NEW YORK ... Redbreast Irish Whiskey, produced by Irish Distillers at the world-renowned Midleton Distillery in Cork, Ireland, officially introduced Redbreast Tawny Port Cask Edition, a limited-edition single pot still Irish whiskey finished in tawny port casks from Portugal's breath-taking Douro Valley.  
Expertly created by esteemed Master Blender Billy Leighton and Blender Dave McCabe, Redbreast Tawny Port Cask Edition is a single pot still Irish whiskey initially matured in a combination of bourbon and oloroso sherry casks. To add a new dimension to the flavor profile, a portion of these maturing whiskeys were recasked into tawny port casks for a number of years. All of the whiskeys were then skilfully blended and completed their maturation journey by marrying in freshly seasoned tawny port hogsheads for a final maturation period of 14-25 months.
The inspiration for Redbreast Tawny Port Cask Edition started 12 years ago, when Leighton took a trip to the Douro Valley in Portugal to visit some of Midleton Distillery's partner cooperages and winemakers.
"We were enjoying lunch with the late renowned winemaker Joaquim Anacleto and Gesprove Winemaker José Pinheiro overlooking the valley, discussing the various wines and spirits that had influenced our whiskeys," says Leighton. "And, being in the valley, we began to imagine how Tawny Port's intricate flavor profile could affect our whiskies. Curiosity took hold, and we decided to make this daydream a reality – and we are quite pleased with the impeccable result."  
The result Leighton mentions is a rich, well-balanced whiskey with notes of praline, buttery baked goods, and dried cherries from the earlier tawny port influence, followed by a warming sweetness of toasted caramel and vanilla carried through from the bourbon and an added depth of dried fruits from the sherry. The final maturation period in newly procured tawny port casks elevates the nutty character further and provides a sweet finish for a rich, full-bodied whiskey.
"Redbreast Tawny Port Edition's flavor profile is well within our flock's DNA, yet it provides an exciting twist from another part of the Iberian Peninsula," McCabe adds. "Each subsequent expression in the series will represent a new discovery from this rich region which to date has greatly influenced the Redbreast style over the course of its history."
Redbreast Tawny Port Cask Edition marks the third release of the brand's acclaimed Iberian Series. The series is inspired by Redbreast's long-standing connection to some of the Iberian Peninsula's most celebrated cooperages and winemakers, and combines the rich heritage and craft of the region with the excellence of Midleton Distillery's single pot still whiskeys, to create expressions that are truly extraordinary. Redbreast Tawny Port Cask Edition is the second limited edition to join the series, following the 2021 release Redbreast Pedro Ximénez Edition, and permanent expression and series anchor Redbreast Lustau Edition.

Tasting Notes:
Aroma: Sweet and warming confectionery notes of buttered pastry accompanied by aromas of caramelized almonds with subtle undertones of praline and dried cherry. Scented floral honey with whisperings of a delicate herbal character lingers in the background while the seasoned oak and pot still spices accentuate the sweet and full-bodied nature of this wonderfully balanced whiskey.
Taste: Rich and nutty at first with notes of chocolate-coated hazelnut and salted caramel, quickly followed with fresh plums and dried fig. The tannins' soft presence works in harmony with the luscious and creamy texture, evoking notes of orange marmalade with delicate hints of toasted oak.
Finish: Lingering finish which sees the pot still spices and fruits slowly fading, leaving the tawny seasoned oak to have the last word.

La bouillabaisse fait partie de ces plats qui me rappellent les vacances au bord de la mer !

