Today I made bread (again)
Not just because we'd eaten the last lot, although that was a reason.
It was an experiment which I've intended for a long while but keep forgetting to do: make one loaf using the Kenwood stand mixer (knead time 12 minutes) and the other in the Magimix / Cuisinart food processor (knead time 2 minutes) and see which came out best.
It's the same recipe each time...
500g bread flour
7g dried yeast
7g table (fine-grain) salt
250ml warm water
30ml olive oil
...with everything else - first & second rising, then baking - done as simultaneously as I could manage.

The result was a surprise; I'd expected longer kneading would cause better-developed gluten and that loaf would rise more, but it actually ended up as the smaller of the two.
The 2-minute Magimix loaf is on the left, the 12-minute Kenwood one is on the right.

Despite the visible difference in size, their weight after baking (681g and 682g) is so close as to be identical.
Once they cooled, I sliced them to see what the insides were like.

...then the Magimix.

There's hardly any visible difference apart from slightly larger holes at the top of the Magimix loaf.
There's a slight tactile difference; the Kenwood loaf crumb is firmer, not by much but enough to notice with fingertip and presumably teeth.
This might give better structural integrity to an over-filled sandwich made soggy by an overflow of sauces, relishes and other tracklements, or for toast softened by an excessive quantity of butter (although my Dad would have said there was no such thing).
Whatever.
I've completed my experiment, and proved that an extra 10 minutes or so of kneading doesn't do anything dramatic, at least with the brands of flour and yeast we've used successfully for some years.

OK, cleaning the Kenwood bowl and dough hook took less time and trouble than cleaning the Magimix bowl, dough blade, lid and feed chute, but again it was no more than a couple of minutes which were more than cancelled out by the kneading times.

And now, since I seem to have a couple of slices of splendidly fresh bread needing attention, several kinds of cheese and cold cuts in the fridge, and various sauces, relishes and tracklements in the cupboard, I'm going to make myself one of those over-filled sandwiches.
I might even add an excessive quantity of butter (No Such Thing!) to the outside, then toast it... :->

Purple Sweet Potato Pie
I love baking pie for Thanksgiving, but I’m not really a pumpkin pie fan so I like to switch it up from year to year. This year I had decided to make a sweet potato pie for two reasons, 1) because I live in a southern state, and 2) because they’re super yummy!
So off I went to the grocery store to purchase the ingredients needed. I walked in and what was the very 1st thing I stumbled upon? PURPLE sweet potatoes! I had never seen, or even heard, of purple sweet potatoes before, and since I have a number of family members who go bonkers for anything and everything purple, I just knew I had to get them. Purple Sweet Potato Pie - What a fun addition to the holiday table!

Purple Sweet Potato Pie
makes 1 pie (9-inch)
Printable Recipe
Ingredients
For the Pie Filling:
1 pound cooked and peeled purple sweet potatoes (see cooking directions below)
12 once can evaporated milk
1/3 cup granulated sugar
2 large eggs
4 tablespoons unsalted butter, melted and cooled
2 teaspoons freshly squeezed lemon juice
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 unbaked 9-inch pie shell (try my easy recipe here)
For the Meringue Topping:
2 egg whites, room temperature
1/4 teaspoon vanilla bean paste
big pinch of cream of tartar
small pinch of fine salt
1/3 cup superfine sugar
Directions
To make the pie filling:
Preheat oven to 350F and place rack in lower center position.
In the bowl of a food processor, combine until completely smooth the peeled sweet potatoes, evaporated milk, sugar, eggs, butter, lemon juice, vanilla extract, cinnamon, salt, nutmeg, ginger, and cloves; scraping down the sides of the bowl as needed.
Pour mixture into prepared pie shell; place on a sheet pan and bake for 50-60 minutes or until set (a very slight giggle in the very center of the pie is fine).
Remove pie from oven and cool to room temperature before chilling in an airtight container for several hours (overnight is even better).
To make the meringue topping:
In a medium bowl or in the bowl of a stand mixer, place the egg whites, cream of tartar, vanilla bean paste, and salt; use a fork or whisk to mix the ingredients and break up the eggs until they're frothy.
Use a hand mixer or the whip attachment of a stand mixer to whip egg whites until they reach soft peaks; sprinkle sugar in slowly and continue whipping until the whites are glossy and they reach the stiff peak stage.
Place meringue in a large pastry bag fitted with a large round tip or large open star tip and pipe kisses around the top circumference of the pie; place under broiler for 2-3 minutes until meringue begins to brown on the edges, watching very carefully to prevent burning. Serve immediately.
Notes:
To bake purple sweet potatoes: wash potatoes and pierce with a knife or fork in several places to keep the potatoes from exploding in the oven. Place prepared potatoes in a baking dish and cover with foil; bake for 1 hour. Cool purple sweet potatoes, then peel skin off and discard - the skin should be easy to remove by hand or with a paring knife (you’ll definitely want to protect your hands with disposable gloves).
DO NOT add meringue until just before serving - it’s highly hygroscopic and will become wet/watery if added too early.

