Here a few examples of cocoa beans we are assessing. Three varieties and the top right is a bean that has been partially cut with a machete. A machete is often used to open cocoa pods. The first variety is super clean. This is what we like to see, it makes our work much easier and it is a good sign that these beans have been well looked after. In the bottom left there are loads of broken beans, they’re very mouldy looking, not a good sign. On the bottom right it looks like the beans have been dragged through mud. They smelled of soil too, no idea what happened there, but not good to see. You might not say it tastes like a dark chocolate, this is due to the roasted peanuts that lighten up the flavour of the bar. This bar was fashioned after the favourite sandwich of Elvis Presley, a sandwich filled with banana, bacon and peanut butter. This is a vegan interpretation of course and hopefully you’ll find it a very delicious one!
