanting…

Tryna hold back
This is the FIRST wine I ever ordered at a restaurant on the Central Coast when I moved here, basically 20 years ago. It was at Steamers in Pismo Beach, with my now ex-wife and her parents. You have to understand: I had very little knowledge of Paso Robles or Santa Barbara wines, even being completely immersed in the Nor-Cal wine scene for a couple decades. I had seen Liberty School, and ABC, and…

No More Tears
Creamy and round in the nose: almost a tahini nuttiness with touches of buttered popcorn. This all plays well into a bit of cellar-floor and barnyard–extremely light–with dank floral eclipsing the concentrated black cherry driving everything. I’m feeling like this might not be dominantly Cab–but also doesn’t come off particularly cab-franc or PV-driven: two varieties common in Paso BDX blends–and…

Paso Goalz
Opulent and beautiful, from the moment you grasp the massive bottle through smelling and tasting it. One of my favorite Paso Robles cabs, and probably fairly off-the-radar of even devoted fans of the region. Produced by a couple guys with DECADES of wine-making history behind them, this 2014 turns SEVEN this week and shows EVERYTHING needed for another two decades of promising age. Thick garnet…

Tempestuous
Medium ruby with a blue-pink glow. Cheery sweet fruit in the nose with a dusty patina hinting at petrichor and sun-baked dirt, but with enough citrus and briar to cloud those into the background. Rich black cherry and green fig pump up the fruit into standard Paso levels, powered along by thick decomposing vegetal and a hint of amaretto. Crisp and gritty in the nose, an elevation somewhat…

Rangefinder
Opaque black in the glass, barely thinning to purple at the extent of the rim. Heady ripe fruit, gobs of syrupy cherry with warm, round waves of alcohol, oak and stewed Christmas spices flowing off it. A bit dessert-y for me, but in the grand scheme of marketable Cabs lately–and what the 99 desire–definitely falls into the *delicious* category. It has that chubby rotund *thickness* in the nose…

Short Stack
What am I going to say about this wine. Even before you started reading, you were asking that question. I know. If I were blinded this, I’m not sure what I would say. The color is this opaque black purple, with a day-glo violet rim. It stains the glass terribly. Fat, rich and plummy in the nose, the syrup and density fairly leap at you. Blueberry pancakes drenched in margarine and Aunt Jemima.…
