Day 1: Arrival in New York City After a long flight, I finally arrived in the bustling city of New York. The energy and excitement were palpable as soon as I stepped foot in Times Square. I checked into my hotel and decided to immerse myself in the city right away. I took a leisurely walk through Central Park, enjoying the lush greenery and iconic landmarks like Bethesda Terrace and Strawberry Fields. In the evening, I explored the vibrant neighborhoods of Lower Manhattan, visited the Statue of Liberty, and walked across the Brooklyn Bridge, taking in the breathtaking views of the city skyline.

Day 2: Exploring Washington, D.C. Today, I hopped on a train and made my way to the nation’s capital, Washington, D.C. I started my day with a visit to the National Mall, where I marveled at the grandeur of the Lincoln Memorial and the Washington Monument. The Smithsonian museums were next on my list, and I spent hours exploring the fascinating exhibits at the National Air and Space Museum, the National Museum of American History, and the National Gallery of Art. I also took a stroll along the historic streets of Georgetown and enjoyed a delicious meal at a local restaurant.

Day 3-4: San Francisco, California I flew across the country to the beautiful city of San Francisco. As soon as I arrived, I could feel the cool breeze and the vibrant atmosphere. I took a scenic drive along the iconic Golden Gate Bridge and soaked in the stunning views of the city skyline and the sparkling waters of the bay. Exploring the vibrant neighborhoods of San Francisco, such as Fisherman’s Wharf, Chinatown, and the Mission District, was a delight. I made sure to visit Alcatraz Island, where I learned about the infamous history of the former prison and enjoyed panoramic views of the city. I also indulged in delicious seafood at the renowned Fisherman’s Wharf.

Day 5-7: Road trip along the Pacific Coast Highway I embarked on an epic road trip along the Pacific Coast Highway, starting from San Francisco and making my way down to Los Angeles. The drive was breathtaking, with rugged cliffs, picturesque coastal towns, and mesmerizing ocean views at every turn. I made stops at beautiful places like Monterey, where I visited the Monterey Bay Aquarium and enjoyed fresh seafood, and Big Sur, where I marveled at the majestic beauty of the coastal landscape. I continued my journey to Santa Barbara, where I relaxed on the pristine beaches and explored the charming downtown area. Finally, I arrived in Los Angeles, where I explored the glitz and glamour of Hollywood and enjoyed the vibrant atmosphere of Venice Beach.

Day 8-10: New Orleans, Louisiana Leaving the West Coast behind, I flew to the vibrant city of New Orleans. I immersed myself in the rich cultural heritage and unique charm of the city. I explored the historic French Quarter, with its colorful buildings, lively music scene, and delicious Creole cuisine. I couldn’t resist indulging in beignets and café au lait at Café du Monde. I also took a steamboat cruise along the Mississippi River and enjoyed the vibrant nightlife on Bourbon Street, listening to jazz music in iconic venues.

Day 11-13: New York City, New York Returning to the East Coast, I spent a few more days in the captivating city of New York. I revisited some of my favorite spots, like Times Square and Central Park, and also explored new neighborhoods like Greenwich Village and Chelsea. I indulged in diverse cuisines, from food trucks to Michelin-starred restaurants. I visited world-class museums such as the Metropolitan Museum of Art and the Museum of Modern Art. I also caught a Broadway show, immersing myself in the magic of live theater.

Boldly delicious New Orleans-style gumbo is surprisingly easy to make at home. You can find the full recipe below with step-by-step instructions.

Ingredients

1 cup all-purpose flour

¾ cup bacon drippings

1 cup coarsely chopped celery

1 large onion, coarsely chopped

1 large green bell pepper, coarsely chopped

2 cloves garlic, minced

1 pound andouille sausage, sliced

3 quarts water

6 cubes beef bouillon

1 tablespoon white sugar

salt to taste

2 tablespoons hot pepper sauce for taste

½ teaspoon Cajun seasoning blend  to taste

4 bay leaves

½ teaspoon dried thyme leaves

1 (14.5 ounce) can stewed tomatoes

1 (6 ounce) can tomato sauce

4 teaspoons file powder, divided

2 tablespoons bacon drippings

2 (10 ounce) packages frozen cut okra, thawed

2 tablespoons distilled white vinegar

1 pound lump crabmeat

3 pounds uncooked medium shrimp, peeled and deveined

2 tablespoons Worcestershire sauce

A savory thickener called roux, which is created from equal parts fat and flour, is the foundation of a great Best gumbo recipe. Veggies and sausage should be added to the roux once it has turned a rich golden colour. The flavour can then be enhanced by adding seasonings, tomatoes, spicy sauce, and beef bouillon. Add file powder, okra, and seafood to the gumbo after it has simmered for 45 minutes. A lusciously substantial stew infused with Creole spice will be the end product.

