Notre histoire est celle de femmes et d’hommes qui, au fil du temps, ont façonné ce sol de l’Auxerrois, dans le nord de la Bourgogne viticole, où nos vignes prennent racine. Ce terroir à la fois dur et généreux, qui jouit depuis un temps immémorial d’une très grande réputation, nous a unis.

Labours, décavaillonnage, plantations, taille pendant l’hiver… les soixante-dix familles de vignerons sont toute l’année à la vigne pour faire en sorte que les raisins atteignent la plus belle expression et la plus belle maturité possibles. Au printemps et en été, ils rognent et essoumassent (en enlevant les bourgeons des vieux bois, afin de ne pas fatiguer inutilement la vigne). À la fin de l’été, ils vendangent manuellement et “portent” leurs raisins aux caves Bailly Lapierre, cette entreprise qu’ils ont créée ensemble.

Héritiers d’une longue tradition vigneronne, ils se sont unis en 1972 et ont alors, avec d’autres, porté le projet de création d’une Appellation d’Origine Contrôlée (AOC) “Crémant de Bourgogne”. Le décret fut publié en octobre 1975, couronnant ainsi leurs efforts. La première appellation Crémant (avec celle des vignerons de la Loire) était née en France.

Depuis, ils n’ont de cesse de progresser dans leur métier, à la vigne et dans le chai, pour élaborer des vins de plus en plus purs, équilibrés, ciselés… qui soient la noble expression de ce terroir si original.

Our story is that of women and men who, over time, have shaped the soil of Auxerrois, in the north of wine-growing Burgundy, where our vines take root. This terroir, both hard and generous, which has enjoyed a great reputation since time immemorial, has united us.

Plowing, stripping, planting, pruning during the winter… the seventy families of winegrowers are in the vineyard all year round to ensure that the grapes reach the best possible expression and maturity. In spring and summer, they trim and stump (removing buds from old wood, so as not to unnecessarily strain the vine). At the end of the summer, they harvest manually and “carry” their grapes to the Bailly Lapierre cellars, this company they created together.

Aratura, diraspatura, impianto, potatura invernale… le settanta famiglie di viticoltori sono in vigna tutto l'anno per far sì che le uve raggiungano la migliore espressione e maturità possibile. In primavera e in estate si tagliano e ceppano (rimuovendo i germogli dal legno vecchio, in modo da non affaticare inutilmente la vite). Alla fine dell'estate, vendemmiano manualmente e “portano” le loro uve alle cantine Bailly Lapierre, questa azienda che hanno creato insieme.

Eredi di una lunga tradizione enologica, si sono uniti nel 1972 e poi, con altri, hanno portato avanti il progetto di creare una Denominazione d'Origine Controllata (AOC) “Crémant de Bourgogne”. Il decreto fu pubblicato nell'ottobre 1975, coronando così il loro impegno. La prima denominazione Crémant (con quella dei viticoltori della Loira) nasce in Francia.

Given the nature of my work and the fine wine folk I am so lucky to rub elbows with on the regular, I taste thousands of wines each year. These are the ones I remember most fondly: the way they opened the world, the way they centred experience, and all the kind souls that shared them with me.
I will remember 2023 as the year I really shed my ignorance and fell in love with Bordeaux and a year in which my partner and I continued our love affair with Jura Chards and Loire Chenins and entered into a new obsession with the great dessert wines of the world.

Montbéliard accueille la première édition des Journées Gourmandes, les samedi 16 et dimanche 17 septembre 2023. Le choix des dates s’est porté sur le week-end dédié aux Journées du Patrimoine, l’occasion d’allier la visite du riche patrimoine historique, patrimonial de la cité des Princes et de savourer les spécialités culinaires de Montbéliard et de son pays.
1ère édition des Journées gourmandes
L’évènement est organisé par la Ville de Montbéliard, RCMA (Restaurateurs et Cafetiers de Montbéliard et son Agglomération), le collectif MAni’fest et l’Office de tourisme du pays de Montbéliard. A travers cette collaboration inédite, cette nouvelle manifestation a pour objectif de valoriser le savoir-faire local en matière de gastronomie, en présence de producteurs (saucisse de Montbéliard, cancoillotte, comté…), de restaurateurs de l’agglomération et acteurs des métiers de bouche. Les journées gourmandes sont organisées sur deux jours avec un marché du terroir, des ateliers culinaires, des animations musicales et une marche gourmande…
Marché du terroir : samedi de 11h00 à 22h00 et dimanche de 11h00 à 20h00, rue du Château
Le marché accueille une quinzaine de producteurs locaux et leurs spécialités (saucisse de Montbéliard, escargots, cancoillotte, comté, gruyère, miel, chocolats, glaces artisanales, pains et gâteaux, bière, vins et crémant de Franche-Comté…). Avec la participation des Compagnons du Boitchu, l’association A2M, la Maison Jacot Billey, la Confrérie des Escargotiers, Piguet Gastronomie, Gastronomie et Promotion des Produits de Bourgogne Franche- Comté, Gruyère France IGP, Cancoillotte IGP, les Miels de Franche-Comté, la Chocolaterie Ragot, la Maison Debrie, le GAEC Cretin, la Boulangerie du Coinot, l’association Les Belles Comtoises, les Restaurateurs et Cafetiers de Montbéliard et de son Agglomération, la Brasserie Nimbus, le Divin, la Fromagerie de Montbéliard, l’association Signé Montbé et Pays de Montbéliard Tourisme.

Des démonstrations et des animations ponctueront les deux journées autour du miel, du chocolat, un quizz sur la saucisse de Montbéliard, des intronisations avec la Confrérie des escargotiers et la Confrérie du Boitchu... Il y aura également deux soirées musicales avec Pouti Reinhardt Trio (jazz manouche), Boloföli (percussions et danse), DJ KLN (DJ set électro). Soirées organisées avec buvette par les Restaurateurs et Cafetiers de Montbéliard et de son Agglomération.

Marche gourmande ; dimanche départs de 10h00 à 12h30
Cette première marche gourmande est organisée par RCMA (Restaurateurs et Cafetiers de Montbéliard et son Agglomération) avec le soutien de la Ville de Montbéliard, l’Office de Tourisme du Pays de Montbéliard et le collectif MAnifest. Elle vise à faire découvrir la ville autrement en liant pour une journée patrimoine, gastronomie et sport... La marche gourmande traversera la ville et offrira 6 étapes de dégustations aux participants : apéritifs, entrée froide, entrée chaude, plat, fromage et dessert, avec boissons. Départ de la Roselière de 10h00 à 12h30 avec un départ toutes les 15 minutes. Etape finale sur le site du château des ducs de Wurtemberg.

En bouche, on a un Crémant équilibré, aromatique, avec des bulles fines et vives. Sur des arômes de poire, pomme verte, pêche jaune. Une bonne longueur en bouche avec une finale sur des notes d'agrumes (citron, pomelo) qui amène avec merveille une touche de fraîcheur aux papilles et de prune jaune.

J'ai vraiment beaucoup aimé ce crémant de Bourgogne qui allie fruité, finesse en bouche. Un excellent rapport qualité-prix plaisir. En espérant que cette cuvée portera chance à nos bleus dans ce Mondial. Bon match à tous.

Al palato abbiamo un Crémant equilibrato, aromatico, con bollicine fini e vivaci. Con aromi di pera, mela verde, pesca gialla. Buona persistenza al palato con un finale di note di agrumi (limone, pomelo) che apportano meravigliosamente un tocco di freschezza alle papille gustative e di prugna gialla.
