If you lived in New York City in 1964 and you wanted to take a cooking class you'd do it with this guy at Michael Field's Cooking School. Michael was known for his nervous intensity and love of teaching - a combo that turned him into an excitable whirlwind in the kitchen. In his class, he cast aside all notions that cooking was elitist and hard and only meant for a certain type of highly skilled person. "In the end, cooking is only about cause and effect," he said. So each week he taught his students the basic principles behind magnificent recipes so that they too could become accomplished, confident cooks.