Procedure

Step 1: For the Roux

In a large, heavy saucepan over medium-low heat, whisk flour and 3/4 cup bacon fat until smooth. Roux should be heated while being regularly whisked until it turns a deep mahogany colour. This could take 20 to 30 minutes; keep an eye on the heat and whisk regularly to prevent burning. Take the pan off the heat and keep whisking until the mixture stops cooking.

Step 2 : Preparing the gumbo

When all the vegetables are very finely chopped, add celery, onion, green bell pepper, and garlic to the work bowl of a food processor. Sausage and vegetables are mixed into the roux. Over medium-low heat, bring mixture to a simmer and cook for 10 to 15 minutes, or until veggies are fork-tender. Heat has been removed; set aside.

Step 3: Combine water and beef bouillon cubes in a large Dutch oven or soup pot and bring to a boil over medium-high heat. Stir until bouillon cubes dissolve, then whisk roux mixture into the boiling water.

Step 4: Add sugar, salt, spicy sauce, Cajun seasoning, bay leaves, thyme, stewed tomatoes, and tomato sauce while lowering the heat to a simmer. 2 teaspoons of file gumbo powder should be added at the 45-minute point of the soup’s 1-hour simmering process.

Step 5: Meanwhile, melt 2 tablespoons bacon drippings in a skillet over medium heat. Add okra and vinegar and cook for 15 minutes; remove okra with a slotted spoon, and stir into the simmering Orleans Creole Gumbo.

Step 6: Mix in reserved vegetables, crabmeat, shrimp, and Worcestershire sauce, and simmer until flavors have blended, 45 more minutes. Stir in 2 more teaspoons of file gumbo powder just before serving.

Two Days of Eats and Two Nights of Lights in St. Augustine, FL

It was 100% still Christmas when I visited St. Augustine with my family Jan. 22-23.

We caught the tail end of St. Augustine Nights of Lights from the historic bayfront. Here are the highlights, in photos:

Staying at the Hilton Historic Bayfront. The Hilton Historic Bayfront turned out to be a great home base, placing us within four blocks of Harry's Seafood Bar and Grille, Casa Reina, Tini Martini Bar, Meehan's Irish Pub & Seafood House, the St. Augustine Municipal Marina, and Plaza de la Constitucion. This is to say that we ate and drank very well, and we could easily walk to the Plaza, the heart of the seasonal lights display.

Martinis at the Tini Martini Bar at Casablanca Inn on the Bay. If you've ever taken a ghost tour of St. Augustine, you might have heard of the Casablanca Inn ghost. According to local lore, the widow who owned the inn hosted rumrunners during prohibition. Rumor has it she'd shine a light from the roof of the inn when the government men left town and it was safe for the rumrunners to come into port.

"While her name remains unknown to this day, the lady of the house still makes her presence known," the story reads on the Inn's website. "Residents across the Bay, those traveling by boat and pedestrians on foot have reported a light shining bright atop the Casablanca Inn on the Bay on a clear moonless night."

The Lady of the Lantern was known for her rum punch, but the Tini Martini Bar is known for its martinis, especially dessert martinis. And their Christmas decorations during Nights of Lights are beyond compare.

Oreo Beignets at Harry's Seafood Bar & Grille. I could rave about every cocktail and food item I've ever had at Harry's, but where else are you going to get oreo beignets? It's like fair food meets New Orleans, and it's delicious.

Meehan's Kerrygold cheese sauce (used in their Mac & Cheese and served with their Reuben Rolls) and award-winning homemade Irish Cream. If I was in St. Augustine longer, I would have returned for the official Nights of Lights brew and dessert - they make a freshly-baked Guinness Chocolate Cake and Jameson Bread Pudding.

THE LIGHTS!

The lights at the Plaza de la Constitucion. It's the most popular selfie spot in all of the Nights of Lights. The second most popular selfie spot was in front of the "Nights of Lights" sign at Hilton Historic Bayfront.

