🐇🐣🐰EASTER CHIA PUDDING 🐇 🐣🐰 First time making this, and won’t be the last! Finished the bowl real quick, as you can see from the last photo:) One of the easiest recipes ever. Here it is: Coconut Chia Pudding *1 1/2 cups coconut milk (with the coconut cream if you have it) *1/2 cup chia seeds *2 tbs. maple syrup (to taste) *2 tsp. vanilla extract Put all ingredients in mason jar, screw on lid and shake to mix. Let sit overnight or at least 6 hours in fridge. And it’s ready to eat!! That simple! I added warmed blueberries and mango (since we bought tons of frozen fruit for this COVID quarantine time) and toasted walnuts. Any additional nut, seed, fruit, or shredded coconut toppings would be delicious! Enjoy. Coconut Chia Pudding 
so keeping on the breakfast theme I can’t have yogurt! yes I know it is hard and stuff but guess what?  I am actually not missing it one bit! how you ask? well like I said in some past posts coconut ladies and gentlemen is MAGIC! I have discovered a gluten free, sugar free, dairy free delicious and luscious food.  
The coconut chia pudding can be eaten alone and it can also be combined to a granola or any other cereal of your choosing or fruit or all together, it is extremely versatile and yes healthy!
Coconut Chia Pudding
prep time 10 mins
total time 10 mins
Ingredients
1 can of coconut milk
1/4 cup of coconut sugar
1 teaspoon of vanilla
1 teaspoon of ground cardamom (this is totally optional, the first batch I did I used full cardamom and it was too much so I do recommend if you decide to use it to grind it and use it sparingly)
pinch of salt
1/2 cup of coconut water
4 tablespoons of chia seeds (6 tablespoons if you want really thick pudding)
mason jars 3 or 4
Instructions
Mix coconut milk 13.66 ounces, sugar, vanilla and cardamom salt and water and make sure it is mixed very well.
place 2 tablespoons of chia seeds in each of the jars (this is also optional for I prefer to mix my chia seeds into the mixture as a whole)
pour into jars evenly, seal tight and refrigerate over night.  
serve with fruit or granola and enjoy!
Pudín de Leche de coco y semillas de chan
hablando de opciones para el desayuno no puedo consumir yogurt ya que es un lácteo. Después de hacer un poco de mis investigaciones encontré esta delicia que es bastante fácil de hacer y ademas no contiene gluten, lácteos, azucares ni productos refinados así que es magia pura. Pueden comerlo solo o agregarlo a una granola hecha en casa o a frutas de cualquier manera su versatilidad permite tantas opciones que no cansa solo nos llena la panza y nos pone el corazón contento.
Tiempo de preparación 10 minutos
tiempo total 10 minutos
RECETA
1 lata de leche de coco
1/4 de taza de azúcar de coco
1 cucharada de esencia de vainilla
1 cucharada de cardamomo molido (la primera vez que lo hice no molí el cardamomo y quedo el sabor muy fuerte así que si recomiendo lo muelan)
1 pizca de sal
media taza de agua de coco
4 cucharadas de chan 
3 o 4 frascos
Instrucciones
mezclar todos los ingredientes con una batidora asegurarse que todos los ingredientes estén bien mezclados, verter en frascos y refrigerar por lo menos 4 horas o hasta que las semillas de chan estén grandes.  Luego servir con tu opción favorita!
