Naati Style Mutton Biryani Recipe | Pit Stop for Mutton Biryani in Bangalore
Naati Style Mutton Biryani Recipe | Pit Stop for Mutton Biryani in Bangalore
As any true-blue foodie will tell you, the only ‘true’ biryani out there is mutton biryani. All other types of biryani pale in comparison. Chicken, vegetarian biryani, fish biryani - none can compare to the taste of juicy chunks of lamb nestled in fluffy spiced biryani rice cooked to perfection. Here we bring you the best mutton biryani recipe we found so that you can bring the goodness of this tasty dish to the plates of your loved ones, right at home!
Mutton biryani needs no introduction. It is a careful balance of wonderful flavours and some expert cooking in order to prepare a meal that transcends ordinary dishes. It is the ultimate love letter for foodies, coming straight from the chef to the heart of the food lovers, right through the stomach. We envisage that you, too, have grown fond of mutton biryani and are perpetually on the lookout for a suitable location in Bangalore that makes it best. If all of this is true for you, you have come to the right place. Allow us as we lead you by the hand, as it were, to discover the best places to devour mutton biryani in Bangalore and how to prepare it at home.
The Sights and Flavours of Mutton Biryani in India
There are admittedly far too many different varieties of biryani that anyone has dared to measure. Or even sample. Each part of India has a different type of biryani to boast of, with different methods of preparation so that the end result is different depending on the region.
West Bengal enjoys its biryani with potatoes in it, simply for the love of having a vegetable available with the meal. Kashmiris will liberally use dry fruit on their biryanis. Further south of the country you have Hyderabad making their biryani meals so spicy that the person eating has to keep some yogurt based raita at hand. Chettinad biryani is also lip-smacking as it uses a variety of spices to turn out a dish that is fit for the royals.
Come down to Karnataka and we have our very own naati style biryani that is served on a banana leaf and makes our mouths water with the fresh flavours. If you haven’t tried at least one of these different types of mutton biryanis, there is certainly a lot we need to tell you about! Thankfully our food experts got on the job and came up with this list of places to find the best mutton biryanis in Bangalore!
Best Mutton Biryanis in Bangalore
If you always had trouble finding the perfect place to pick good mutton biryani, here is the perfect list to start you off on your food journey!
New Prashanth Hotels
Having a biryani in a naati style restaurant is an experience that everyone should have. And the naati style mutton biryani that is served at New Prashanth Hotels is one of the best in the city. The mutton biryani prepared here is delectable, prepared in a style that is reminiscent of how food is prepared in the villages of Karnataka (rustic to Mandya/ Mysore style). As a result, only the freshest and simplest of masalas are used.. Which is precisely why we are now going to share with you a recipe for naati style mutton biryani! (Keep reading and you will find the golden recipe to prepare a naati style mutton biryani).
Tumblr media
Ambur Star Biryani
Ambur is a place in Tamil Nadu that has made a name for itself thanks to its Star Biryani brand. This short grained rice preparation originated from the Nawabs of Arcot and its history dates back to 1890! Ambur Star Biryani has preserved the original recipe well and you can tell by the taste that is always the same in every authentic outlet of theirs throughout the country. The best part about the Ambur Star Biryani’s mutton biryani is the brinjal side dish that it is served with.
Meghana Foods
Andhra style biryani is a marvel. If you haven’t been fortunate to travel to this state to try their biryani, you must make a visit to Meghana Foods to try out the mutton biryani there. The fiery spices used in preparing this type of biryani will keep your eyes and mouth watering but it is worth the initiative, we promise! The biryani is made from long grained basmati rice, giving it an aromatic fragrance that makes your stomach cry for it even before the waiter arrives at your table.
Mani’s Dum Biryani
If you can do only one thing in life, you should do it well. That appears to be the motto that Mani’s Dum Biryani lives by. Here is a biryani joint that serves nothing but biryani on its menu. The mutton biryani here is out of this world, so much so that it is sold in plates and family packs as well. Their dum biryanis are so popular that this hotel never even had to advertise their biryanis. The flavours spoke for themselves!
Thalassery Restaurant
For the finest tasting mutton biryani from Kerala, we encourage you to head to Thalassery Restaurant. The biryani here is more white than yellow and packed with fewer spices. The taste however, is unparalleled. Liberally doused with ghee, this fried onion covered preparation is layered with rice and meat so that you have a lovely masala filled centre to your biryani meal.
How to make Naati Style Mutton biryani just like New Prashanth Hotels
This recipe will tell you how to prepare naati style mutton biryani that is the closest match to the New Prashanth Hotels style of mutton biryani that we could find. You can choose to serve the biryani on a banana leaf or even plates made of the leaf material for added authenticity!
