The flavor of the crust will improve with a longer rise, up to a point. 4. You can now decide how long the dough should ferment and rise. The dough will have more delicate flavors as a result of a slow fermentation (24 hours in the refrigerator). The dough will rise enough to work with after a short fermentation (1 1/2 hours in a warm location).With the low yeast, I usually let it rise for about 8 hours near the window avoiding direct sun. During colder days, just leave it overnight in a warm place.  Ghar Pe Pizza Kaise Banaye    Make Pizza Sauce : 1. Begin with puree 400 to 500 grams of tomatoes in a blender. Heat 1 ½ tsps.  Add 2 garlic cloves of finely chopped to oil the pan. Fry the garlic a bit until I nice aroma comes out, then add 1 tsp red chili flakes. 2. Now pour the tomato puree into the pot, add ¼ teaspoon salt and 1 teaspoon sugar. give a nice stir and cover the pot on simmer until the tomatoes cook down and reduce to a thick consistency. Be careful at this step as the puree splashes a lot. To reduce the flame and stir it well. 3.When you see that mixture thickens to a sauce consistency, add 1teaspoon of mixed herbs or Italian herbs and ½tsp crushed black pepper. Now tasting time if you feel the sauce needs more herbs, salt, and pepper add as needed. 4.Lastly, the sauce consistency should be thick so that it spread nicely. 5.It should not be runny otherwise the pizza will be soggy and wet beneath the cheese. now cool this completely and transfer it to an airtight jar.  Ghar Pe Pizza Kaise Banaye Making the Pizzas: 1.Preheating. When you see the dough has relaxed and is ready to be stretched, place a pizza stone on a rack in the lower third of your oven. Preheat the oven to 475 °F for at least  25 to 30 minutes, preferably an hour. If you don't have a pizza stone, nothing to worry just you can use a pizza pan or a thick baking sheet; you need something that will not warp at high temperatures. 2.When the pizza dough doubles in size, it will look like this. Rising the dough will have lots of air pockets and will rise more. 3. Remove the plastic cover or napkin from the dough. Dust the hands with flour and deflate and remove the air bubbles. 4. Divide the dough in half and make 2 balls of dough for pizza base. place each in its own bowl. Again cover with plastic and let it for 15 minutes (up to 2 hrs). (I made 2 pizzas and refrigerated the rest for the other day. Before I keep the dough just wrap it in a cling wrap and put it in the fridge for 3 days. Before using let the dough come down to room temperature depending upon the weather where you live.)  Prep the Toppings: 1. Prepare your desired toppings. we prefer mushrooms, bell peppers, and olives. But keep it in mind do not load each pizza with a lot of topping as the crust will end up not crisp that way. 2. So when you are ready to make the pizza, make sure all the ingredients are in the proper like, veggies should be at room temperature prior to a few hours so they don’t let the pizza be soggy. 3. Take one ball of dough at a time, now flatter or spread the dough with the hands on a lightly floured work surface. start at the center and stretch the dough outside so that it gives nice edges, press the dough to ½ inch thick, and turn and stretch the dough until it will not stretch further.  Tips: Do not use a rolling pin because it deflates the air bubbles.   4. Next spread the Pizza sauce as desired. 5. Lastly, layer the grated cheese, then layer the veggies as you like. Also add more cheese on top avoiding the veggies. Sprinkle herbs and chili flakes as preferred. 6. Transfer the pizza tray to the oven, and place it right over the hot baking tray/cast iron pan in the preheated oven. Bake it for 8 to 10 minutes, until the cheese melts and the crust becomes golden brown Adjust the baking time as needed. 7. Let the temperature come down a bit and then slice it, and serve it hot.