St. Augustine Land and Sea Tours' St. Augustine Nights of Lights luxury golf cart tour. We practically had the whole cart to ourselves as Wendy drove us around St. Augustine, pointing out all the best light displays during the Nights of Lights.

How to Make Farmer Brown’s Cajun Gumbo

Don “Farmer Brown” Johnson learned how to cook gumbo almost 40 years ago. Growing up on the West Bank of New Orleans, gumbo has been a staple of his life for as long as he can remember.

“The bayou was in my backyard, and my front yard was the Mississippi River,” he said. “We lived off seafood.”

First, he watched over his mother’s shoulder as she brewed countless pots of gumbo. His mother, Evelyn, learned the recipe from her mother, who learned it from her mother. 

He made his first pot of gumbo on Christmas Morning in 1983—just under 40 years ago— with guidance from his Uncle Milton. It was a hit. He hasn’t looked back since.

The Johnson Family Gumbo recipe isn’t even a family recipe, really. It’s the same recipe used in countless homes across New Orleans. You can find dozens like it with a quick Google search.

What you cannot find via a Google search is Farmer Brown’s philosophy on gumbo as an art form. Unless, of course, Google leads you to this article.

Anyways, I know several of you millennials are looking for a bulleted recipe, and you don’t want to hear about anyone’s backstory. I get that.

Bookmark this page because you’ll need to come back and read the rest of the article when you try the recipe and your gumbo falls flat because you didn’t take the extra time to learn from Farmer Brown.

Ingredients (including but not limited to):

Flour

Vegetable oil

The trinity (bell pepper, onion, celery)

Almost every spice in your cabinet (Old Bay Seasoning, Louisiana Seasoning, Zatarain’s, Tony’s Chachere’s, garlic powder, oregano, garlic powder, cayenne pepper, thyme, Filé powder [ground sassafras], salt, pepper.

Fresh shrimp

Fresh blue crab

Smoked sausage

Okra

Instructions (including but not limited to):

To make your roux, mix two parts cooking oil and one part flour into a big pot until it’s the consistency of clay and the color of the Mississippi River.

Meanwhile, peel and devein the crab and shrimp. Drop the shells into a pot of boiling water. Mix in your seasonings. This will serve as your stock.

Meanwhile, saute the trinity in a lightly oiled frying pan.

When the roux reaches the right consistency and color, add the Trinity. Stir it up.

Mix in a little more stock. Add the seafood.

Let it cook a bit.

Add your okra last to preserve the crunch. Reference the okra section below for some additional tips.

Don’t skimp on the seasoning. Taste as you go. Clean as you go. Take your time. Delegate tasks. Have fun. Pay attention. When it’s ready, serve it over rice.

The next phase of a $50 billion plan to protect the Louisiana coast from erosion and rising sea levels has cleared an important hurdle, with the Army Corps of Engineers delivering a long-awaited environmental impact statement for a key part of the project.

The report, issued Thursday evening, looked at a proposal to punch a hole in the Mississippi River levee. The corps said the move would largely benefit coastal areas in the state, though it might also affect some marine life, especially bottlenose dolphins, and could cause problems for those who make their living from raising and catching seafood in the area.

“This is what climate adaptation looks like at scale,” said Chip Kline, chairman of the Louisiana Coastal Protection and Restoration Board. “This project, in our mind, is the lifeline for our coast.”

Money for the project will come from penalties paid by BP for the damage caused by the Deepwater Horizon oil platform disaster in 2010, which killed 11 rig workers and spilled some 200 million gallons of oil into the Gulf of Mexico.

If the corps issues final permits, which could happen as early as next year, a $1.4 billion structure will be dug into the western bank of the river below New Orleans. It will include gates that allow operators to control the flow of water and sediment from the mighty river into Barataria Bay, nearly an Olympic swimming pool’s worth of water every second.

By letting fresh water and sediment flow from the river into the depleted wetlands of Barataria Basin, the diversion will mimic the spring floods that were common before people built levees to contain the river — floods and sediment that built the Mississippi Delta in the first place. Without those regular deposits, the land has subsided. Further damage from activities like oil exploration cut channels into the delicate wetlands and let destructive salt water intrude into the delicate marshes; all that and rising sea levels have combined to cause the loss of some 2,000 square miles of land in the last 100 years.
