First up, here's @solkiki_chocolatemaker from sunny Dorset run by Iris and Bob. They make micro-batch bean-to-bar chocolate using cacao beans from Peru, Ecuador and the Philippines and make a wide array of plain and flavoured vegan bars. Posted @withregram • @myic2016 Happy International Chocolate Day! . Did you know that September 13th is the birthday of TWO chocolate-related people: Milton S. Hershey & Roald Dahl (author of “Charlie and the Chocolate Factory”)?! 🤔 . Peruvian cacao, made into chocolate in the UK to be enjoyed in the US…that’s pretty International, right? 🧐 The background colors are representative of the flags of those 3 countries: red & white for 🇵🇪 + red, white & blue for 🇬🇧 & 🇺🇸 . Award-winning @solkiki_chocolatemaker’s Gran Palo Blanco (Chulucanas, Piura, Peru) 65% dark milk (vegan since it’s made with coconut milk). . Light tobacco followed by cereal/grain-like aroma; toasted bread notes during the melt. Honestly, I wouldn’t have known or guessed coconut was involved without reading the packaging, though there’s definitely a creamy finish. . Some sources say the original honoree of International Chocolate Day was Dahl & it gained traction in the US since Hershey was also conveniently born on the same day, though 59 years earlier 🤷🏻♀️ Regardless of the original inspiration, any day to celebrate chocolate is a good day for me! 🍫🥳🙌🏻 . Repost @jessica__chokolatejourneys with @get_repost ・・・ Raw or unroasted, which is it and are they the same? When I saw this unroasted bar by @solkiki_chocolatemaker I was curious. After a little research I reached out to Iris and Bob to gain greater insights. Here are some snippets I gleaned from speaking with them. Enjoy! “Chocolate or cacao cannot be raw, it is inedible when it’s raw. The term ‘raw chocolate’ is often used...The cacao cannot be raw by definition, it’s a fermented [and dried] product. The difference with this chocolate [bar]...is that we didn’t roast the cacao beans, therefore we call it unroasted.” “Normally cacao is roasted before being further processed into chocolate. What is different in this 70% bar is that we didn’t roast the cacao beans�� before turning it in to chocolate. “The term ‘unroasted’ is used to...be more precise.” Interesting right?! Here’s my taste journey - such a gentle bar! Slow to warm up with an initial dry yet incredibly thick and dense mouth feel, ponderous melt, and smooth texture. Brown butter biscuit, and cacao powder first met me along with notes of green banana and a tart walnut/oak character. As the bar melted, faint floral and subtle sweet notes of honeysuckle appeared, leading to a long, botanical finish.
