Working from home sometimes, I tend to plan my lunches well in advance, like a day or two and I love making things that require some form of process/or assembly, are relatively easy but have a great impact. Scotch eggs are such a feat. I had a surplus of turkey mince in the fridge and a few eggs and decided today was as good a day as any for the turkey scotch egg. You can use any mince you like and spice however you see fit, but below is my turkey mince scotch egg recipe. ❤ hope you enjoy
however many eggs you want to do – I made 3
about 200g turkey mince (as a rule of thumb I used about 60-70g per egg, maybe a little indulgent but hey! So dependant on how many eggs you want to cook just adjust)
teaspoon cumin
teaspoon coriander
salt and pepper to taste
juice of half a lemon
breadcrumbs – either home made or shop bought, up to you – on a plate
flour – I used plain flour, if you want to make this free from, I recommend a mix of maize flour & rice flour – onto a plate
1 egg whisked gently in a bowl
vegetable oil – either in a home fryer or in a pan, you need to watch this like a hawk and be responsible 🙂
Begin by putting your eggs into a pan of cold water & bringing them all to the boil. Once at the boil, keep on there for 4 minutes. Remove & pop into a bowl of iced water to cool.
In the meantime prepare your mince, mix by hand the spices; the mince and the lemon juice and split into 3 parts. Flatten your mince out by hand till it’s about 1cm in depth, don’t be too precise or caught up in this.
Once your eggs are cooled, remove the shells gently and roll the eggs in some flour.

Then place into the centre of your flattened patty of mince and wrap the mince gently around the egg and seal.
Use one hand to then dip the whole thing into some flour; followed by the whisked egg followed by the breadcrumbs. Repeat in the egg & the breadcrumbs for extra coverage.
Bring your oil to the boil, about 150 – 160, it should be swirling. Please watch this carefully if you’re using a pan at home. Too hot and it will burn the crumb and seal it, and too cold you wont cook your mince! So just watch & recommend you use a fryer and set your temp. 🙂 You want enough oil to cover the scotch eggs. It will sizzle away, and when its gone golden brown, predominantly after about 4 minutes it’s ready. Remove and cool. If you are worried the mince isn’t cooked, just pop them into the oven for a few minutes to finish off.
I served mine cold, for lunch with a rocket & sorrel salad, a balsamic and honey reduction & my favourite tangy carrot and red cabbage slaw.
