When you do something out of love, you don’t count the cost. . . Mutton has become a prized possession with the rising prices of the meat. So I need to be picky and choosy on when to get some to satiate the cravings. Mutton Ghee Roast has always enticed me but never did I realise, I would cook something with the literary meaning. . . Last week I ordered some Lamb Chops and wanted to roast them (see minimum expectations). Keeping in mind I marinated the meat in salt, pepper, red chili paste and lemon juice for 24 hours. Next evening in a preheated oven, roasted the meat in Ghee on a baking dish. . . There it is, my version of Mutton Ghee Roast soft, tender and juicy!! . . #bongfoodie : How many places can you identify in the video? . . There is beauty in simplicity. . . The City of Joy is probably an epitome of that statement. After quite a few years staying away from home, I got a chance to be back. It may be the whiff of fresh breath, I am falling in love with the city. The city probably has nothing to boast about but the city thrives on its simplicity. . . The #Lockdown gave me a chance to introspect how #Kolkata has been stagnant over decades but yet it's beautiful. The glimpse of the history between every modern development talks a lot about the city. . . Probably in years to come, the #CityofJoy will remain the same. It would only be wise to say that Kolkata is a city which has a variety of culture, cuisines, religions and everyone coexist in a beauteous way. Spirit of India #UniteForIndia . . India is going through a transformation phase. Everytime there have been an uprising, India has got better and stronger. There are protests across the country and unknown forces are trying to break the ethos of India. There are politics being done in the name of religion. . . It's sad to see that on one side there are abuses being hurled on the country and on the other side the Indian soldiers are trying to guard the country bearing the most stringent weather conditions. As I was traveling across Lucknow, I was near the Imambara and was surprised to see that Indian flag being used as a tool to protest to protest against the Constitution of India. . . The rights as an Indian National allows us to protest against the policies and practices. However, creating a divide of this beautiful country will not be accepted by anyone. You only live once, but if you do it right, once is enough. . . Making a breakfast has always the laziest activity for me... since I need to get up early. However, somedays, when you have Premium Pork chops from @calcutta_deli marinated in #oldmonkrum overnight, you can't sleep peaceful. My mom was surprised to see me awake on a Sunday morning at 7am only to find that I am minding my business (of cooking). . . The quality of the meat speaks for itself and turning each side on a pre-heated oven for 20 mins a side until it is soft and succulent. I know that's too much fat!! Then that's my way of life now, eat fat, loose fat. I am almost socially outcasted in my family for not eating rice & wheat (#justkidding). To balance the fat, I added some English cucumber on it's side. A painful 50 mins staring at it as it turned and got cooked was well worth the wait. . . Thankfully, I am able to try many things during this pandemic which were on my wishlist. different marination, different style of cooking, different cuisines. It's surprising whenever I feel that I am running out of ideas, something props up in my head. . .
