Lady Rosemary took us to Master Dumpling, her favourite dumpling eatery in Newmarket. It has been a trying week dealing with the storm and aftermath and she wanted to cheer us up. We had the pork & chives dumplings (pan-fried), a pork wonton soup and deep-fried shrimps in salted egg yolk. Pork and Chive Dumplings
An extremely simple, delicious and cheap dish to make for those of you out there! It can be time consuming the first time you make these dumplings but you'll soon become a professional in folding and creasing them! 
Ingredients - 1/2 lb. ground pork (lean if you're looking for something less fat; regular if not; and extra fatty ground pork if you're looking for more taste!) - 1 egg - 2 tbsp. sesame oil - 2 tbsp. soy sauce - 1 tbsp. black vinegar - 1/2 tbsp. rice vinegar - 1.5 cups chives (flat end chives) - 1/2 tsp. salt - 1/4 tsp. grated ginger (or more to your liking) - 1/4 tsp. black pepper - corn starch - 1 small bowl of water - aprox. 30 dumpling wrappers
Instructions 1. Combine all wet ingredients into one bowl - soy sauce, rice vinegar, black vinegar, sesame oil, grated ginger, black pepper, salt. 2. In a large bowl, make sure meat is thawed, place in large bowl with egg, garlic, chives. Mix thoroughly until you see all three ingredients dispersed within the meat.

3. Mix wet ingredients into the meat and use your hands to knead around the meat so that the ingredients are mixed into the meat well as to avoid clumps of ginger or chives in one bite. 4. Get a large plate and sprinkle lightly with cornstarch so that the dumplings won't stick to the plate.  5. Take dumpling wrappers and scoop a little bit of the meat onto the dumpling wrappers, dip your fingers into the water and wet the inside edges of the dumplings wrappers and proceed to fold up so that the meat is now in the center and the bottom of the dumplings. Press the opening together so it shuts tightly and make a folding motion to create pleats in the wrapper. Continue this action until all the meat or wrappers are used up.

6. To boil the dumplings: Place 8-10 dumplings in a pot of boiling water and wait for dumplings to float to the top. Once they are at the top, they are ready to be eaten! OR To pan fry the dumplings: Get a large skillet and pour 2 tablespoons of oil and turn the stove on to medium high. Wait for the skillet to heat and once the oil is the consistency of water, place dumplings one by one, side by side but not touching onto the skillet. Wait for about 2-3 minutes/dumplings until they start to stick slightly to the pan and turn over. Once done, pour 1 cup of water, cover the skillet and cooked until water has evaporated.
