I couldn’t think of anything better to make on the first rainy day of fall this year except Chicken Noodle Soup. I used @mrsvitale recipe for it, and while it’s more time consuming, it’s “the best chicken noodles soup I’ve ever had,” according to my family. I started by roasting the chicken, which is a game changer for ANY chicken noodle soup, let it simmer low for a couple of hours, making my house smell amazing and added the homemade noodles I made a few days ago and dinner was served with the bread a made this morning. Sunday is my favorite. A day of catch up, laundry family time or just hanging out. Happy Sunday! My household caught a cold late last week and today was the first day I’ve felt well enough to step foot in my kitchen again. Dinner tonight was really good! We •almost• went out because I didn’t feel like cooking (hey, it happens!) but I opened my LITK Cookbook and it opened to the page with her Ham, Pea and Gorgonzola cheese pasta and I recreated that using what I had on hand. That’s what I love about cooking; recipes can more or less be a guideline for amazing dishes. We loved the creamy aspect, how simple it was to make plus all the complimentary flavors. I’ve been in a tortilla mood this week! So far I’ve made corn tortillas and flour, both recipes I HIGHLY recommend from @mrsvitale website.
