With my babies fast asleep in bed I get time to bake some healthy treats for the busy week ahead. 😉💗 I must say, not a lot smells better than this aroma coming from my oven. 🍎🍞🥮 Healthy apple and date loaf 2 x cups Wholemeal SR flour 1 x teaspoon nutmeg 1 x teaspoon cinnamon 1/2 x cup chopped pitted dates 2 x eggs 1/2 x cup coconut oil 3/4 x cup raw honey 4 x large apples cored and chopped In ThermoMix add the eggs, oil and honey on speed 5 for 10 seconds. Add the flour and spices then speed 6 for 15 seconds. Add the dates and chopped apple. SWITCH to reverse and on speed 6 for another 15 seconds. Pour into a lined loaf tin or cake tin. Bake in a 180 degree oven for about 40 minutes. Serve warm with butter or cream and a side of strawberries or other berries. Like most of my recipes, you can personalise the flavours. You could add chopped nuts. Try almonds or pecans. You can swap the apple for pear. Or even use berries instead. You could also swap the honey for rice malt syrup. Also could swap the coconut oil for macadamia or vegetable oil. This will keep in an airtight container for about 5 days unless eaten prior. When there are limited items left in the fridge and freezer, what's for dinner? . Simple #1panmeals. Fried soy sauce cauliflower rice with leftover cooked chicken breasts, scrambled eggs, diced carrots and bell peppers. So satisfying and delicious. #cookingwithleftovers . Had 2 big helpings! And with wine of course. I lost 2 lbs this week, weigh in at 119 this morning and am working on putting them back on. SORRY not bragging but want to maintain no less 121 lbs. . Eat at lot and still loss weight. Interested, DM ot email me. . Directions --- Heat olive oil in skillet on high heat, crack eggs into pan, scramble to almost cooked. Add carrots & stir about 1 min. Add bell peppers & stir. Add frozen cauliflower rice & saute till heated thru and hot. Add soy sauce, pepper to taste. Add sriracha sauce too if desired to taste. Continue sauteing. Add chicken, stir 1 - 2 mins. Vegan (no oil- low sugar) Banana Bread:
3 ripe bananas 
2C whole wheat flour
2T ground flax
1 chia egg (1T chia + 3T water)
1/4C maple syrup
1tsp baking soda
1T cinnamon
pinch of salt
Cook at 350 for 45 minutes.
