Rye Pancakes
Beautifully fluffy and light, these Rye Pancakes, with their slightly nutty flavour are excellent at brunch, and welcome savoury or sweet toppings alike! Happy Saturday!
Ingredients (makes 6):
1 1/2 tablespoons unsalted butter
1/2 cup plain flour
1/2 cup rye flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
2 large eggs
3/4 cup buttermilk
In a small saucepan, melt butter over a low flame. Remove from the heat; set aside.
In a medium bowl, combine plain flour, rye flour, bicarbonate of soda and salt. Give a good stir.
Dig a well in the middle of the flour mixture, and break in the egg. Whisk, gradually stirring in buttermilk and melted butter until well-combined. Cover with a tea towel, and leave to rest, at room temperature, at least an hour.
Melt a little butter in a large, flat, non-stick skillet over medium-high heat.
Spoon as many ladles of pancake batter as you can in the skillet, spacing them a little as they will grow. When bubble start forming on the edges of the pancakes, wait a couple of minutes, and flip pancakes on the other side. Cook, a couple of minutes, then transfer to serving plate keeping them warm. Repeat, until you have six beautiful pancakes (or eight, if you make them smaller!)
Serve Rye Pancakes warm, topped with Senap och Dillsås and Gravadöring, or with thick yoghurt, fruit, honey or Maple Syrup...
