Purely out of Self-Interest, are there any Sonic Games the Mun personally would love to see either get Remade, an HD Glowup, or in case of a Spinoff, given another new game?
Myself I'd love a third installment of Sonic Riders with Up-to-Date characters, if only for constant, playfully sarcastic comments about heights from Blaze.

Riders is definitely one of those ones where they need to like...actually kinda go back and redo the formula, not make it a gimmick. So I agree with ya there.
I do think that we need some glow ups for a lot of the handheld titles, especially stuff like the Rush series, which desperately needs a fourth instalment because that series of games was absolutely some of the most evil but some of the best bullshit you could get? Also Naganuma needs more work.
The Storybook series, as trash as Secret Rings is gameplay wise, and as gimmicky as Black Knight was, I adore (at least the latter) and really hate that they MADE A POLL for the next game and NEVER WENT ALONG with it.
I swear there's some art that actually shows some concepts for Sonic in stories like Journey to the West and they're just...GOD they're so good.
Like there's just a lot of games I'd love to see Sonic Team try to retackle. But at the same time I know that sometimes going back to retry an old formula isn't always gonna end well.

If Sonic Adventure 1 and 2 were remade only to be followed by a true successor (i.e., Adventure 3), how would you handle Shadow as a character? Personally, I've come up with an idea that he would become a ghost or spirit after his death in SA2 and act as a companion for Sonic, just like Shahra from Secret Rings, Chip from Unleashed, and Caliburn from Black Knight. Speaking of Secret Rings, appearance-wise, Shadow would wear rings on his wrists and anklets, like Darkspine Sonic. Thoughts?
I think the easiest answer there is that in the Sonic Adventure 2 remake you simply show in a post-credits scene that Shadow gets rescued from his plummet towards earth. Because that’s what we learn in the Shadow game, right? That Eggman swooped in and saved him during his re-entry?
So you just establish that in SA2. Shadow has his big moment of letting go, where his Super Energy runs out, and he sacrifices himself... you run the ending normally, with characters reflecting on who Shadow is, where they’re going next, etc. But when it gets to Eggman and Tails, you change their dialog to reflect Eggman has unfinished business he needs to take care of -- maybe even show him leaving before everybody else. You could play up the humor that maybe he’s afraid of being thrown in jail by Sonic, so he bails out early.
...only to show that the reason he bailed was so he could rescue Shadow.
If you pick up from a Sonic Adventure 3 that directly follows the events of the SA2 remake, I think I would ditch the amnesia cliche and have a Shadow that’s bitter about being allowed to live. He would become a character sort of like Alucard in the Castlevania games -- he can be summoned when he’s really needed, but otherwise he does not exist. Shadow feels shame over what he was brainwashed to do, and maybe secretly afraid of how easily he could be controlled again in the future. He can and will help, but he’d rather be left alone.
Maybe his arc for that game would be Sonic and friends trying to teach him to feel better about himself. Restore his confidence. Showing him that being part of their team means they can keep him in check (which brings with it its own unique narrative dynamic when Shadow doesn’t agree with what the team wants).
