Here a few examples of cocoa beans we are assessing. Three varieties and the top right is a bean that has been partially cut with a machete. A machete is often used to open cocoa pods. The first variety is super clean. This is what we like to see, it makes our work much easier and it is a good sign that these beans have been well looked after. In the bottom left there are loads of broken beans, they’re very mouldy looking, not a good sign. On the bottom right it looks like the beans have been dragged through mud. They smelled of soil too, no idea what happened there, but not good to see. 68% dark chocolate, Marañón, Peru is back in stock! It’s a dark chocolate made with only cacao beans and sugar, so no added cacao butter. This means that is takes a bit longer for the chocolate to start melting and during the entire length the melt will be slower, which means that you’ll enjoy the chocolate for a longer time. This, in turn, will allow you to focus on the flavours in the chocolate more and you might find that the flavour will jump from grapefruit to honey to herbal notes, maybe even licorice or red fruits. Happy New Year! This is the second post that features 9 highlights. Our first post features new releases, this one features us, Iris & Bob, the two people behind Solkiki Chocolatemaker! It has been an extremely busy year for us. We made a lot of chocolate, more than we made in previous years. Lots of Limited Edition bars for our Exclusive subscription members. We’ve made more bonbons than we made before. We won a lot of awards, the International Chocolate Awards stood our for us with a few Golds and Great Taste. Especially our 64% Esmeraldas Ecuador won big and our 60% Brandy Nibs bar. We released So Woke, a cacao butter bar with coffee and we became a bit addicted to this one.
