National Cabbage Day
Beyond the popularity of the Cabbage Patch Dolls from the 1980s and beyond, cabbage sometimes doesn’t get as much honor as it deserves. National Cabbage Day is here to change that story!
History of National Cabbage Day
Dating back at least 6000 years, cabbage is a vegetable that has origins in Asia and the Mediterranean, and acts as a staple for foods from many different cultures. Easy to grow and with many varieties, cabbage offers a hearty option for food storage over the winter time, especially in root cellars, which is probably why it can be well utilized in places that are cold and dark.
Cabbage comes in a few varieties, including green, purple, red and Napa cabbage. Though it looks a lot like lettuce, cabbage is not actually related to lettuce at all. Part of the cruciferae family, cabbage is a cousin to other vegetables, including broccoli, cauliflower and the delightful brussel sprout, which can obviously be celebrated on its own day: Eat Brussel Sprouts Day!
National Cabbage Day was founded to pay special attention to this vegetable that is especially great when enjoyed during the winter time. Perhaps that’s why the day was chosen for this month!

With the use of a flax "egg", these zucchini cakes are plant-based and become suitable for freezing. Flax eggs are a mixture of flaxseed meal (ground flaxseeds) and hot water. The flaxseed meal absorbs the water and becomes gelatinous, similar to an egg white. These are a great vegan substitute when you don't want to use a chicken egg in a recipe.

To make the Zucchini-Flax Cakes, 
Makes 14 cakes
4 cups zucchini, grated + 1 tsp sea salt and excess water squeezed out 1 cup chickpea flour 1/2 cup ground flaxseeds + 1 1/4 cup boiling water 2 green onions, thinly sliced
2 tsp baking powder 2 tsp ground cumin 2 tsp chili powder 1 tsp salt 1/2 tsp black pepper 1/2 cup olive oil for pan frying
Add all of the ingredients to a bowl and stir to combine. In a pan over medium-high heat, drizzle a small amount of olive oil, and cook pancakes in 1/4-cup-scoop portions patted down into a pancake shape. Once the pancake is golden brown on one side, flip over and continue to cook until the second side is golden brown as well. Suitable to freeze.

Asian Meatball Ingredients Binder: A large egg and panko breadcrumbs bind the meat together so it doesn’t fall apart. Flavor: Minced garlic, grated fresh ginger, scallion whites, and soy sauce make these Asian meatballs taste amazing. Ground Turkey: Buy 93% lean ground turkey. Rice: Combine brown rice with sesame oil and scallion greens. Edamame: Heat two cups of shelled edamame. Toppings: Sesame seed, cilantro (optional), and sriracha (optional)
How to make Asian turkey meatballs.
Mix meatballs: beat an egg in a medium-sized bowl and stir with a fork. Add flour, garlic, chopped green onions and 2 tablespoons soy sauce and stir well. Mix the turkey with a fork and be careful not to mix too much. Roll the mixture into 16 meatballs, each about 1 ounce. Put them in the The baking pan is lined with parchment and set aside.
Air-fried raw meatballs: spray a lot of oil on empty Toshiba air fryer baskets. Put the meatballs evenly on one layer, cook at 400 degrees Fahrenheit for 8 to 10 minutes, and turn halfway.

I like eating these Asian turkey meatballs in a bowl with brown rice, edamame, and sriracha, but you can switch things up with whatever you have.
Rice: Substitute quinoa, vermicelli, or soba noodles with brown rice. Low-Carb Base: Use zucchini noodles, hearts of palm noodles, or cauliflower rice. Vegetables: Swap the edamame for bell pepper, cucumber, or avocado. Or try it with this Asian Cabbage Mango Slaw or Sesame Orange Broccoli. Sauce: If you don’t like sriracha and want more sauce for your bowl, drizzle on some hoisin or make this Asian Carrot Ginger Dressing.
