In honor of all the impending Super Bowl parties, here's my take on the famous Buffalo Chicken dip!

Buffalo Chicken Dip Recipe
2-3 cups shredded chicken, fully cooked
1 8oz pachage or cream cheese
1/2 cup of shredded cheese of choice (I used a mix of colby jack, sharp cheddar, and mexican)
1/2 cup hot sauce of choice (Frank's Red Hot is a popular choice; I used Crystal)
2/3 cup of blue cheese (ranch dressing can be substituted)
Salt and pepper to taste
Onion powder or flakes to taste
Mix together in an ungreased quart sized baking dish sized 9x9 to 10x10 or equivalent. Ceramic works best.
Bake in oven at 350 degrees for 20 minutes
Don't forget some tortilla chips!

1 teaspoon paprika (optional)
Your choice of sauce for tossing (barbecue, buffalo, honey garlic, etc.)
Instructions:
Preheat the oven to 425°F (220°C).
Dry the chicken wings thoroughly using paper towels. Removing excess moisture helps in achieving crispiness.
In a bowl, mix the baking powder, salt, pepper, garlic powder, and paprika (if using).
Place the dried chicken wings in a large mixing bowl. Sprinkle the baking powder and spice mixture over the wings. Toss the wings to ensure they are evenly coated with the mixture.
Line a baking sheet with aluminium foil or parchment paper for easy cleanup. Place a wire rack on top of the baking sheet to allow airflow around the wings while they cook.

Buffalo Chicken Dip
Total - $12.51
My personal favorite party appetizer to serve is this buffalo chicken dip. About 10 people can enjoy this dish, but it's easy to double the recipe if needed. It's always the first to be emptied and is the perfect level of spicey.
Ingredients:
1 12.5oz can of chicken - $3.34
1 block of cream cheese - $1.48
1/4 cup hot sauce - $1.48
1/4 cup ranch - $1.97
1 cup shredded cheese - $2.00
1 bag tortilla chips - $2.24
optional: green onion - $0.97
Steps:
Put your cream cheese out an hour before making the dip to soften. Preheat oven to 350 degrees. Shred your cheese.
In an 8x8 baking dish, mix cream cheese, 1/2 cup of your shredded cheese, hot sauce, ranch, and drained chicken.
Cover the top with the remaining 1/2 cup of shredded cheese and bake for 30-40 minutes.
Serve with tortilla chips.
Optional: Serve with green onion on top.

buffalo chicken dip prep time: 15 min | bake time: 30 min
this is one of my favorite recipes to make for any sort of holiday or gathering. (I was once even requested to bring this to a funeral after-party (reception? what is that called?) what an experience that was.) this recipe came from a friend of a friend, Kate - if you're reading this I still have the crumpled printout you gave me in 2016, and it's very similar to every other buffalo chicken dip recipe on the internet. but still very good!

ingredients
8 oz. cream cheese, cubed
2 cups cooked chicken (I love using a rotisserie chicken)
1 cup buffalo sauce (Frank's is the best)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
pink of salt and pepper
optional: pinch of red pepper flakes
1 cup blue cheese or ranch dressing (your preference)
2.5 cups cheddar cheese (1/2 cup for topping)
1 cup mozzarella cheese
instructions
Cube and allow cream cheese to soften for 30 minutes.
Preheat oven to 375F. Lightly spray your baking dish (I usually use a 9x9).
In a large bowl (or in a pan on the stove over medium heat), combine the buffalo sauce, spices, and blue/cheese dressing. Add the softened cream cheese; stir until smooth and combined.
Mix in the cheddar cheese, half the mozzarella, and chicken. (If working on the stove, turn off the burner and remove from heat before this step.)
Transfer to your baking dish and top with remaining cheddar and mozzarella cheese.
Bake for up to 30 minutes, uncovered, until the cheese is melted to your preferred state. Broil for a few minutes if you want your cheese topping with a bit more crisper.
Serve with tortilla chips, celery and carrots sticks, crackers, a spoon. Use your favorite dip maneuvering method!
Enjoy with a little extra blue cheese or ranch on the side!

1 garlic cloves, minced
Directions:
