Badd Raja bhali kare aayo !!! On the next day of Diwali Goverdhan puja is performed, its also know as Padva. We Sindhi's celebrated a lesser know festival of Badd Puja. According to the stories told to me by my elder's, Badd is the brother of Diyari (Diwali) Mata, who visits his sister's home on the Padva to take her along for the bhai dhuj. Kokum Curry Putta Prawns #sikandalouscuisine A super quick and easy recipe - delicious results . This is how we cooked prawns last night. 500 Grams Prawns - Keep tails on. 2 Large Onions - Slice Evenly Lengthwise. 10-12 Cloves of Garlic Chopped. 5-6 Tablespoons Torn Curry Putta Leaves. Chopped / Whole Green Chillies To Taste. Salt. Kake Paste For Marinade: 2 Kokum Petals. 2-3 Green Chillies. 1 Teaspoon Garlic Paste. 1.Marinate prawns for 10 minutes while you prep the onions. 2. Fry onions till evenly dark brown , set aside. 3. Heat 1 tablespoon oil in a wok , add torn curry leaves , 30 seconds late add garlic and chillies , saute till garlic begins to soften. 4. Increase heat to max , add marinated prawns , saute 2 minutes , add half the fried onions , saute another minute , take off heat adding the rest of the fried onions. Baked Chocolate Custard #sikandalouscuisine Inspired by how easy it was to make the delicious Lagan nu Custard I thought of playing with the recipe and added in chocolate with coffee along with a hit of cinnamon - Delicious was the verdict all around. Chill overnight - next morning dig into a silky and soft chocolate custard ! 1.5 Litre Full Cream Milk. 125 Grams Sweetened Chocolate. 1 Tablespoon Coffee Powder. 1 Cup Sugar - Adjust. 3 Large Beaten Eggs. 1/2 Teaspoon Grated Nutmeg. 1/2 Teaspoon Cinnamon Powder. 1/4 Teaspoon Freshly Ground Black Pepper. 1 Teaspoon Vanilla Essence . Method: 1. Boil milk with and reduce to about 1.25 litres. 2. To the hot milk add chocolate and sugar , they will dissolve then add all ingredients except for eggs. 3. Whip up eggs just enough to blend , then slowly add in warm , not hot prepared milk while mixing continuously.Taste and adjust flavors at this stage. 4. Pour into greased baking dishes and bake at 175 for nearly 40 minutes , the custard will appear to be not set , don't worry , take it out , and as it cools over the hour it firms up beautifully. Pandi Curry #sikandalouscuisine This recipe by M.A Venu for Coorgi Pandi Curry ( pork curry ) is excellent . We have been making it for years . Allow the cooked pork to rest overnight - it gets beyond delicious. I attempted to make Akki Rotti ( leftover rice+rice flour rotis ) but didnt quite get that right . We use next to no oil , your pork must have fat , that is your source of flavour and why you don't need more oil.Do try an cook this in an earthen pot and NO pressure cooking please ! 1 Kg Pork - Cut pork into small pieces 1 Teaspoon Kachampuli *** ( Kachampuli is a black vinegar made from Kachampuli flower) Curry Leaves. 2 Teaspoons Oil Step 1 Marinate Pork: 1 Kg Pork - Important , pork with fat. 2 Teaspoon Chilli Powder. 1 Teaspoon Haldi Powder. 1 Teaspoon Salt Marinate pork in the above for an hour or two , I kept it overnight. Step 2 - Make Masala Powder: 4 Teaspoons Coriander Seeds. 1 Teaspoon Jeera. 1 Teaspoon Mustard Seeds. 2 Teaspoon Black Peppercorn. 6-7 Cloves- Not in recipe. 1/2 Teaspoon Methe Seeds - Not in recipe. Dry Roast all the above spice and grind to a fine powder. Step 3 - Coarsely Pound to A Paste: 100 Grams Shallots. 10 Green Chillies. 