El Café de especialidad y su poder de encantamiento.
Mi amor por el café comenzó en mis tiempos de hacer la tesis. Salía de mi casa buscando un lugar donde refugiarme para intentar escribir sin distracciones, lo que intenté en la biblioteca de la universidad pero muchas veces me quedaba dormida. En ese entonces un compañero que regresaba del extranjero a presentar su examen profesional y su tesis, se daba alguna pausa para invitarme a tomar café; en ese tiempo yo solo tomaba el clásico café de cafetera al que a veces apenas se le alcanzaba a ver el color café. Bastó una taza para darme cuenta de la diferencia estratosférica de sabor que podemos encontrar entre un café comercial y un café de especialidad, iniciando por el sabor, pero bueno entremos en tema: ¿Qué es el café de especialidad? Según la página Infucionista “el café de especialidad es café de excelente calidad, el cual está calificado con 80 o más puntos en una escala de 100 otorgado por catadores profesionales; el café de especialidad se distingue por su aroma, sabor, personalidad, y ausencia de  defectos”. Según The Brunch Lady, también podemos encontrar definiciones un poco más complejas sobre el café de especialidad como la que se comparte en la página Jocutla: “La definición de café de especialidad inicia desde el origen del café, la selección y plantación de una variedad en particular cultivada en una región específica del mundo. El término café de especialidad se refiere a granos de café verde de alta calidad tostados a su máximo potencial de sabor por verdaderos artesanos para después ser preparados adecuadamente bajo estándares determinados”. ¿Cómo podemos saber que lo hace tan especial? Según la Perfect Daily Grind existen tres diferencias clave en el procesamiento del café de especialidad y el café comercial, que son: la recolección, la selección, y descascarado para una selección final.  La Recolección: al contrario del café comercial en el que se recolectan las cerezas de todos los colores: verdes, rojas y negras, para el café de especialidad sólo se recolectan cerezas rojas, en otra palabra se va por la calidad y no por la cantidad. (Sólo las mejores se van al despulpe). La Selección: luego del despulpe, secado y descascarado, los granos pasan por la segunda selección ya que hasta las cerezas más rojas pueden venir defectuosas; a esos granos que no pasan el control de calidad son descartados, los que conocemos como café comercial. Descascarado final: después del descascarado el café es seleccionado nuevamente, ya que el pergamino como también la pulpa puede esconder algunos defectos; para el café de especialidad este proceso se realiza a mano, mientras que para el café comercial se realiza mediante una máquina ya que es más eficiente para los volúmenes que producen exportación/importación. Aunque el control de calidad continúa hasta que se sirve en una taza, el proceso que se realiza en la finca de la localidad productora es clave para el sabor del café de especialidad. El café de especialidad no sólo se trata de sabor, sino que detrás de él existe un trabajo exhaustivo por cada lote desde el trabajo de cosecha. La atención que se presta durante todo el procesamiento de cada micro lote, hacen también la diferencia en el sabor de cada taza. Ahora ya sabes un poco más de por qué siempre queremos volver a ese lugar donde fuimos amados, digo, a ese lugar donde conseguimos nuestra primera taza de café de especialidad. Gaby C.
