On the list of my least favorite vegetables is eggplant. However, I have discover not all eggplants are equal. Day 202 of our whole food plant based experience. Today I prepared Japanese eggplant in a plum wine sauce. OMG! It was excellent! I’m going to experiment with different sauces like fermented black beans, fried tofu, sweet chili etc. served with jasmine rice....off the chain. There is a debate as to whether Eggplants can be male or female. The female is said to have more seeds than the male and be a little bitter. The male is leaner and sweeter. Some call it a myth and others swear by it. Day 171 of our whole food plant based eating experience. Making a dairy free yogurt in my instant pot. I’m 😍😍😍😍😍in love. I have had total success making soy Greek style yogurt. So, I’m curious to see what other non dairy seed and nut mills will produce a thick creamy Greek style yogurt, without adding a thickening agent. The process of getting a Greek style yogurt will take approximately 36 hours! Today I mixed coconut milk and soy milk together; equal parts. This time I’m going to sweeten the yogurt with 2 tbsp of maple syrup. 🤷🏽‍♀️🤷🏽‍♀️🤷🏽‍♀️ we’ll see what happens. One more day and it will be 45 days since we started our whole food plant based experience. What an amazing journey it has been. I’ve finally found my stride. 💃🏽💃🏽💃🏽💃🏽💃🏽 What I mean by this is, I can create a dish in my imagination and then prepare it. The end result has the smell, taste, texture, look and sound of whats inside my head. It is perfect. It’s exactly what I imagined it to be. Doing wfpb had taken me a minute to get here. Typically, I can eat something at a restaurant and come home and recreate it. Or create a new recipe. Going whole food plant based required that I adjust my palate. I did and everything has fallen into place. Sad 😞 😞😞 although this taste really good...it came out frick’n wrong. 🤦🏽‍♀️🤦🏽‍♀️I used a different brand of super firm tofu and it turned into crumbles. Dinner day 59 of our 45 day whole food plant based experience. Tofu makhani. Aka: buttered tofu...although there is no butter or cream in this recipe. You can use vegan butter, but I don’t like the taste. Cashews simmered with tomatoes onions and herbs and spices, is then blended into a smooth creamy sauce.
