I always try to prep a few days worth of meals on my day off. I made four portions of oven roasted butternut squash, baby portabellas, baby carrots and onions and mixed that with some Barilla Fettuccine. Two trays of oven roasted veggies. Thanks to @_m_degler_ for the tomatoes and @menocar07 for the eggplants. The rest of the veggies are from @giantfoodstores that were on sale because they were getting soft.. better for me.
