Ingredients: 1 medium spaghetti squash. 2 medium apples, diced. 1/2 cup pecans, toasted and chopped. 2 tablespoons olive oil. 2 tablespoons apple cider vinegar. 1 tablespoon maple syrup. 1 teaspoon Dijon mustard. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Turn on the oven and heat it up to 400F 200C. Split the spaghetti squash in half down the middle, and then scoop out the seeds. Lay the squash halves on a baking sheet that has been lined with parchment paper, cut side down. Put the squash in the oven for 30 to 40 minutes, or until it's soft and a fork can easily go through it. Take the squash out of the oven and let it cool down a bit. Scrape the squash's flesh into a large bowl with a fork, making strands of it. Put the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper in a small bowl and mix them together with a whisk. Dice the apples and toast the pecans, then add them to the bowl with the spaghetti squash. Add the dressing to the salad and gently toss to mix. Add fresh parsley as a garnish if you like. Serve right away or put in the fridge until you're ready to serve.

Ensalada de Manzana
Esta ensalada me parece que tiene una combinación de sabores y texturas que me parece maravillosa.
Inspirada por la ensalada de manzana y berros de Yeung Man Cooking, le he hecho unas modificaciones y aficiones y me encanta.
La base la hago con kale negro, llamado también kale dinosaurio. A esta le agregué rugula y lechuga romana morada.
Le agregué una zanahoria fresca rallada, 1/4 de pimentón rojo en julianas, media manzana gala, medio aguacate Lorena con sal de mar espolvoreada encima y medio gajo de apio. Esto último es nuevo. Y maravillosa!
Hago una salsa con miel, jugo de limón, sal y pepperoncino. Aunque esta vez no le puse pepperoncino.
Los sabores y texturas de esta ensalada me encantan. La crujencia y frescura del pimentón y ahora del apio. La dulzura de la manzana y la miel. El contraste cítrico del limón. Las hojas que añaden frescura y un poco de chewiness. Lo pedazos de nueces (del nogal) que dan saciedad y añaden diversión y un poco de crujencia también al plato. El aguacate que añade una suavidad fresca.
He estado comiendo ensaladas como plato principal la mitad de los días de la semana.
Antes creía que comía bastantes frutas y verduras porque simplemente me gustaban y las añadía a los platos. Pero ahora las hago mis platos principales. Como muchas más frutas y verduras diariamente. Y me divierto más con ellas.

After a hectic day and completely drained of energy, we stumbled upon a not-so-up-to-the-mark franchise. Since, this was our first time to Sri moturam prasadam, our hopes of having good food shrunk. More or less, we consoled ourselves and booked another UBER to reach the flagship restaurant. It took 20 extremely long minutes to reach there. By around 07:30 pm – still daylight, fully exhausted, we entered the restaurant. It finished as soon as it started, there were around 8-9 tables around each with a 4-seater capacity. This was the point from where everything went our way.
· We were welcomed with tilak and pooja – truly atithi devobhava / Padharo maro desh
· Served with hot and refreshing tea in kullhars
· 2 Thalis of Dal baati churma “Authentic and every Vegetarian Rajasthani flavor there is”
· Fantastic hospitality by host – detailed chat session while he gave us special attention
We were really happy at the end of it. It was a delicious plate of food with a satisfaction to have beaten the challenge from the owner. Challenge was that no one can completely finish 1 thali, there is always some left. We were so full that we decided to walk a partial way. Once we were tired, we took an uber and reached our hotel, and relaxed for the day. We were also happy that we have covered most of it and now, all that is left is shopping, which was left out because of lockdown on Day 3. So, the plan for Day 5 was already made and we had selected our breakfast point already. With that, we relaxed at our hotel and prepared for the next day. This day we again met Chetan Bhagat in the lift lobby, while coming back.

With this crazy heat I couldn't imagine cooking nor does much cooked food sound as appealing as a refreshing coctel de camaron. I hit La Penita Mexican Restaurant for this beauty. Lots of shrimp, big chunks of avocado...essentially everything necessary to tie together a perfect hot weather meal. I skipped the saltine crackers they served to scoop with the fresh tortilla chips they served as an appetizer.