Raspberry Amaretti Cookies
My favorite soft amaretti cookies get a bright and fruity twist with the addition of freeze-dried raspberries.
Almond and raspberry make for a perfect pairing, these luscious little cookies are proof of that. The punch of vibrant raspberry flavor comes from ground up freeze-dried raspberries, which offer an intense flavor without adding any extra moisture.
In follow up to last week’s soft amaretti cookie recipe, I thought I’d offer up this unique variation: raspberry amaretti!
It’s basically the exact same recipe with the addition of ground up freeze-dried raspberries.
But that one little change makes a huge difference. I honestly can’t decide if I love the originals better or this bright and fruity variation (I’ll have one of each, please… don’t make me decide).
In fact, these turned out so well I’m tempted to try more variations. Blueberry, maybe? Or what about a chocolate version? Maybe I’ll work on that one for next year!
Sure, they look a little bit like smoldering meteors from mars (or ready to hatch dinosaur eggs), but taste a heck of a lot better (I assume, I’ve never actually tasted a smoldering meteor).
The rich burgundy color will soften when baking (the longer you bake them the less red they will be), but you can add a drop or two of red or pink food coloring if you want a more intense color.
I also found that the cookies look better with a nice thick layer of powdered sugar (vs the original amaretti which just need a light coating). The bold red really shows through the cracks!
I will emphasize that freeze-dried raspberries are necessary here. Not dried or fresh or frozen (which would add far too much moisture and result in a wildly different cookie.)
You can buy freeze-dried raspberries (I like the ones at Trader Joe’s) and grind them up yourself in a clean spice grinder. You can also buy pre-ground raspberry powder which will work here as well. You’ll need about 1 ounce of raspberries or 1/4 cup of powder for one batch of these cookies.
Also, if you happen to have freeze dried blueberries or strawberries, they’ll work here too!
Ingredients:
2 1/4 cups (200g) almond flour or very finely ground almonds, sifted
1 cup (200g) granulated sugar
1 ounce freeze-dried raspberries, very finely ground (about 1/4 cup of ground raspberry powder)
pinch salt
2 large egg whites (about 60 grams)
1/4 teaspoon lemon juice
1/2 teaspoon almond extract
confectioners’ sugar, as needed
Directions:
Preheat oven to 300 degrees F. Stack two matching, heavyweight, light to medium colored cookie sheets one inside the other (stacking two cookie sheets together keeps the bottoms of the cookies from getting too brown). Line with parchment paper or a silicone baking mat.
Finely grind freeze dried raspberries in a food processor or spice grinder until finely ground powder.
In a large bowl, whisk together almond flour, sugar, and freeze dried raspberries until evenly incorporated.
In a mixing bowl or the bowl of a stand mixer fitted with the whisk attachment, whisk egg whites and lemon juice until they hold soft peaks.
Add beaten egg whites and almond extract to dry ingredients and stir until mixture forms a soft, sticky dough, kneading with your hands if necessary. No need to be gentle here, we’re not making macarons. ;)
Lightly dust your hands with powdered sugar. Use a small cookie scoop to portion dough into 1-inch balls. Roll into a smooth ball, then roll in powdered sugar. Arrange on parchment or silicon-lined baking sheets, leaving 1 inch of space between cookies.
Bake for 30 to 35 minutes until tops are cracked and bottoms are just barely golden (if you are NOT using doubled cookie sheets your cookies will brown much quicker, and will likely only need 25 minutes, so watch them closely). If you prefer crunchier cookies you can give them an extra 5 minutes or so or until the tops begin to brown too. Remove from oven; let cool a few minutes, then transfer to wire racks to cool completely.
Cookies will keep at room temperature in an airtight bag or container, for up to 5 days.
