Potato chips
I thought, I have potatoes, I can make chips. No. Ingredients: 1 potato Cold water from the tap 2 tablespoons of Salt 3 cups of vegetable oil First, I did a great job cutting the potato in to seriously thin slices. It took a really long time because I don't have a mandolin and cutting millimeterish sized slices of an oval x oval shaped shape by hand is a tricky game. Once they were sliced, I soaked them in cold water for a bit to get the starch out. I changed the water, added the salt and let them soak for a bit. The recipe I was looking at told me to soak them for 30 minutes, but I figured I would just salt them later, so I drained the potato slices after about 5 minutes. I cannot attest to the benefit of any of this soaking. While they were soaking, I had put the oil into a pot and was heating it on high. The recipe said to get the oil up to 375°, but without a proper thermometer, I just figured all-the-way-hot would be good. I drained the potato slices and patted a few test slices dry. I should mention that I previously had a lid on the pot of oil and when I removed it, way more smoke than I would ever think could fit into the pot with a lid on it came out of it. Figuring that was normal, I tossed the chips into the pot and went back to drying the other chips, preparing them for the oil. I turned back to my chips in the oil about 30 seconds later, and the first thing I noticed was the billowing cloud of smoke blasting out of the top of the pot. I fished the chips out with a slotted spoon and turned the heat to low. The smoke from the pot did not subside at all. I turned the heat off and took the pot outside. It was still pumping out smoke. When I went back inside, I realized how smokey the house was. It was hard to see or breath. I opened all of the windows and turned on the ceiling fan. I now have 3 very burnt and about 70 very wet and salty potato slices. If you are going to try this recipe, I would advise you to not set your oil temp to all-the-way-hot.
