I’m probably not like normal moms (Ok definitely not...) in that I look forward to vacation cooking. Even if it’s simple - like this tomato and mozzarella with fresh basil - it’s time in the kitchen, side by side with family, making a meal. Something I don’t get to do often enough in my “real life”. ROASTED VEGETABLES THIS HELPFUL CHART PROVIDES SIMPLE INSTRUCTIONS FOR PREPARING AND ROASTING ALL OF YOUR FAVORITE VEGETABLES. MIX AND MATCH THEM AS WE HAVE DONE IN OUR ROASTED VEGETABLE FOCACCIA SANDWICH, HARVEST CREAM SOUP, AND MEDITERRANEAN ORZO SALAD. DIRECTIONS Preheat the oven to 450°F (230°C). Prepare the vegetables as directed below. Toss the prepared vegetables in 1-2 tablespoons of olive oil and garlic pressed with the Garlic Press. Arrange the vegetables in a single layer on a pan, such as the Stoneware Medium Bar Pan (do not crowd vegetables on the pan); season with salt and coarsely ground black pepper, if desired. Roast the vegetables according to the time indicated on the chart or until tender, deep golden brown, and beginning to caramelize. Cook's Tips: Roasting vegetables intensifies the flavor by using high heat and allowing the natural sugars in the vegetables to caramelize. Make sure not to crowd the pan or the vegetables will steam rather than roast. For variety, create a medley of roasted vegetables by combining 2-3 vegetables from the chart that have the same roasting time. When there are limited items left in the fridge and freezer, what's for dinner? . Simple #1panmeals. Fried soy sauce cauliflower rice with leftover cooked chicken breasts, scrambled eggs, diced carrots and bell peppers. So satisfying and delicious. #cookingwithleftovers . Had 2 big helpings! And with wine of course. I lost 2 lbs this week, weigh in at 119 this morning and am working on putting them back on. SORRY not bragging but want to maintain no less 121 lbs. . Eat at lot and still loss weight. Interested, DM ot email me. . Directions --- Heat olive oil in skillet on high heat, crack eggs into pan, scramble to almost cooked. Add carrots & stir about 1 min. Add bell peppers & stir. Add frozen cauliflower rice & saute till heated thru and hot. Add soy sauce, pepper to taste. Add sriracha sauce too if desired to taste. Continue sauteing. Press firmly into base of silicon loaf mould. ☆FILLING☆ •1 1/2 cup cashews (soaked overnight) •1 cup coconut cream •1/2 cup cacao butter •1 1/3 cup coconut oil •1/3 cup pure maple syrup •1 tsp vanilla extract •3 tsp blueberry powder •1/2 lemon and rind •1/4 tsp turmeric powder Melt, cacao butter and oil together in double boiler - don't let it reach boiling point. Once combined pour in blender. Add cashews, coconut cream, maple and vanilla then blend on high until smooth. Halve mixture, first blend half with blueberry powder and pour into mold. Freeze for 20 mins or until firm. Blend other half with turmeric, lemon and rind, carefully pour on top of blueberry mixture. Refrigerate until hard. ☆ICING☆ •1 tbs cacao •1 tbs pure maple syrup •1 tbs coconut oil. Melt in bane marie set up until combined- don't let boil. Allow to slightly cool and thicken. Pour in piping bag and drizzle over cake once you have taken it out of its mould. Eat.
