I think I’ve figured out how I’m going to format these posts. Given that I write them in the morning or the early afternoon, I will go over last night’s dinner and then go into my breakfast and lunch!
Last night for dinner, I had a Fresh Express salad kit. It was Avocado Caesar salad and came with avocado Caesar dressing, corn, and tortilla strips. The entire bag was about 340 calories. I also heated up a frozen meal because it was a relatively small salad. It was a Cauliflower mac and cheese. The cheese sauce was made with cheddar, Monterey jack and butternut squash? It was a very interesting combination. It wasn’t cheesy enough, however, so I added a quarter cup of shredded cheddar jack cheese. This was about 460 calories with the added cheese. Altogether, my dinner came out to be 800 calories, which would make it my largest meal of the day. I don’t feel too bad about it however because it was delicious and kept me full for the rest of the night. I am lactose-intolerant though so that cheese later came back to haunt me. Lesson learned. Either skip the extra cheese or take a Lactaid.
So with my snacks after school, my total calories yesterday were: 1834, which is 5 calories under my daily allotment. I am impressed with myself because I didn’t actually eat anything too bad yesterday? Usually, I fall off after school and eat way too many raisins or peanut butter, but I didn’t yesterday! 
I stepped on the scale this morning and I’m down about a half pound which is great. Slowly but surely! I don’t want to lose weight too fast anyway, because I don’t think I’ll keep it off if it’s too sudden. My current weight is 190.4 and my first goal is to get down to 185. I feel like I can do this!
My sugars this morning are down from yesterday. They dropped about 9 points! I went from 130 to 121 this morning! I think by the end of the month I should be under 100 a day which is what the doctor said I should be at. I have an appointment with her on Saturday to monitor progress, and I feel pretty good about it. I know it’s not going to be great obviously but I feel like I have made significant progress over the last two weeks. I don’t want to get too excited though. It took a while to get this bad, so it’s not going to become great over night.
For breakfast this morning, I tried a new item. It’s called Magic Spoon breakfast cereals. I have always been a huge cereal person but I haven’t eaten it in forever because it’s probably one of the worst things I could be eating right now. However, I was listening to one of my favorite podcasts (Hey Babe with Sal Vulcano and Chris Distefano. Shout out No Presh) and they had a promo code for this sugar free, keto-friendly, grain free, soy free, gluten free cereal. (Magicspoon.com/heybabe for $5 off. You’re welcome.) I tried the cocoa cereal this morning and while it didn’t taste exactly like Cocoa Puffs, it was still delicious. For a cup of cereal, it comes out to 140 calories. I used about a cup of my fat-free lactose-free milk which was about 89 calories (To be fair, about half of that went into the bowl and half was in my glass, so it was probably more like 3/4 of a cup because I didn’t drink the remaining milk from my bowl. But I will round up). I also ate a protein bar because I didn’t think that the cereal would keep me full. I tried a new flavor this morning and it was amazing. It was the Blueberry Bliss bar and it was scrumptious. This was about 190 calories. So in total, my breakfast was about 419 calories today. I don’t feel so bad about eating bigger breakfasts because I won’t eat again until about noon.
I haven’t eaten lunch yet but I did pack one today and this is what I brought with me. I made a wrap using a Mission Carb Balance spinach and herb tortilla with 3/4 of an ounce of Colby Jack cheese, and 2.7 oz of Sara Lee roasted turkey breast. I also packed 16 grams of ranch flavored rice cakes and a Honeycrisp apple. I also brought a Diet Pepsi. Do not judge me. Some people are addicted to booze or pills; I’m addicted to Diet Pepsi. In total, my lunch comes out to 396 calories.
This means by the end of the school day I will have consumed 815 calories. I will have around 1000 calories left for dinner and any snacking I should choose to do. It’s only been a few weeks since I’ve started but I feel good about where I am. I’m trying really hard to stay on and keep it up. Around 3 years ago, I was 215 pounds and absolutely miserable. I’ve already lost 24.6 pounds and am looking to lose probably 25-30 more but in a healthy and sustainable way.

You can really taste creamy potato, bacon bits, green onion, sour cream and cheddar. These puffs have a total of only 3 grams of carbs and 21 grams of protein. Even better, they only have 1 gram of fat and there are only 150 calories in this single serving pouch. As a bonus, these puffs are gluten free and soy free.

The Kale Factory Kale Krackers "Cheezy" Dill - est. $2 on Amazon.com I sometimes make Kale "crackers" by roasting kale in the oven with olive oil. They don't keep very well, but these Kale Krackers would! They are made with all natural ingredients including kale, flax seeds, sunflowers seeds, cashews, sesame seeds, etc. These are keto friendly because they have only 3 grams of net carbs for this entire pouch! These crackers were pretty good and had a nice crunch to them.

The Chocolate Trader Keto 80% Dark Chocolate Almond Bark - $5.99 This dark chocolate almond bark has only 2 grams of net carbs per serving, and there are 4 servings in this bag. That means there is a lot of chocolate you can eat in one sitting! Since this chocolate is sweetened with monk fruit extract, it has a slight aftertaste, but is great if you can't have chocolate on your keto or low carb diet!

Good to Go Raspberry Lemon Snack Bar - $2.67 on Amazon.com This is a soft baked bar (think Nutri-Grain texture) that has only 3 grams of net carbs and 7 grams of fiber. It is made with almond flour, lemon, freeze dried rasperries, erythritol, etc. My kids tried this bar and really like it! This bar is on my buy-again list as well.

Pyure Organic Sugar-Free Harmless Hunny - $8.80 on Amazon This sugar-free honey alternative is sweetened with organic Stevia and is also non-GMO. 1 tablespoon of this hunny is only 4 grams of net carbs, which is pretty amazing! This would be great for anyone on a strict keto, diabetic, or low carb diet. While this doesn't taste like real honey, it could be a good substitute if you really miss or need a honey-like taste. There is a stevia aftertaste, so if you are used to to this, it may be a good alternative for you.

Because of this, I’ve found that low-carb does NOT mean low-flavor. Low-carb meals are just as tasty as high-carb meals. Some are even tastier!
