Beyond Spanish Rice and Beans

A simple, but incredibly tasty spanish rice and beans recipe, with Beyond Sausage. 2.5 tbsp olive oil2 Beyond Sausage links (optional)1/4 cup chopped onion2 cups vegetable broth1.5 cups uncooked white rice1 cup salsa (with chunks)1 15 oz can black beans (drained and rinsed) Heat a large skillet to medium heat, add olive oil. After 1-2 minutes add chopped onion, and cook for 3-4 minutes.Add uncooked rice to onions and stir often. Once the rice barely starts to brown take the pan off the heat, and add vegetable broth and salsa.Stir well, and return to the stove on medium-low heat. Stir until rice starts to boil, reduce heat to low, cover and cook for about 18 minutes.While rice cooks, you can cook your sausages in a separate pan.After rice is finished remove it from the stove. Stir black beans into rice and cover. Let it rest for 5 minutes.Slice sausage and add it into the rice. Top it off with fresh cilantro and avocado if you wish! Very thankful that we can have a “traditional” thanksgiving dinner without harming or exploiting any animals. I made my signature stuffed pumpkin again this year, but used Beyond Sausage in the stuffing and OMG. SO GOOD! I also got the Tofurky ham which was really awesome! I didn’t have high hopes but shit if it didn’t taste just like ham! I also wrapped a Field Roast celebration roast in yuba “skin” a lá Miyoko Schinner’s Unturkey and basted it with her basting juice recipe and once again, it did not disappoint! The yuba skin is my FAVE! I also made a ton of mashed potatoes, gravy and bourbon-laced cranberry sauce from Thug Kitchen for a perfect, and way-too-filling feast! You can see some of the steps along the way as well as Jeff and Francis and Giuseppe resting up for dinner.