Ready in 55 minutes
Serves 4 people
Calories not to be counted!
Ingredients For the Biryani Masala:
2 medium sized onions, sliced
6 - 8 green chillies
Mint leaves
Coriander leaves
2 tablespoons of ginger garlic paste
2 - 3 strands of javitri spice, also known as mace
5 black peppercorn
2 sticks of cinnamon, one inch each
3 cloves
3 pods of cardamom
2 tablespoons of oil
1 tablespoon of ghee
Ingredients For the Mutton Marinade:
½ kg mutton,
1 teaspoon red chilli powder
½ teaspoon turmeric powder
½ cup of curd
1 teaspoon ginger garlic paste
Salt to taste
For the biryani rice:
2 cups jeeraga samba rice
2 tablespoons of cooking oil
2 tablespoons of ghee
2 cloves
½ inch cinnamon stick
2 cardamom pods
1 bayleaf
1 tablespoon kasurimethi
Lime juice, prepared from a single lime
Salt to taste
Preparation
The preparation time is about 30 minutes, while the cooking of the biryani takes about 20 minutes.
Begin with the marinade
Marinating the lamb helps to flavour the meat even before the cooking process so that the meat absorbs the masala. It also helps to break down the toughness of the meat, making it easier to cook.
Wash the lamb well with several rinses of water. Cut the lamb into cubes, making each piece medium sized.
Choose a large deep vessel that you can use to mix together the various spices and lamb. Into this, add the masalas listed.
Mix the ingredients together well, and ensure that each piece of meat is evenly coated with the marinade.
Leave the marinade to rest for 30 minutes at room temperature, or in the fridge.
Prepare the biryani masala
Naati style mutton biryani is prepared with a characteristic green biryani masala which gives the biryani its unique flavour and look.
Heat some oil and ghee in a vessel and then add the spices listed in the biryani masala section of the ingredients to this.
Next, add the sliced onions and fry well until the onions lose their colour.
Finally add the mint leaves and coriander leaves to this.
Remove from flame and allow the fried preparation to cool.
Place the cooled ingredients in a mixie jar and blend it well to a fine paste. You can add some water at this stage so that it blends well. Keep this masala aside as it will be used in your biryani preparation.
Prepare the biryani!
Naati style mutton biryani is traditionally prepared in clay pots, roasted over hot coals for hours together. Given our modern culture, you can use a pressure cooker for this preparation.
Take a pressure cooker and place it on medium flame.
Add 2 tablespoons of cooking oil and heat.
Now, add in the meat that you have marinated. Fry the meat for about 10 minutes.
Next, add sufficient water to this. We added about 3 cups. Add salt to taste and then place the pressure cooker lid and seal it.
Give the meat about 5 to 6 whistles so that it cooks to perfection in the cooker.
After the meat is done cooking, you can take out the pieces and separate it from the meat stock, which we will use later in the biryani preparation.
Next, we will prepare the biryani rice. This recipe uses jeeraga samba rice, which is short grained special rice that looks like jeera and tastes wonderful. Soak the rice and keep aside for about 10 minutes.
Take a deep vessel and place on heat. To this, add the oil and ghee.
Next, add in the dry spices and fry them well.
It is now time to add in the green masala paste to this. You will know when this has cooked well as you will see the oil begin to separate from the masala.
Now, you can add in your cooked mutton pieces and mix well into the green paste.
You can add in the soaked rice to the vessel. Mix well.
Add in the kasurimethi at this point.
We will now take the mutton stock that was prepared from the cooking of the mutton. This will flavour the biryani rice.
You need to add three cups of the mutton stock for every 2 cups of rice.
Add in some salt according to your preference.
Next, add in the lime juice and mix well.
Seal the pressure cooker and allow for two whistles until the rice is cooked to perfection.
Your biryani is ready to be served!
Tips
Just as it is done in traditional naati style hotels, serve the biryani with onion and curd raita.
A boiled egg nestled within the biryani is a treasured part of an authentic mutton biryani. Boil an egg separately, peel the shell and then place as you are serving.
Serving the biryani on the banana leaf adds to the aroma of the biryani.
In Conclusion
When it comes to having the best mutton biryani in town, you have several options to choose from, especially given the sheer variety of biryanis that are out there. While we do not discriminate against the different types of biryani that are out there, we must confess that it is the naati style mutton biryani that won our hearts. Since we completely understand that you cannot eat naati style mutton biryani in a restaurant every day of the week, we have brought the recipe to you so you can enjoy it at home.
This home preparation of the naati style mutton biryani is best served with lots of love. Win yourself the admiration of your family and friends by preparing this delectable mutton biryani dish, right at home!
