Een Blair Athol, uit het gezegende jaar 1988, én van Signatory… Is dit een absolute topwhisky? Daar lijkt het wel op ja… De distilleerderij van Blair Athol, gelegen in Pitlochry, regio Highlands, is meer bekend voor hun onafhankelijke bottelingen dan voor de officiële… De whisky zelf wordt vooral in de blends van Bell’s en Johnny Walker gebruikt, maar ook hebben ze in de Flora&Fauna reeks 12 jarige botteling van Diageo.  De stokerij, die aanvankeiljk ‘Aldour’ heette (genoemd naar de Allt Dour rivier waar zijn water van kwam), werd in 1798 opgericht door John Stewerd en Robert Robertson. Na verschillende overnames en sluitingen was het pas in 1949 dat de draad weer werd opgepikt. Ditmaal door nieuwe eigenaars ‘Arthur Bell en zonen’. De distilleerderij werd helemaal herbouwd en vernieuwd, met in 1973 zelfs een serieuze uitbreiding als gevolg waarbij de productiecapaciteit verdubbeld werd. Wij concentreren ons vandaag op deze schitterende, 28 jarige botteling van onafhankelijk bottelaar Signatory Vintage. Het betreft een ‘wine treated butt’. Een benaming die niet geheel duidelijk is maar wel vaker door deze independent wordt gebruikt. Concreet gaat het over een whisky vat dat geïmpregneerd is met (sherry) wijn, in plaats van een vat dat eerder de gehele rijpingstijd (een bepaalde wijnsoort) heeft vastgehouden.  In elk geval komt deze botteling uit het jaar 1988, en onze ervaring leert ons dat distillaten van Blair Athol uit dat jaar top waren.
