Dry shake vigorously. Add ice and shake again. Strain into a nick & Nora glass (or an old-fashioned glass over fresh ice. Tap Angostura bitters over the foam and swirl with a toothpick.
This one's crisp and silky. It's dry like a ripe pear, and has a wonderful flavor from the lime. The nutmeg of the Angostura gives the foam a good character that pairs well with the cocktail itself. I'm excited to play with pisco in other contexts.
