おとなになっておいしくなっていくもの
正月、北海道に帰ったら母が久しぶりに漬物樽いっぱいの鮭の飯寿司を仕込んでて思わず「やったー!」と叫んだ
飯寿司はいわゆる熟れ寿司の一種で、
寒さの厳しい地域で、冬に野菜を食べるための保存食として
また、正月やご馳走として古くから受け継がれてきた郷土料理です
材料は
鮭や身欠き鰊など、麹、塩、大根、人参、柑橘など 家庭によって様々
魚を使い腐敗しやすいから氷点下が続くような時期に発酵をタイミングを合わせる
(北海道は家の廊下が冷蔵庫みたいなもん)
ちなみに、うちでは新巻き鮭(塩漬けした鮭)を使います
新巻き鮭は旨味があってすばらしい
これまた北海道の郷土料理、三平汁に使うと鮭の旨味が塩気と共に溶け出してさいこう!
味付けいらず
小さい頃は「おとな味だなあ」とひと口食べれたら良い方であったけれど、今はいくらでも食べたい!酒の肴にもいい
昔は三平汁も地味だなあと思いながらすすってたけど、ばあちゃんに作り方を習ってからはそれがありがたく感じて、大切にしたくて好きになった
今年はもっと郷土料理を極めたいな〜

We love to see you #enjoyscout and when the @thesardinfluencer shares his lobster egg sando vibes, we head right to the kitchen. @thesardinfluencer SIMPLE TINNED LOBSTER EGG SALAD SANDO ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I whipped up this creamy umami bomb featuring @scoutcanning's tinned lobster a while back and never posted it, instead sharing my moules frites because I thought that recipe was more photogenic. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Battling my perfectionism can be hard on IG and as a result, there's a lot I don't put out there. But given that I'm currently away from my home kitchen as I explore tinlandia (aka Portugal), I knew this was the perfect time to pluck this delicious sando from the sharkives. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Creamy, pillowy soft, and rich in lobster flavor, this one is smelt in your mouth delicious. And the best part is, if you have the hardboiled eggs on hand it comes together in less than five minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1x tin @scoutcanning lobster • 2 slices fluffy white bread or milk bread • 2 eggs, hardboiled, shelled • 1 tbs @kewpieusa mayonnaise • 1 tsp @greypoupon_us Dijon mustard • ¼ tsp smoked paprika • flaky salt, to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. In a small bowl, mix the yolks with the @kewpieusa, @greypoupon_us, smoked paprika and salt to taste. 2. Slice the whites into small pieces and gently fold into the yolk mixture. Repeat with the @scoutcanning lobster. Drizzle in the tin oil for extra flavor and color. 3. Spread mixture onto a slice of bread and top it with the other. 4. Carefully slice off the crusts to ensure a fluffy edge. 5. When you go to the fishing towns along the coasts of Japan, you can still find drying racks of split open brine soaked fish. A favorite of mine is aji no himono (アジの干物brine soaked dried mackerel) . If you stay in a ryokan, you will find many places serve salted salmon or brine soaked dried fish for breakfast. Going back in history, it is said that the reason why salted salmon and himono was served at breakast is because they were preserved and made it harder to rot and it does not take long to cook. In the past, dried or salted fish was a means of preserving fish. And it was difficult to get fish in the morning unless it was near the port. LEMON AND PARSLEY SALT CURED TROUT. . . So a few days ago we found half a trout marked down to to £4. That’s half price!!! Normally I try to find marked down salmon for this but to be honest trout works just as well. . . First off I cut the fillet in half as the box I have isn’t big enough for a whole one. . . I used the zest of 2 lemons and a good handful of parsley I chopped really finely and dried on a plate for a couple of days. This was mixed with 2 cups of salt. . . First off you put a layer of the salt on the bottom of the box. Then you place your first fillet on it. Then put another salt layer on the fillet. . . Place your second fillet on top of the first fillet and salt. Then put the rest of the salt on top. . . Make sure you have covered the trout on all sides. Then put a lid on and place in the fridge or in a cool place. . . Each day pour off any liquid and turn the trout over. Repeat this process for 4 days. . . On the 5th day take the fish out and brush off any let over salt and pat dry with a clean dry tea towel or kitchen paper. . . Wrap the fillets separately in greaseproof/parchment paper. Place back in the box once clean and dry. . . Your trout is now able to stay in the fridge or cool room for 6 months or more. . . Use as you wish, either in a Kedgeree style rice dish or cut wafer thin on bagels or in salads. Remember though you will not need to add salt to the dish you make as the trout will be fairly salty. . . You can of course soak some of the salt out if it’s too salty for your taste as you would salt cod. It won’t need as much of a sim but you will lose some of the lemony and herby flavour of the fish. . . Anyway that’s my jobs done for the day. I still have salmon I did this way earlier this year which I will use before the trout I think. . . Don’t be scared of jobs like this. It’s easy. There is no way you can screw it up if you follow the instructions. It took me all of 10 minutes this morning.