Cette recette de bouillabaisse (avec sa rouille maison !) est très proche de la recette traditionnelle , tout en restant relativement simple à réaliser.
Pour la bouillabaisse
1 oignon jaune
1 fenouil , petit
1 poireau
4-5 tomates
1 c. à soupe de c oncentré de tomates
1 livre de pommes de terre
1 c. à soupe de graines de fenouil
10 fils de safran
3 feuilles de laurier
1 orange
500 g poisson frais rascasse, rouget barbet, Saint Pierre ou autre poisson blanc (cabillaud, lotte etc.)
200 g crevettes 200 g
1 livre moules 500 g
1 litre fumet de poisson
125 ml vin blanc sec
40 ml pastis Pernod Ricard
Sel
Persil frais
Pour la rouille
150 ml d’huile d’olive
2 jaunes d’œuf
3 gousses d’ail
1 c. à soupe de moutarde de Dijon
2 tranches de pain
6 fils de safran
1 pincée de sel
1 c. à café paprika
1 c. à café Piment d’espelette
Quelques gouttes de jus de citron
Instructions 
Émincer l’oignon, le fenouil et le poireau. Couper les tomates et les pommes de terre en cubes.
Dans une grande casserole ou un cocotte, faire chauffer l’huile d’olive à feu moyen. Ajouter l’oignon, le fenouil et les poireaux. Faire revenir pendant quelques minutes jusqu’à ce que l’oignon soit translucide.
Ajouter les graines de fenouil, les fils de safran, les tomates, le concentré de tomates et le zeste d’orange. Remuer et laisser cuire quelques minutes pour libérer les arômes.
Déglacer avec le pastis et le vin blanc. Retirer le zeste d’orange, puis verser le fumet de poisson.
Option : mixer la soupe et la passer au tamis pour éliminer les morceaux. Reverser dans la casserole.
Ajouter les pommes de terre, la feuille de laurier et le zeste d’orange et faire cuire à feu moyen pendant 20 minutes.
Rincez bien les moules sous l’eau froide et retirez celles qui sont ouvertes ou cassées. Couper le poisson en cubes. Ajouter sur le poisson, les crevettes et les moules.
Couvrir la cocotte avec un couvercle et laisser mijoter pendant 5 à 7 minutes à feu doux, ou jusqu’à ce que le poisson soit cuit, que les crevettes soient roses et que les moules soient ouvertes. Jeter les moules qui ne se sont pas ouvertes pendant la cuisson.
Retirer la cocotte du feu et verser la bouillabaisse dans des bols. Garnir de persil frais haché.
Sauce rouille
Faire tremper le pain dans de l’eau ou un peu de soupe de poisson. Dans un petit bol, mélanger les fils de safran avec quelques gouttes de jus de citron et laisser infuser quelques minutes.Dans le bol de votre robot ou dans un petit bocal, ajoutez les jaunes d’œufs, les gousses d’ail, la moutarde de Dijon, le pain trempé, le safran avec le jus de citron, une pincée de sel, le paprika et le piment.
À l’aide d’un mixeur ou d’un robot, mixer le mélange jusqu’à ce que tous les ingrédients soient bien combinés.Le robot étant toujours en marche, verser lentement l’huile d’olive en un filet régulier. Continuer à ajouter de l’huile d’olive petit à petit jusqu’à obtenir la consistance souhaitée.Goûter la rouille et rectifier l’assaisonnement si nécessaire.Transférer la rouille dans un bol de service et la réfrigérer pendant au moins 30 minutes avant de la servir.

Several auction lots have been given by Sassenach Spirits for the Deveron, Bogie and Isla Rivers Charitable Trust (https://www.deveron.org/)'s dinner auction, next September 6 (https://www.deveron.org/sundown-on-the-deveron-centenary-dinner-auction-in-association-with-bowlts/- the whisky will be graciously provided by Bacardi, though 😎). Hookergate seems to have passed completely unnoticed by that (big and very serious) local NGO board: not exactly the kind of people to read JJ, to be honest, so it's all good.
The news was immediately dissected by another blog (ahem). It may came as no surprise here, however, that the Avochie Estate (https://www.avochie.com/) is a family-friendly destination - 'fun things to do with children':

Anyways, back to the Deveron, Bogie and Isla Rivers Charitable Trust. Its partnership links with one of the big global players in the spirits business, the Pernod Ricard Group (https://www.pernod-ricard.com/en), based in Paris, via 'The River Within' sustainable development programme, are more than obvious:

Even more interesting, the charity will release, at the end of July, a limited edition batch of its own gin. Proceeds of the sales will directly go into its coffers and help support its projects:

Clearly extending a growing business network, and perhaps spending a well-deserved weekend away from prying eyes, too. The guys featured in the pics are charity people: I doubt he spent an evening drinking his arse off with them, if you see what I mean 😉.
