Sunday is my favorite. A day of catch up, laundry family time or just hanging out. Tonight, I made @mrsvitale Whole Roast Chicken specifically so we can have leftover chicken sandwiches 😂 What can I say, I’m thinking ahead. I’m a white meat kind of person when it comes to a whole bird, and I paired my chicken with some roasted sweet potatoes and green beans. Kind of Thanksgiving-y but hey! Sunday will always be my favorite! No rushing. No planning. No tv. Just chill mornings with coffee, a sleepy husband and giggling kids. We brunch on the weekends, always. Today I had an omelette with two egg whites and one whole egg, spinach and mushrooms with a little bit of Swiss cheese to glue it all together and a side of some fruit! This was a good decision 😍 Now to go reheat my coffee for the 3rd time (#momlife), start some laundry and get my day going while I wait for some delicious bread to rise! Nothing fills my heart with more joy than having loved ones around my table with fantastic food, good conversation and a memory making evening! Tonight we made the trifecta! @mrsvitale Italian Sunday Sauce with our favorite Dutch Oven Bread and a Sweet Potato pie I found from #Pinterest. Lucky for you, I will have a video up for all of these recipes in the next month or so, and I cannot wait to share them with you! Everyone raved about the meaty, comforting pasta sauce and how perfectly complimenting the bread was paired with it. The pie was sweet, but now overly and now I’m in a food coma, and so happy.
