Hangman didn't even want to be on Chopped but Coyote said the exposure would be "good for the brand" and now he just got reamed out on national TV by Scott Conant for serving raw red onions and has to figure out how to make maple butter blondies a la mode when Phoenix has purposefully decided to monopolize use of the sole ice cream machine during the dessert round.

(Except you know the real Chef AU would be like...fraught with attempted murder by food poisoning instead of fifteen ways in which Anne Burrell kindly tells you that you should never step foot inside a kitchen again.)

I’m not a big fan of Chopped--I’ve been known to watch it while in a hotel room from time to time--but I know it’s for many their way of knowing who Scott Conant is. 

I first learned about him over a decade ago when Serious Eats posted a tutorial on how to make is signature tomato-basil sauce where he fries the basil springs and garlic cloves in olive oil before adding it to the finished sauce, and it became a go-to sauce option for me when we lived in New York, especially if I was making a batch of pasta for myself.  

When I was scoping out the happy hour menus for Las Vegas, I noted that Scarpetta LV hd a tomato-basil aranicni dish on their menu which intrigued me, so of course we went there on our second day of our trip, we busted the doors to get some good deals, and we had a high old time.

The arancini were good, but the real MVP of the happy hour menu were the short rib al plin, which are delicate little ravioli-esque dumplings that are flavorful and totally annoying to make at home. I definitely intend to get some inspiration from these, but respect must be paid first. We liked this dish so much we ordered it twice in one sitting, and then I got it again a few days later.

The octopus dish, recommended by the party next to us--locals who knew the people working in the kitchen while we were there--was a slam dunk. Scott Conant may be associated with one of the food competition shows I don’t terribly care for, but the man puts his name on a solid operation.

I hate Scott Conant on Chopped SO FUCKING MUCH. Literally, he makes a giant stink about how he hates raw onion and blah blah blah. To be clear, hating raw onion is fine, that's preference. But the judges chopped a chef because she used a little bit of raw onion after he told her he hates them. And then he gets pissed at another contestant because "raw onions are just so pungent and shouldn't be used" or some other such nonsense. And mind you, this was in a lentil salad or something, so not really out of place. Like motherfucker, this is not your goddamn personal cooking service. Don't be a primadonna.

I get red onions would have added color to my ceviche but I don't like red onions and that's the only thing I have in common with Scott Conant.
