𝙂𝙞𝙛𝙩𝙚𝙙 🥪 @theblackpig_ldn down at @boroughmarket will be launching their Christmas sandwich this Monday! Creamy bread sauce, soft sautéed leeks, crunchy spiced red cabbage, tangy apple & cranberry slaw, tender slow roast @blythburghpork pork, thick gravy mayo, crispy onion, sage & toasted pecan crumble, all in a toasted ciabatta. I think this just about equals their honey truffle Parmesan sandwich for the best sandwich I’ve ever eaten. Firstly, that gravy mayo is beautiful and gives you this meaty creamy taste, and then you get the absolute top quality juiciness of the pork, followed by the sweetness of the cranberries which cuts through, and the tang of the apple slaw which breaks it up with another element. You also get a hint cinnamon in the slaw and I love how you pick it up as an after taste at the end. What’s an incredible sandwich, honestly. I can say nothing but incredible things about @theblackpig_ldn. If it was more local for me then id be eating here every week. I lived in Guadalajara for 8 years and had the privilege of tasting many, many tortas ahogadas. It’s one of my favorite breakfast dishes. However, and anyone from Jalisco currently living outside their state will understand, it’s almost impossible to get a real torta ahogada anywhere else. The main problem is the bread, the authentic “birote salado”. A salted hardened loaf of bread made specifically to maintain its integrity as it is completely drenched in a wonderful sauce made from tomatoes, diced onion, cumin, cloves, oregano and garlic. The only place that can make this bread is Jalisco, mainly because of the water. Hence, “El Güero” owner and operator of @tortas_ahogadas_guadalajara , has the bread brought in fresh from Guadalajara! He makes his own pork carnitas and the sauce is on point. From the very first bite I was sent back in time, this is the taste of my high school and college years. Crispy panko coated pork chop, brown sauce, apple & Dijon relish, and shredded cabbage in soft white crustless bread. Or in other words, a pork sando. I loved this, pork can very easily get dry but this was cooked perfectly. The brown sauce and relish also add another layer of moisture to it. @sayyeahburger are now back east where they are popping up at @threecrownsshoreditch so get down and give them a try.
