I'm so morbidly curious to know what Cajun food is like in the UK.
Do y'all have access to stuff like boudin? How do y'all thicken your gumbo and what hot sauces do you use on it? Have you ever experienced the miraculous event that is a crawfish boil?
These deep considerations have me craving a po boy at 4 am…..
Likely terrible - we used to have a chain restaurant called Old Orleans which wasn't too bad but it went under around ten years ago.
The rest I can only speak for myself:
1. Closest is black pudding. For the sake of my wife and children I replace it with chorizo (fry until nearly burned) or chopped merguez if in France.
2. Roux, what do you use? For hot sauces I tend to use tobasco as a base, then something smokey like a chipotle sauce for flavour.
3. No but I dream of it. We call them crayfish here.

Totally Chipotle Day
Totally Chipotle Day is celebrated annually every May 5. It’s a day to pay homage to the humble chipotle pepper, which is used in Mexican and Mexican-inspired dishes in the U.S. This kind of pepper is indeed versatile enough to be used in any cuisine. Hotter than a poblano pepper but not as hot as a serrano pepper on the Scoville scale, National Totally Chipotle Day is a perfect time to stock up on these tasty peppers and use them liberally to add spice to your day.
History of Totally Chipotle Day
Chipotle peppers have been around since ancient times. It’s as old as Mexican cuisine itself. Their name comes from ‘Nahuatl,’ the language spoken by the Aztecs. It combines the words ‘chili’ (pepper) and ‘poctli’ (smoke), to mean ‘smoked pepper.’ A favorite of many pepper aficionados, it actually begins as a jalapeño pepper. There are different varieties of jalapeños with varying degrees of heat. It was once primarily found in the markets of central and southern Mexico. From the total production of jalapeños in Mexico, 60% accounts for pickled products, 20% is consumed fresh, and 20% becomes chipotle.
It became widely available in the more northern areas of North America as Mexican food became sought after and jalapeño production and processing likewise expanded to that area. The traditional process of its transformation starts when ripe, red jalapeño peppers are put out to dry. After being placed on metal grills, the peppers are then smoked in an oven for several days until they completely dry out. Many Mexican peppers have two names, one for the fresh version and another for the smoked or dried version.
The process results in an earthy and pungent ingredient. Its deep smokey flavor and complexity are best paired with flavors that help round it out. Lime juice, cilantro, garlic, or a touch of sweetness are some ideas to try. American favorites like tacos, chilis, and enchiladas are dishes that go well with their flavor. You can also use them in soups, sauces, salsa, marinades, and roasted vegetables. The possibilities for this pepper are endless!

My first post on this blog and a great place to start it with!
Had lunch at Wings and Tins yesterday with my friend (only just got around to posting this now cause we went out drinking right after), they have some of the best wings I have ever had!

We got a tasting platter with Frank's Original, Whiskey Maple, and Smokey Chipotle (from top to bottom in the image below).

They all tasted amazing but the Frank's Original was my favourite out of the three. We were expecting the Smokey Chipotle to be the spiciest as it had the highest spice rating out of the three, but the Franks original were, but that's fine, they were very yummy none the less.
We don't know exactly what sauces we had but were able to make a guess as to what each one was, we decided that the white sauce was aoli, the red-ish brown one was a tomato bbq, and the beigey one was a burger sauce, all of which were really nice.
The pickles and chips were good palette cleansers between each wing.

They also have a nice selection of beers and other alcoholic beverages.
Been here twice now and I can't wait to go back again, their wings are so fucking good!!! My mouth is watering just thinking about them.
They are located at 88 Darby Street, Newcastle, New South Wales Australia for anyone that wants to go try them out.

🍔 Updated review ━ 📍 Bun Meat Bun ★★★★☆ • Ever since Bun Meat Bun opened their first restaurant in Farsta Strand back in 2014 they’ve been a solid fixture in Stockholm’s burger scene. We visited them before we’d even started Burgerdudes, and have long felt that they’ve served some of the best burgers in Sweden. Nowadays they can be found in five locations in Stockholm, and this expansion has led to a few drops in quality. During our latest visit we ordered a double Smokey Arizona with two 100-gram beef patties, pepperjack cheese, deep-fried bacon, pickled jalapeños, red onions and a chipotle mayo for 115 SEK (11 USD) plus a double Royal Cheese with two 100-gram beef patties, cheese, white onions, pickles, mayo, ketchup and mustard for 105 SEK (10 USD). We ordered the latter burger ”extra fin”, meaning that the meat came mustard-fried with extra fried onions for 10 SEK (1 USD). • Our burgers looked really tasty, and the patties were shiny with a nice crust. They switched to a brioche bun about a year ago, and it was soft, buttery and held together great throughout our meal. The meat itself was very juicy, but even though we liked the crust we felt that it could have been a bit deeper. Taste wise, both of our burgers were a bit too salty, and the textures in our Royale Cheese were a bit uneven as everything was too soft. We didn’t really notice the mustard in the patties either. Our Smokey Arizona was a better choice, with several spicy ingredients that livened up our tastebuds. 35 SEK (3.5 USD) for their regular french fries was a bit expensive, but they were well-cooked and tasted nice with a great crispy potato flavour. • Bun Meat Bun still serve really good burgers, but we can’t ignore that they’ve lost that magic touch that they used to have during each and every one of our visits. If anyone is looking for a yummy dinner that’s warming and comforting I have to recommend my favourite. I find it’s good for days where my depersonalisation is getting really bad too, since there are lots of smells and textures to it.
Get sweet potato and squash. You can either boil it or bake it in the over. I tend to do both. (Boil for a bit then bake lol) and on the tray cut up some cherry tomatoes with it. Sprinkle salt, pepper and garlic steak seasoning (it’s doesn’t have meat in it’s just called that because you are meant to put it on steaks lol)
Also in the oven put in a tray that has chickpeas on it. Before that put the chickpeas into a freezer bag, add a little dribble of olive oil and the following seasonings: Smokey paprika , chipotle seasoning, Mexican seasoning, pepper, garlic salt, Italian herbs and garlic steak seasoning. Just cook alongside the other stuff!
While it’s cooking get some hummus and put it into a bowl. Add some pepper, garlic salt, Smokey paprika, garlic steak seasoning and soy milk. Mix it all together!
Once you are happy with the consistency of everything in the oven just take it out. I personally prefer the layering of: chickpeas, sweet potato, squash , tomatoe, chickpeas and the hummus drizzled over the top.
It’s very yummy and warm and as I said, I think it can be helpful when your brain is fuzzy, since there are lots of nice smells.
