Yeraz had been tailing the Templar captain Robert Gadling for the better part of two weeks, and had almost nothing to show for it. All they had learned was that he was a formidable soldier, he cared enough about his horse to name it (who names a horse Alexios anyway), and he snored. He appeared to be an exemplary Templar in his commitment to order- his daily routine hardly varied. 
He was almost too perfect a Templar. 
On this particular day, they had followed him to the market around midday. Perched on a piece of scaffolding that spanned two buildings, they watched him peruse the stalls. A brow quirked when they noticed a break in his routine: rather than the bread and dried meats he usually purchased for his midday meal, he instead went two stalls over and bought some dried fruit and a small wedge of cheese. 
One small break in routine was not enough to constitute him a threat. Yeraz continued to watch. 
He perched on the side of the central fountain to eat his lunch, offering a small child the last of his cheese with a kind smile. That was another thing- he was almost impossibly kind. Most of his brethren wouldn’t have looked twice at a starving child. Yeraz’s confusion grew, and they wondered (not for the first time) what about this man had piqued Morhepus’ interest. 
Yeraz grumbled and inched across the scaffolding to the nearest rooftop when Gadling moved to leave. They eased themselves down a nearby ladder, watching him out of the corner of their eye. They melded into the bustling crowd, sharp eyes keeping his tall frame in view. Left, then right, then another right- that was his usual route from the market back to the barracks, where he would train for most of the afternoon.   
Gadling paused at the first intersection. He looked both ways, then turned right. 
Yeraz frowned, two breaks in routine in as many hours. He couldn’t know he was being tailed, could he? Yeraz was a Master Assassin of the Dreaming; their targets never knew they were being tailed until it was too late. 
But still, their orders remained. Moving on silent feet, they continued to follow him, gently pushing past civilians going about their business. He was moving faster now, a hand on the hilt of his sword to keep it from swinging with his purposeful strides. Yeraz’s frown grew deeper as they matched his pace. 
The crowds grew thinner and the alleys narrowed as they drew further away from the market. Yeraz couldn’t shake the feeling Gadling knew he was being followed; he was even whistling to himself. And then, the impossible happened: Yeraz lost him. 
One minute he was maybe a hundred feet away, the next he was gone. They swore under their breath, their stomach clenching. How could they have lost him? 
All it took was one moment of lost awareness, one moment of panic and uncertainty, for the hunter to become the hunted. 
He was quick, and knew how to take full advantage of an opening when presented. Before they could do anything, Yeraz was shoved into the building at their back, their head cracking against the stone. Gadling’s forearm was nearly crushing their throat, while his other hand held a dagger, the point beneath their chin- Yeraz was almost going cross-eyed trying to keep it in view. 
One of Gadling’s legs wedged itself between theirs, using his whole body to keep them down. “Who are you,” he hissed, “You’ve been tailing me for over ten days now, why?” Yeraz grunted and squirmed but didn’t answer. Heat really shouldn’t be coiling in their belly from this man looming over them, wisps of dark hair coming out of their tie, the rings of his mail leaving indents in their flesh, the point of his dagger just barely breaking the skin. 
The brush of cold metal sent shivers down their spine despite the heat of the sun. Their blood rushed and burned at the thought that this man just might prove a challenge- so few stood a chance against Yeraz in a fight, it was exhilarating to meet someone who could not only match them, but gain the upper hand. 
He flipped the dagger so the edge rested across their neck, just above his forearm. He pressed harder, the edge splitting the skin just enough to release a trickle of blood. And oh if that teasing display of his skill with a blade didn’t make their knees weak. “Who. Are. You,” he demanded again in a low growl. His eyes were positively blazing as he studied his captive.
“No one,” Yeraz choked with a defiant smirk, “I am but a blade in the crowd.” Gadling’s features turned hard and cold. 
“Assassin.” The word was hissed like a swear but with an undercurrent of awe and fascination. His eyes darted over their features, committing them to memory. He gave them another little shove. “That doesn’t explain why you’ve been following me.” 
“Doesn’t it?” Yeraz quipped breathlessly, “My master has taken an interest in you. Make of that what you will.” Gadling paused for a moment in thought before loosening his hold and sheathing his dagger. 
“Go,” he growled, “Tell your master what you know. But know this: if I see you tailing me again, it won’t end well for you.”
“Oh trust me,” Yeraz replied with a smirk as they adjusted their robes and gave Gadling a once over, committing the sight to memory for later contemplation. “You won’t see me.” With that, they gracefully scrambled up the wall they had been pinned against and darted away across the rooftops, leaving a confusedly aroused knight in their wake.

