48. Baking therapy on a budget Ft. Genshin Characters: Ninnguang - Zucchini Bread
Hello, Every birdy. Today we are making a staple breakfast/Dessert, at least in my family. There are many different recipes for zucchini bread. I usually make the Betty Crocker recipe that my mom has made for years.
The character in question for this recipe is Ningguang (Ning-gwang). She is the head of government personnel in Liyue. She says that her favorite food is something like soup or stew. I know nothing like this bread. But then she also states that she likes simple staple foods. So I was racking my brain trying to figure out what a staple dessert would be for our family. And I figured it was either going to be brownies or zucchini bread.
This recipe comes from one of my cookbook from my collection. The recipe will be in the description down below. Feel free to check it out for yourself.
You will need:
3 eggs
1 cup oil
2 ½ cups zucchii that has been grated
3 teaspons vanilla
1 ½ cups sugar
3 cups flour
3 teaspoons cinnamon
½ teaspoon baking powder
½ teaspoon nutmeg
¼ teaspoon cloves
½ cup chopped walnuts (optional)
½ cup chocolate chips, also optional but also very good
Once you get all of your ingredients together you are going to preheat your oven to 350.
Next, you will want to beat your eggs until they are foamy. This takes about 1-2 minutes.
Add the oil, sugar, and grated zucchini to your egg mixture.
In a small bowl, you are going to sift all the dry ingredients together and then mix together in small batches to the egg zucchini batter.
Once the batter is just combined, pour it into two greased and floured loaf pans.
Bake them for 45 to 50 minutes or until the bread is firm.
This recipe was very easy to understand, and not complicated at all. And everyone was telling me that this was the recipe that they want me to use for a while. Because it tasted very good. It definitely wasn’t the fact that this bread had chocolate chips in it.

"Mom's Zucchini Bread" - Janine: Recipe via A Taste of Hope -A community cookbook to Benefit the Extreme Hope Project, Rochester, New york
Ingredients
3 Eggs
1 cup oil
2 1/2 cups zucchini grated
3 teaspons vanilla
1 1/2 cups sugar
3 cups flour
1 teaspon baking soda
3 teaspoons cinnamon
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
I added 1/4 teaspoon of cloves because zucchini bread needs cloves
1/2 cup chopped walnuts
1/2 cup chocolate chips
Preheat oven to 350 degrees. Beat eggs until foamy. Add oil, sugar, and grated zucchini. Sift all dry ingredients together. Then mix small amounts at a time to egg the zucchini batter. Pour into two greased and flour loaf pans. Bake for 45 to 50 minutes or until firm.
