What is Chilli Chicken?
Chilli Chicken is a popular Indo-Chinese dish made with boneless chicken pieces that are battered and deep-fried until crispy. They are then tossed in a spicy and flavorful sauce made with ingredients such as dried red chillies, garlic, ginger, soy sauce, and vinegar. This dish is typically served as a main course or as an appetizer and is often paired with rice or noodles. The combination of tender, crispy chicken and the spicy and tangy sauce make this dish a favorite among spicy food lovers.
We worked in different parts of the world but what has always worked for me in terms of comfort food is chilli chicken. I have been eating and perfecting chilli chicken, home style, for years. Irrespective of all the fancy food that I cook in the kitchen, at the end of the day, all that comforts me is a warm bowl of chilli licked chicken pieces. I find the juicy fullness and the crispy edge very gratifying and fulfilling both in terms of taste and tuck-in. What works is the beautifully caramelised soya sauce, it brings in that winning edge for me.”
INGREDIENTS For dry batter
Oil
Boneless Chicken thighs: 100/150 gms
Rice flour 1tablespoon
Corn flour Itablespoon
All-purpose flour 2 tablespoon
Dark Soy: 20 ml
Salt
Pepper
Green capsicum
Yellow capsicum
Red bell pepper
Onion, diced
Minced garlic: 1 tablespoon
Minced ginger: 1 tablespoon
Spring onion 50 gms: for garnish
White vinegar 1 teaspoon
Corn flour 1 teaspoon
Dark soy sauce
Toasted sesame oil
1 tablespoon of chilli paste

METHOD
Mix chicken with rice, corn, and all-pur-pose flour and add salt and pepper. This becomes the coating for the chicken
Heat the oil for frying
At low temp, add chicken in slowly to fry
Take it out halfway
Then increase the heat and add the chicken back in, so that it gets a crunchy coating
Keep chicken aside on a napkin
Take a wok or a skillet on high flame
Add 2 tablespoons of oil
 Add minced garlic, ginger, chilli, spring onion whites
Saute for a minute until they are light brown
Add bell pepper and onions and Chilli paste
Cook for a couple of minutes on high flame until they are charred
Add chicken and toss
Immediately add white vinegar and dark soy sauce
Add a couple of spoons of water to corn flour and add it to the pan and keep stirring
Switch off the flame, add the sesame oil, garnish, and serve.

Vegetable Manchurian in gravy
When it comes to Chinese food, Indians have their own fusion of Indo-Chinese recipes. Manchurian is the most popular dish from this vivid menu to order with noodles or fried rice. Merely the talk of it salivates my mouth. It's basically vegetable balls in a Chinese gravy. If all your vegetables are chopped, it's quite easy to make.
Ingredients
Frying Oil - 2 cups
Cornflour - 3 tbs
All-purpose flour - 4 tbs
finely chopped cabbage - 2 cups
finely chopped carrots - 1/2 cup
Finely chopped bell peppers ( All three colors) - 1/2 cup
Finely chopped onion - 1 small
Finely chopped beans - 1/2 cup
Chopped scallions - 1/2 cup
Finely chopped ginger - 1 inch
Finely chopped garlic - 3 to 4 cloves
Black pepper - 1 tbs
Dark soy sauce - 1 tbs
Stir fry sauce or black bean sauce - 1 tbs
Ketchup - 1 tbs
Vinegar - 1 tbs
MSG - 1/2 tbs
Salt - 1 tbs
Chilli flakes - 1 tbs
Water - 1 cup
Recipe
Now that our vegetables are chopped, take a cup and add 1 tbs of bell peppers, scallions, beans, onions, and carrots. Also, add 1/2 tbs ginger and garlic. Mix well and Keep aside. This we'll use for the gravy later.
For Manchurian balls, take a large bowl and add chopped cabbage and the rest of the chopped vegetables. Add leftover ginger and garlic. Mix well. Now add 2 tbs cornflour, 3 tbs all-purpose flour, 1/2 tbs of salt, 1/2 tbs chili flakes, 1/2 tbs black pepper, a pinch of msg, and mix well. All the vegetables must be well coated. Add a splash of water to mix if you like. Now make small or medium size balls. Keep in the fridge for 15 minutes.
Take another bowl and make the slurry of 1 bs of all-purpose flour and water. Take a deep dish pan and heat two cups of oil. Dunk the Manchurian balls in the slurry and deep fry till golden brown. it should cook through. Take them out and rest them on a plate.
For the Gravy, Take a pan and heat 1 tbsp of oil. Now add the mixed vegetables which we kept aside in the beginning. fry for 30 seconds and add stir fry or black bean sauce, ketchup, Soy sauce, 1/2 tbs salt, 1/2 tbs chili flakes, black pepper, a pinch of msg, Vinegar, stir fry everything, and 1/2 tbs cornflour and 1 cup water. mix well. and bring to a boil. When this gravy gets thickened, add your Manchurian balls and serve hot with fried rice or noodles. I had it with Bokchoy fried rice. OUT OF HIS WORLD
