From My Tuscan Kitchen, I am celebrating seasonal Sicilian cherry tomatoes. I love this dish because of its simplicity and flavor: Slice bread, drizzle with olive oil and toast in the oven until golden. Mince tomatoes, add basil, salt to taste and a drizzle of olive oil. Remove crostini (toasted bread) from the oven, scrape with a clove of fresh garlic and spoon tomato mix onto crostini. I usually finish with a drizzle of olive oil before serving. And, that’s it. Buona Domenica from the Tuscan Countryside! We were up early to do chores at our farmhouse. Stefano and a friend cleared the buckets of ruble from the upstairs bedroom. I watered my poor wilting hydrangeas. I have nurtured those green babies for years just for this dream house. Now, I don’t know if they will make it. I mowed and Stefano weed whacked. I nearly took my eye out walking into a wayward branch that caught my hat and scratched my face and eyelid. Now, a couple of the olive trees got a trim. It felt surreal to watch Stefano dress cinghiale the first time. After 11 years, it still takes a little getting used to. This little piggy was quartered and shared. From My Tuscan Kitchen, I immersed the cinghiale in a white wine and herbed brine for four days. I prepared a sofritto (celery, onions, carrots and garlic). I browned the piggy. The ingredients went into a pot and stewed for three hours. Dinner is served Stewed Cinghiale on Polenta. Plum, Lola and Girl know and love their new garden. The steep slope on the west side is shrouded with trees and crevices and an adventure for them. It is terraced. This allows Lola to leap off when she is feeling rambunctious. Girl always finds an area to dig. Plum doesn’t go down nor will she take the stairs. She isn’t confident with her footing. And, it is probably for the best. She suffers from seizures (and probably vertigo) when she gets too excited. I start my day with a fire. After getting Plum, Lola and Girl fed, I start my day. The floors were washed several times to remove the cement haze. And, it paid off. The haze in the entry way revealed this colorful brick. I learned from the neighbor this style of painted brick was popular in Tuscany at the time. The haze in the kitchen and living areas are more difficult. The cement haze is even heavier and may require professional attention. The carpet of moss was scraped from the walls and walkway. And, I got to use a new “toy” a power washer. It was pure satisfaction (and addicting) to see the immediate change from blah to wow! It is Fall in Tuscany. Stefano brought home a bouquet of flowers, in a beer batter they went. From My Tuscan Kitchen, I couldn’t resist Fried Zucchini Flowers. I used Extra Virgin Italian Olive Oil that imparted the flavorful nutty, greenness of the oil. It was a birthday month of bar-b-que and salads. From My Tuscan Kitchen, we had cowboy steaks on the grill and a classic Caesar Salad. It is impossible to find bottled dressing in Italy and made the Caesar from scratch. I tweaked the recipe and it is perfection. When we were in Sicily a few years back, I was on the quest for the most scrumptious cannolo. In my humble opinion, Donna Fugata in Ragusa had the BEST tasting! I finally decided to make these Sicilian sweets (slightly deviating from the traditional recipe) and highlighting seasonal flavors. From My Tuscan Kitchen, I prepared my summer inspired Lemon Mascarpone Cannoli for dessert. They were delightfully light, delicate and lemony fresh. I will certainly be making these again.
