bột bánh tiêu .. aka Vietnamese fried cake
Remember one of my 2022 goals was to try / learn more about Southeast Asian cuisine????? It’s okay if you don’t, bcos I’m telling you again now.
Yeah, I wanna try making more SEA foods, esp the “easier” stuff like street food. So I got this box of fried cake mix.

I have not eaten bột bánh tiêu before but from Googling & Youtube videos, it seems like it’s a doughnut. Some are reminiscent of the Korean pancakes - the hotteok, bcos it’s flatter in morphology.

According to the instructions for this particular brand of mix, it’s going for a more spherical look.

The contents: big bag of powder, small packet of yeast.

Took me a looooooonng time to get it to this form. It just wasn’t sticking & I had a hard time kneading it =( Nonetheless, I got a somewhat nice intact ball of dough after some struggling.

Post-incubation. It got a little bit larger, but the most noticeable thing was the moisture. It got sooooo sticky after the incubation!

I skipped taking photos bcos my hands just couldn’t handle it lol the dough was very, VERY sticky. I wanted to go for 12 pieces but I ended with 11. I think I did a good job making them into even pieces though! Anyway, I added brown sugar to the centers & didn’t coat with sesame seeds. I wasn’t sure how I’d do with deep frying sesame seeds- I’m sure they burn easily & I didn’t wanna ruin it.

Mannnn they browned so fast! I adjusted the heat after this 1st batch bcos I was like. .. so the outside is like brown after not even 1 minute...the inside is for sure not cooked lol

The ones in the picture on the box has sesame seeds but mine didn’t so that’s why it looks different but I’d say the shape & size was right.

Yup. .. slightly undercooked. .. but it was okay! It was very much like doughnut, NGL. The exterior actually wasn’t ‘crunchy’ even though it was deep fried. It was just kinda hard. The dough section (between crust & the brown sugar filling) was soft but it was a scale for sure XD thoroughly cooked to slightly undercooked. I had expected the dough itself to be a little flavoured but it actually had no flavour at all. So I’m glad I added the brown sugar filling!!
These were not legit/”authentic” bột bánh tiêu for sure (like c’mon, I didn’t add sesame seeds!) but given this experience, the dough was very much like hotteok dough. Maybe it’s supposed to be like that??? I don’t know. It’s hard bcos I haven’t eaten these before so I have nothing to compare to. ..

Be U opened earlier this year in a gritty but up & coming part of East Hollywood. There aren’t many banh mi options in the area. Be U is female-owned and specializes in Vietnamese street food and comfort food. They have small bites, salads, banh mi with your choice of protein/veg ($7.50), rice noodle plates, porridge, and drinks. Protein options: lemongrass chicken, lemongrass pork, lemongrass angus beef, lemongrass tofu, seared oyster mushrooms & avocado.
Braised & caramelized pork & eggs rice plate ($10.50): Caramelized pork belly and eggs, pickled mustard greens served over Jasmine rice, garnished with scallions. I wasn’t expecting something so brothy – more like soup than stew. Cubes of fatty pork belly are braised in caramel sauce and fish sauce. The eggs are hard-boiled. I thought it would be a dry dish with fried eggs (and runny yolks). Anyway, the broth was too salty. The pork, eggs, and pickled mustard greens were sweet, so that helped. The pork was tough though the pieces were very fatty. The fat was the best part.
Vietnamese iced coffee ($3.50): Slow-dripped Café Du Monde coffee with Longevity Brand sweetened condensed milk served over ice. Strong, not too sweet – very good.
It’s a small place with takeout only – order at the window and they’ll call your name.

Outdoor dinner in Hanoi “last year”: beef jerky and green papaya salad (đu đu bò khô), chewy tapioca dumplings (bánh bột lọc), and more fried fermented pork (nem chua rán). I loved the textures of this meal — especially the crispy green papaya with crushed peanuts and chewy beef jerky, and the sticky, stretchy, mochi-like tapioca dumplings filled with boiled shrimp… yum.
