2oz Pisco

1oz Lime juice

1/2 oz simple syrup

1 egg white

Dry shake vigorously. Add ice and shake again. Strain into a nick & Nora glass (or an old-fashioned glass over fresh ice. Tap Angostura bitters over the foam and swirl with a toothpick.

This one's crisp and silky. It's dry like a ripe pear, and has a wonderful flavor from the lime. The nutmeg of the Angostura gives the foam a good character that pairs well with the cocktail itself. I'm excited to play with pisco in other contexts.

Pisco Sour Cocktail Recipe !

Yield: 1 cocktail

Ingredients:

2 oz Pisco

3/4 oz Lime Juice

1/2 oz Gum Syrup

1 Egg White

Angostura Aromatic Bitters for Garnish

Instructions:

Add all ingredients except bitters to a cocktail shaker and dry shake for about 15 seconds. Add ice and shake again until chilled. Fine strain into a chilled coupe glass. Garnish with a few drops of Angostura bitters.
