My hopefully lukewarm take on the final of Good Omens season 2 is that I don't think for one second that Aziraphale wanted Crowley to be an angel again. It's definitely what Crowley heard, and there's definitely an element of 'but you're not like them' in the way Aziraphale thinks of Crowley

But I don't think he wants to turn Crowley back into the angel he was, because then Crowley wouldn't be the demon he loves anymore
