Nemohu mít oči všude a i mí spolehliví terénní zvědové potřebují dovolenou. I proto mi po dva měsíce unikalo otevření nové pobočky řetězce JIP Potraviny, které se odehrálo začátkem prosince a vneslo čerstvý vítr do profilů instagramerů, starostů i debaty o kvalitě samoobslužných prodejen s potravinami v tuzemsku.

Je smutnou pravdou, že po odchodu belgické Delvity, francouzského Carrefouru nebo rakouského Intersparu se ČR stala doménou diskontů a kdo někdy viděl DeSpar v Itálii nebo (nyní již uzavřenou) Billu tamtéž, hořce zapláče nad tím, jak rozdílné může být pojetí a nabídka téhož řetězce.

A nechtějte po mě, abych se rozvášňoval nad podobou hypermarketů Conad a Carrefour v Rimini a Lucemburku, opětovně komentoval britský M&S či Waitrose anebo se dojímal nad newyorským Fairway. Jsme prostě v ČR a Brně a máme, co zdejší trh unese. A jestliže jsem v perexu uvedl velký řetězec luxusních supermarketů, který už nějaký čas vlastní Jeff Bezos, není to náhoda.

JIP Svět potravin se totiž alespoň v omezené míře snaží nabídnout „organic feel“, který člověk zažívá, když poprvé vstoupí do vlajkové a největší britské pobočky amerického řetězce na Kensington High Street.

Což znamená dřevo a dekorační lamely, kam se člověk podívá a řadu ohraničených a přitom maximálně otevřených úseků v rámci obchodu: na místě dělané pečivo, maso a mořské produkty, čestvé těstoviny, kávový koutek s pražičkou, luštěniny a semínka na váhu, bio oddělení nebo výroba mozzarelly.

Samozřejmě nesmí chybět několik gastro provozů včetně grill a champagne baru, trofejní kořalkové oddělení, kavárna, lahůdky nebo dvě separátní a teplotně regulované prostory pro ovoce/zeleninu a mléčné výrobky.

Když se člověk prochází mezi regály, okamžitě jej napadne několik rozdílů oproti americkému předobrazu. Na prvním místě je to prezentace. Maso, ryby i sýry umí na Západě (ale třeba i v sofijském Fantasticu) naaranžovat znatelně lépe, nemluvě o zelenině a ovoci, kde je znát až nelidská péče tomuto věnovaná.

Další nedorozumění představuje hudební podkres. Pokud má být JIP Svět potravin jen trochu prémiový supermarket, nemůže hrát na ploše i na toaletách (tam obzvlášť nahlas) šíleně spotřební rock/pop, nýbrž dramaturgicky vyprofilované věci mající blízko k jazzu a ideálně lounge.

Luxusní supermarket má také mít vlídnější prodavače a prodavačky. Žádný kluk ani holka se na mě jako zákazníka neusmál ani jsem neměl pocit ochoty nebo dokonce vřelosti. A konečně: U koše s bagetami nebyly doplněné dlouhé papírové sáčky s celofánovým okénkem (tyto jsem si musel vyžádat). V sekci prémiových čokolád pak byly na polici ve výši očí (kam se dává nejdražší zboží) viditelné závěje prachu.

Posledním a zásadním nedostatkem jsou naprosto otřesné pokladny, ve kterých sedí pokladní zády k zákazníkovi a markované zboží berou z krátkého pásu, kam na ně zákazník nevidí. Tak neergonomicky vyřešené kasy jsem v životě neviděl a jak poznamenal jeden z věrných čtenářů, být brigádníkem, uteče odsud za dvě hodiny.

Stěžejní odlišností je však skutečnost, že JIP Svět potravin není jen (na české poměry) prémiový supermarket, nýbrž také potravinový velkoobchod, který na rozdíl od Makra umožňuje nákup koncovým spotřebitelům.

(I proto se obrazový doprovod článku z většiny zaměřuje na ukázky balení určených pro restaurace a další provozy, něco, co dosavadní a nadšené ohlasy influencerů opomíjejí.)

Obchod jsem navštívil v rozmezí minulého týdne dvakrát (středa odpoledne a neděle po poledni) a ještě než okomentuji jednotlivá oddělení, uvedu, že tento je svým umístěním výjimečně nevstříčný pro ty, co přijedou MHD nebo sem zajdou z procházky.

Pivo. Údajně Pivní palác sestávající z 260 druhů tuzemských a zahraničních piv je pro mne do značné míry zklamání. Ano, je tu pár klasik jako Schneider-Weisse Aventinus Eisbock (za vlídných 68 Kč), vybrané věci od Fuller's, pale ale Sierra Nevada nebo dvě verze Gulden Draak, ale třeba aténský supermarket má výběr daleko širší a kvalita lednice s českými minipivovary je prostě slabá.

Je fajn, že tu mají a používají vlastní pražičku, ale cena i popiska sáčků napovídá, že na nějakou kvalitu se tu moc nehraje (viz foto níže). A kávové regály jsou přeplněné tuctovou nabídkou velkých a masových značek a práškovými cappucciny a dalším instantem.

Napříč sortimentem jsou k vidění levnější edice výrobků Carrefouru, položky, na které člověk normálně narazí v polských obchodech firmy a je-li tohle to zboží z francouzských obchodních sítí, o kterém mluví idnes.cz, pak říkám ehm... Když už jsem sem dvakrát vážil cestu, pochopitelně jsem ochutnal a jako obvykle, byly to základní a zásadní maličkosti.

Začal jsem povidlovou buchtou a focacciou (25 a 15 Kč, oboje na úrovni ještě horkého rozpeku v Lidlu, 12 – 13/20) a při další návštěvě zkusil smaženku (24.90, krajíc 10/20, vajíčko a obloha 9/20 a příšerně bez chuti), bagetu (25 Kč, 11/20 a zvládl jsem jen půlku a nejméně dobrá ze všech v poslední době vyzkoušených) a zdejší pšeničný kváskový chléb (500g čtvrtka za 24.90, 2kg bochník 89 Kč, 12/20).

Neopomenul jsem základní a přímo za sklem taženou mozzarellu (47 Kč/100 g, valounek o hmotnosti 0.168 kg za cca 80 Kč, ale absolutně bez chuti, 11/20 a snad i privátní verze téhož v Bille či Lidlu jsou lepší).

Až na italský sýr nejde o ceny nijak vysoké, spíše naopak, a právě tyto jsou zřejmě hlavním tahákem obchodu, protože jsem o nich slyšel s údivem referovat nakupující nejen na ploše, ale také v nadšených telefonátech příbuzným a známým.

Neříkám, že se tu nedá vybrat něco zajímavého (rýže, těstoviny, oleje, víno i další položky mají širší záběr než je v našich supermarketech obvyklé a také maso je za hodně přátelské ceny), ale můj celkový dojem je rozpačitý a budu doufat, že se někdy do Brna dostane obchod podobný výše uvedenému sofijského hypermarketu, protože JIP Svět potravin je rozkročen mezi dvěma koncepty a jako takový obsahuje až příliš mnoho kompromisů.