I organize my hotbar differently depending on what I'm doing, it varies wildly and I'm not super consistent about it but there's usually a reason why I lay things out.
Generally though my most important heuristic is I tend to try to maximize flexible slots and inventory space for building materials and shulker boxes/crates over having lots of regular tools available to me. I keep those in a toolbox of some kind be it an ender chest box or a backpack or a literal toolbox.
For starters even in vanilla I play with tweakeroo so I try to only have one hotbar slot dedicated to tools. Even with that though I generally try to put away extra tools into a shulker box or a backpack.
Weapons come off my hotbar if I'm building something. Food typically goes in offhand. In modded I don't carry torches either because I usually have some sort of alternative way to spawnproof an area that doesn't rely on lighting. Like claimed chunks, megatorch, spawnproof beacon radius, peaceful surface, or no hostiles around campfires. I also usually play with creeper explosions off so sometimes I'll just tolerate having to fish out a weapon whenever a mob shows up, which is pretty infrequent if you spam beds around your workspace and keep extra on you and work on the surface.
What exactly does make it onto my hotbar really depends on the kind of infrastructure I have or the tools in my modpack. If I have some way to increase fist break speed for example tools might come off my hotbar entirely for some tasks. Slot 1 might become a mobility tool, or I might just go full creative hotbar. I also usually will keep some sort of access to storage, be it a wireless terminal or a stack of ender chests.
In modded whatever storage I can bind a hotkey to also usually becomes an extension of my hotbar. How I organize it depends on how it works though. Most common though is definitely a backpack bound to mouse4 that I keep absolutely *loaded* with any tool I could possibly need, by far my favorite way to organize things.

Out of curiosity, does anyone else organize their Minecraft survival hotbars? This is how mine looks, for example, with slots 1-4 being my sword + tools, slot 5 being my bow, slot 6 being food, slot 7 & 8 being miscellaneous, and slot 9 being for torches. I'm not sure if this is standard, but it's how I've always done it.

Part of me genuinely wants to have a thatched roof on my tiny house for one very important reason: it should be possible to grow it for free. "Oh but you have to reroof it every couple of years that's going to be so expensive!" Not if all I have to do is cut some grass and osiers and then climb a ladder. We need to get the roof here retiled and the scaffolding costs alone for that are astronomical.
The main reason it's not really feasible is because the skill has become so rare it costs an arm and a leg to even be able to learn how to thatch your own roof! Also there are probably all sorts of hoops to jump through to get planning permission for such.
I'm considering building a shed out of wattle and daub and figuring out how to thatch that, just for the practice! (I do not want a house made of wattle and daub; it might be free but it's also a nightmare to maintain in Scottish weather).
There are all sorts of things all over the world - from building materials to clothing design to cuisine - that have been replaced with 'better' versions, only they're not actually better, they're one or more of (and this is not an exhaustive list): cheaper to produce and/or purchase, more lucrative for the local colonial power, easier to transport, better in its place of origin but unsuited to other places, an historical (and sometimes entirely contemporary) form of oppression, that nebulous but powerful thing that is 'fashionable', easier to standardise (it's much easier to get 300k identical engineered lumber beams than 300k identical natural timber beams, for example), poorly understood by modern laypeople (corsets were not debilitating instruments of torture for most of human history, any more than bras are now, ie, generally only as a result of fashion or poor fit) and/or more accessible (often as a result of the destruction or otherwise loss of their historical counterparts, like how despite it's use for most of history, it's surprisingly difficult to get hold of coppiced hazel).
I have seen about twelve separate posts by firefighters about the higher fire risk of engineered lumber roof supports over their natural timber counterparts.
The house I grew up in is older than: Shakespeare, Columbus' 'discovery' of the Americas, the Anglican church, Michaelangelo's David, the Mona Lisa, the Reformation, and the introduction of chocolate to the Old World, to name a few. There's still wattle and daub visible in parts of the upstairs. The main living room has a ten foot ceiling held up by nearly a dozen oak beams, all at least a foot wide. I have lived through half a dozen deadly heatwaves and haven't needed to use so much as a fan in that room.
It's been repeatedly extended and extensively fucked with over the centuries, of course, and the wiring and plumbing are a nightmare, but the main core structure is rock solid. A good 90% of the issues we've had with it have been a direct result of the use of modern materials (the last ten percent are because the damn place is listed, so doing anything with it is a trial). Fucked up wiring? The 80s DIY craze is the gift that keeps on giving. Draughty windows? That would be the cheap plywood frames a predecessor used and we're now stuck with because listed.
Our new house was built in the 80s, has a huge south facing picture window (for the admittedly fantastic view) which renders the entire room uninhabitable on sunny days, is constructed such that anyone moving around in the guest room causes every doorframe in the place to rattle violently, requires heating at night, and has internal walls so fragile I've already accidentally made two holes in them with a chairleg and a tray corner respectively.
(There is a separate discussion to be had about why modern materials tend to be cheaper than their historical counterparts, and I can't bring myself to get into it now beyond pointing out that it's generally a fun combination of capitalism, colonialism, and good old industrialisation.)
There is a difference between 'modern materials' and 'better materials' and while there is definitely overlap, acting like the materials that have been used for centuries or millennia are inherently inferior because they've been used for centuries is just stupid.
It's cheaper and faster to put up an electric fence than build a drystone dyke, but depending on the situation and your goals, either option could be 'better'. If you built a dyke every time you moved your horse to a new area of grazing you would be rightfully considered deranged by your neighbours, but using an electric fence for a long term boundary might be foolish as well.
There's also the consideration that by and large historical materials - for anything, not just construction - are derived far more directly from the natural world and are often as a result far more sustainable than modern ones. Mud houses require... finding some mud. Breezeblocks require industrial manufacturing. Linen fibres are harvested by cutting a bunch of flax - that you've grown in the ground - and soaking the stems for a bit. Polyester is derived from oil that has to be first mined and then processed. Hazel or willow poles grow at approximately the speed of light, if properly managed.
Tl;dr: Pretty much every 'is it better' argument can be boiled down to 'is it appropriate for the purpose it's being used for?'
