Have you ever cooked quinoa? What's your preferred method? Any favorite dishes? I am experimenting with quinoa in my life and need more guidance.

Yes I have! We went through a vegetarian phase a few years back and quinoa was one of the things I experimented with. 

Since it’s been a while I can’t speak too definitively but one thing I remember is it’s very like rice so approaching it similar to the way you would approach rice would probably be a good start (pilaf, stuffing, salad etc). Like rice, it is a bit of a blank slate that you can build upon. I would recommend cooking it in broths (vegetable, chicken, etc.) or combine it with things that have their own strong flavors as it can be bit bland on it’s own.

What are your true feelings when it comes to flour tortillas that aren't fresh?

See. To reiterate from our earlier conversation. Non-fresh tortillas are an abomination and cannot be tolerated. They smell gross, their texture is rubbery gooey grossness, they stick to the roof of your mouth and are all around disgusting. Fastest way to make me gag is give me store bought crappy flour tortillas. 

The best flour tortillas are hands down those that are hot off the stove, made by the skilled and loving hands of my abuela. Slather some mantequilla on there, roll it up and call it a day (or do it 20 more time so by the time she’s done making tortillas there are none left, and then call it a day).

Second best would be the tortillas from this little tortilleria that is around the corner from my dad’s old office. Little viejitas get up at like 4 am and start making the tortillas. As I haven’t been home in years, its likely that place isn’t around any more. Que sad.

Third best, and tolerable in a pinch if you really need them, are those made in house at El Rancho, and/ or Central Market, and/or Rosas, all of which, I believe, are Texas only. 

Left without these choices get corn tortillas, they’re harder to fuck up.
