Knoflook spaghetti met schelpjes

Het to-cook lijstje. Zoals menig foodblogger heb ik een lange to-cook lijst.... Dagelijks zie je van alles voorbij komen en denk je : "jaaa die is zo lekker, die móet ik maken". De spaghetti vongole staat al een hele tijd op mijn lijst. En ik heb er speciaal mee gewacht tot ik in Frankrijk was. Waarom? Omdat ik hier zelf in de supermarkt de verse schelpjes kan uitkiezen en het echt een heerlijk zomer-recept vindt. En zo kwam het dus dat ik hier in Frankrijk een heerlijke spaghetti op tafel heb gezet. Ééntje die ik zeker nog eens vaker ga maken want hij is mij méér dan goed bevallen! Snel aan de slag met deze overheerlijke knoflook spaghetti met schelpjes. Voor een flinke pan heb je nodig:

400 gram venusschelpen half pak spaghetti 1 rode peper 5 knoflook tenen 6 gedroogde tomaten op olie half bosje peterselie zout/peper 2 eetlepels tomaten tapenade 1 glas witte wijn olijfolie En zo maak je het: -We beginnen eerst met de voorbereidingen van het snijden en klaarzetten van de producten. Het maken van dit recept vergt enige timing maar is niet heel ingewikkeld. -Neem de venusschelpjes erbij en doe ze in een vergiet en was ze onder de koude kraan zodat eventueel zand en andere viezigheid uit de schelpjes gewassen wordt. De schelpjes die niet sluiten als je er op tikt gooi je weg. De rest laat je staan tot gebruik. -Snij de knoflooktenen in dunne plakjes, de tomaten in kleine stukjes en de peterselie en rode peper hak je fijn. -Zet een grote pan water met zout op en kook hier in 8 tot 9 minuten de spaghetti gaar. Terwijl de spaghetti kookt bereiden we de schelpjes. -Neem dan een grote koekenpan erbij en doe hierin een flinke scheut olijfolie. Deze verhit je goed en voeg daarna de knoflook en fijn gehakte rode peper toe. Je keuken geurt nu al gelijk want dát ruikt heel lekker die knoflook! -Zorg ervoor de dat knoflook niet verbrandt, voeg de stukjes gedroogde tomaat en de tomaten tapenade toe. Roer het geheel tot een mooie saus en dan is het het moment voor de schelpjes. Deze bak je even kort mee en dan schenk je de wijn erbij. Doe even kort het deksel op de pan. 

-Haal na een minuut het deksel van de pan en schud het geheel, je ziet de schelpjes allemaal langzaam openklappen. Degene die uiteindelijk niet zijn opengeklapt gooi je weg. -Giet ten slotte de spaghetti af en kieper deze in de koekenpan erbij, en voeg de fijngehakte peterselie toe.
