My first time making ceviche, so easy and it’s yummy. It needs avocado though and mine wasn’t ripe yet, but I made it anyway. Still very delicious. I used Chilean sea bass that I bought at a fish market. I would definitely splurge on the fish for this recipe although you don’t need a lot depending on how many people you’re serving. Otherwise I used the ingredients listed in this recipe. I ate it with tortilla chips, yum!

I baked some Sablefish today to celebrate getting my taxes done and holy fuck???? It's got this really amazingly delicate and buttery texture???? Also I put a teriyaki glaze on it and it absorbed the flavor really well and it complimented the fish nicely.
Holy fuck I hope I get to cook Sablefish again that was so good.