2" Ginger. 10 Cloves Garlic. A fistful of Coriander Leaves. Lets Get Cooking : 1.Heat oil , fry curry leaves then add in the paste ( step 3 ) and cook till brown. 2. Add marinated pork with a little water , cover and cook on low till done. 3. Finally add Masala Powder ( step 2 ) , kachampuli , mix and cook covered for another 5-7 minutes . Ideally serve with Neer Dosa / Akki Rotti / Appams or Kadambattu. Paneer Lal Masala #sikandalouscuisine ​Inspired from a fish recipe ( Mori Lal Masala ) from Aditya Mehendale's book Rare Gems I substituted fish with paneer add some coconut milk but stayed with the basic recipe. Here the masala paste is delicious and this paneer was different and yum! ​500 Grams Paneer ​. 1/2 Cup Chopped Onion. 2 Teaspoons Kokum Pulp - or substitute with tamarind. 1 Cup Coconut Milk - not in the recipe Spice Paste: 1/2 Cup Grated Coconut. 4 Dried Red Chilies. 1 Teaspoon Ginger Paste. 1 Teaspoon Garlic Paste. 1.5 Teaspoons Poppy / Khus Khus Seeds. 1 Teaspoon Coriander Powder. 1 Teaspoon Fennel Seeds. 1/2 Teaspoon Mace. 1/2 Teaspoon Grated Nutmeg. 6 Black Peppercorn. 4 Cloves. 1 Black Cardamon. 1 Small Bay Leaf. 1. Cube paneer and dip into very hot water to which 1/2 Teaspoon Haldi has been added . Set aside till needed. 2. Dry roast coconut and all the paste ingredients. Cool and grind to a paste. 3. Heat oil , saute onions till medium brown , add masala paste , sprinkle water and gently cook covered till you see oil. 4. Add kokum , saute drained paneer in the masala for 5-6 minutes , adding coconut milk to build up your gravy . Adjust flavors , garnish with coriander leaves before serving. Shan e Til Dahi Kabab #sikandalouscuisine Recipe Credits Chef Shan We learnt these fabulous melt in the mouth kababs at the MasterClass with Indian MasterChef Shan at Westin , Gurgaon . The kababs are delicious ! 1 Kg Curd - Hang overnight. 50 Grams Finely Chopped Onions. 10 Grams Minced Ginger. 50 Grams Minced Red Bell Pepper. Minced Green Chillies. Minced Coriander. 1 Teaspoon Honey. 1.5 Teaspoon Black Salt. 50 Grams Fresh Breadcrumbs. 50 Grams Sesame Seeds. Refined Oil - For deep frying Make Batter of Dripping Consistency: 20 Grams ( 2 Tablespoons ) Flour. 50 Grams ( 4 Tablespoons ) Cornflour. 1. Squeeze all liquid out of the vegetables and mix into hung curd. 2. Season hung curd with honey black salt and bread crumbs - set aside 15 minutes. 3. Make flat kababs , dip in batter , lightly coat with sesame seeds and deep fry. Note: Test fry a small kabab to check that it holds and for flavors , I needed to add more regular salt and chilies. Keremirchan Waro Teevan #sikandalouscuisine I came across this recipe in The Sindhi Kitchen and was fascinated by the minimum ingredients used - essentially ginger and pepper and tomatoes. I had to try it , and am glad I did , this was delectable. Don't allow the 3 tablespoons of black pepper scare you , they balance out beautifully with the tomatoes. Here is the recipe in the author Dr Aroona Reejhsinghani's words: 1 Tablespoon Ginger Paste. 500 Grams Mutton. 5 Tablespoons Oil. 4 Tablespoons Chopped Fresh Coriander Greens. 4 Tablespoons Black Pepper Powder - Freshly ground. 250 Grams Tomatoes Sliced. 2 Green Chilies. Salt. 1. Rub ginger into the mutton , set aside 1 hour - I kept it overnight. 2. Heat oil in a pan that has a tightly fitting lid , add all the ingredients , cover tightly cooking over low heat , splashing water if needed till done.
